技术领域
本发明涉及一种含有咖啡因及甜味成分的饮料。本发明尤其涉及一种调配γ-氨基丁酸,从而使咖啡因引起的甜味的降低得到抑制的饮料。
背景技术
咖啡因作为提高脂质能量代谢或运动机能,清醒作用等的生理活性物质被熟知。由于咖啡因的醒脑作用(清醒作用),使作为神经递质的多巴胺释放,从而认为在办公室等工作等中想提高工作效率或注意力时摄取较好,因此含有较多咖啡因的饮料被广泛开发。
在含有较多咖啡因的饮料中,咖啡因引起的苦味会突显出来,有时会损害饮料的易饮性。因此,提案有多种减轻咖啡因的苦味的方法。例如有,通过添加DE为2以上6以下的来自马铃薯的非环状糊精,而掩蔽咖啡因等功能性原料引起的不适味的方法(专利文献1),通过添加γ-氨基丁酸(GABA)或其盐,而使咖啡因溶液的苦味等不适味减轻的方法(专利文献2)。
近年来报告有,舌的味蕾上存在腺苷受体,当腺苷与该舌的腺苷受体结合时会使甜味的敏感性降低,且用于摄取与腺苷相拮抗的咖啡因的情况下,可特异性地使甜味的敏感性降低(非专利文献1)。
另一方面报告有,可使用间羟基苯甲酸(3-HB)等作为饮料的甜味增强剂(专利文献3)。此外报告有,通过添加0.1~10000ppb的γ-氨基丁酸及0.01~10000ppb的柚皮素,而使饮食品的高甜味度甜味剂的甜味增强的方法(专利文献4)。

发明内容
如上所述,已经公开有减轻咖啡因的苦味的方法,饮料的甜味增强剂、增强高甜味度甜味剂的甜味的方法等,但尚未知晓可有效抑制,因饮料中添加咖啡因而引起的饮料的甜味降低的方法。
本发明的目的在于提供一种在调配有甜味成分和咖啡因的饮料中,可抑制咖啡因引起的甜味的降低的饮料。
本发明者等为解决上述课题进行了深入研究,结果发现,在调配有甜味成分和特定量的咖啡因的饮料中,如果在pH2.0~5.5的范围内同时使用咖啡因和特定量的γ-氨基丁酸,则可抑制咖啡因引起的甜味的降低,从而完成了本发明。
本发明包含以下方式,但不限定于此。
[1]一种饮料,其特征在于,含有下述成分(A)、(B)及(C):
(A)甜味成分,
(B)咖啡因,及,
(C)γ-氨基丁酸,
饮料中的成分(B)的含量为3~45mg/100ml,
饮料中的成分(C)的含量为4~40mg/100ml,
饮料的pH为2.0~5.5。
[2]根据[1]所述的饮料,其特征在于,成分(C)相对于成分(B)的质量比,即(C)/(B)为0.20~4.00。
[3]根据[1]或[2]所述的饮料,其特征在于,饮料的甜味度为5~15。
[4]根据[1]~[3]中任一项所述的饮料,其特征在于,作为成分(A),含有蔗糖、三氯蔗糖及乙酰磺胺酸钾中的1种或2种以上。
根据本发明,可提供一种在不增加甜味成分的使用量的情况下,可抑制咖啡因引起的甜味的降低的饮料。
具体实施方式
本发明在一种方式中,为一种含有(A)甜味成分、(B)3~45mg/100ml的咖啡因及(C)4~40mg/100ml的γ-氨基丁酸,且pH2.0~5.5的饮料。
(成分(A):甜味成分)
本发明的饮料含有甜味成分作为成分(A)。在本发明中所谓“甜味成分”,是指能感觉到甜味的物质。作为甜味成分,可例示:果糖或葡萄糖等单糖类;蔗糖、乳糖、麦芽糖等二糖类;三糖以上的麦芽低聚糖;木糖醇、麦芽糖醇、山梨糖醇等糖醇;甜菊提取物、乙酰磺胺酸钾、三氯蔗糖、阿斯巴甜、糖精等高甜味度甜味剂等。
本发明的饮料,从本发明所期待的效果的显著性出发,优选饮料的甜味度为5~15,更优选甜味度为6~14,进一步优选甜味度为7~13。本说明书中的甜味度是将饮料100g中含有蔗糖1g的饮料的甜味设为“1”时,表示饮料的甜味的指标。该饮料的甜味度可通过下述方法求出:根据该甜味成分的甜味相对于蔗糖的甜味1的相对比,将各甜味成分的含量换算为蔗糖当量,接着将该饮料中所含的所有甜味成分的蔗糖甜味换算量(也包含来自果汁或提取物等的甜味成分)相加而求得。各种代表性的甜味成分的甜味相对于蔗糖的甜味1的相对比如表1所示。对于表1中没有记载的甜味成分,可使用制造或销售该甜味成分的厂商所提示的甜味度,或依据“饮料用语词典”(株式会社Beverage Japan,平成11年(1999年)6月发行)的P62所记载的甜味度测定方法,将溶液温度设为接近体温的37℃来进行评价。

饮料的甜味度可使用甜味成分进行调整。可以向饮料中直接调配上述甜味成分,也可以调配含有甜味成分的原料,例如果汁或提取物等。从效果的显著性考虑,本发明的饮料的优选甜味成分,为单糖类、二糖类及高甜味度甜味剂,更优选的甜味成分含有蔗糖、乙酰磺胺酸钾及三氯蔗糖中的1种以上。
(成分(B):咖啡因)
本发明涉及的饮料含有咖啡因作为成分(B)。本发明在于解决,在添加了大量咖啡因作为食品添加物(苦味剂)的清凉饮料水中显现出的甜味降低的课题。因此,本发明所使用的咖啡因,优选为市售的试剂或纯化品(咖啡因含量98%以上的精制品)。以含有咖啡因的植物(咖啡豆、茶叶等)的提取物或其浓缩物的形态调配咖啡因的饮料,即茶饮料或咖啡饮料,由于本发明的课题不会突显出来,因此并不属于本发明的饮料或咖啡因的优选方式。本发明的饮料优选不包含,含有咖啡因的咖啡豆的提取物或含有咖啡因的茶叶的提取物。另外,咖啡因可以是水合物或无水物。
本发明的饮料中的咖啡因的含量为3mg/100ml以上,优选为4mg/100ml以上。含有甜味成分且含有3mg/100ml左右的咖啡因的饮料,甜味降低的课题会突显出来。从本发明的课题及效果的角度出发,咖啡因含量没有上限,但咖啡因含量过高时,来自咖啡因的苦味会过度增强,从而会导致难以察觉本发明的甜味抑制效果。从效果的显著性考虑,咖啡因含量优选45mg/100ml以下,更优选40mg/100ml以下,进一步优选35mg/100ml以下,特别优选30mg/100ml以下,进一步特别优选25mg/100ml以下。咖啡因为水合物的情况下,咖啡因的含量以无水咖啡因换算计。咖啡因的含量可通过使用高效液相色谱(HPLC)的方法,进行测定以及定量。另外,可根据需要进行适当处理,例如,测定时为了符合装置的检测区域,可将试样进行冷冻干燥,或者为了符合装置的分离能力,可去除试样中的夹杂物等。
(成分(C):γ-氨基丁酸)
本发明涉及的饮料含有γ-氨基丁酸作为成分(C)。本发明所使用的γ-氨基丁酸,为广泛含有于蔬菜类、果物类、谷类、发酵食品等中的氨基酸的一种。作为本发明所使用的γ-氨基丁酸,无特别限定,例如可使用从蔬菜类、果物类、谷类等中提取的γ-氨基丁酸,从发酵食品中生产的γ-氨基丁酸,由有机合成生产的γ-氨基丁酸等。此外,作为γ-氨基丁酸,可使用市售品(Oryza Gaba extract HC-90(商品名),奥力榨油化株式会社制)。
本发明的饮料中的γ-氨基丁酸的含量为4~40mg/100ml,优选为5~30mg/100ml。当γ-氨基丁酸的含量小于4mg/100ml时,咖啡因引起的甜味成分的降低无法得到充分抑制。此外,当γ-氨基丁酸的含量超过40mg/100ml时,γ-氨基丁酸引起的异味有时会给饮料的风味带来影响。γ-氨基丁酸的含量可使用氨基酸分析装置进行测定。
本发明中,因添加成分(B)咖啡因而引起的甜味的降低,可由成分(C)γ-氨基丁酸得到抑制。从本发明所期待效果的角度出发,成分(C)相对于成分(B)的质量比[(C)/(B)],优选0.20以上,更优选0.30以上,进一步优选0.40以上。此外,从饮料的风味的角度出发,成分(C)相对于成分(B)的质量比[(C)/(B)],优选4.00以下,更优选3.50以下,进一步优选3.00以下。作为所述质量比[(C)/(B)]的范围,优选为0.20~4.00,更优选为0.30~3.50,进一步优选为0.40~3.00。
(成分(D):酸味成分)
本发明的饮料的pH(20℃)为2.0~5.5。在pH为该范围的饮料中,咖啡因引起的甜味降低课题会更突显出来。从课题的大小出发,pH优选2.1以上,更优选2.3以上,进一步优选2.5以上,并且,优选5.0以下,优选4.7以下,更优选4.3以下,特别优选4.0以下。作为所述pH的范围,优选为2.1~5.0,更优选为2.3~4.7,进一步优选为2.5~4.3,特别优选为2.5~4.0。另外pH通过将饮料100mL量取至300mL的烧杯中,碳酸饮料的情况下进行脱碳酸,将温度调整为20℃由pH计进行测定。
饮料的pH可通过成分(D)酸味成分进行调整。因此,本发明的饮料可以含有酸味成分。此处,本说明书中所谓的“酸味成分”,是指能感觉到酸味的pH为酸性的物质。作为酸味成分,可以使用含有酸味成分的原料,例如果汁或提取物等,从容易控制pH的角度出发,优选使用酸味剂。作为酸味剂,可以是有机酸或无机酸或它们的盐,只要是可用于饮料中的物质则无特别限制。作为有机酸,可例示柠檬酸、葡萄糖酸、苹果酸、酒石酸、抗坏血酸、琥珀酸、乳酸、富马酸、己二酸、植酸、富马酸,作为无机酸,可例示磷酸,作为盐,可例示钾、钠等碱金属盐。其中,从风味的角度考虑,优选使用选自柠檬酸、葡萄糖酸、琥珀酸、乳酸、苹果酸、酒石酸、磷酸及它们的盐中的1种或2种以上。
pH为2.0~5.5时所突显出的本发明的课题,与饮料的酸度有关,一般认为在具有规定量以上的酸度的饮料中会突显出来。因此,本发明的饮料的酸度,优选0.005质量%以上,更优选0.01质量%以上,进一步优选0.03质量%以上,特别优选0.05质量%以上。此外,在酸度过高的饮料中,本发明的γ-氨基丁酸所带来的甜味降低抑制作用无法充分得到发挥,因此本发明的饮料的酸度,优选2质量%以下,更优选1.5质量%以下,进一步优选0.8质量%以下,特别优选0.3质量%以下。此处,本说明书中所谓的“酸度”,是使用酚酞指示剂通过氢氧化钠进行滴定,将饮料(碳酸饮料的情况下进行脱碳酸)中所含的所有酸的浓度换算为柠檬酸当量的值。
(成分(E):香料)
通常已知,饮料为含有高甜味度甜味剂的可溶性固体成分(Bx)低的饮料时,会有类似水的味道。虽然机制尚不明确,但本发明的含有γ-氨基丁酸及咖啡因的饮料,具有增强低Bx饮料的香气成分的效果。因此,优选使本发明的饮料含有成分(E)香料。特别是本发明的饮料含有高甜味度甜味剂作为甜味成分,且在Bx较低的情况下,具体而言,在Bx为10以下,优选为8以下,更优选为6以下,进一步优选为5以下,特别优选为4以下的情况下,含有香料的方式为本发明优选方式中的一例。
作为香料,可使用天然香料、合成香料及它们的混合物中的任一种。例如可列举:水果香料(甜橙香料、柠檬香料、青柠香料、葡萄柚香料、苹果香料、葡萄香料、覆盆子香料、蔓越莓香料、樱桃香料、菠萝香料等);薄荷香料(胡椒薄荷、留兰香、日本薄荷等);香辣香料(阿魏香料、香旱芹香料、大茴香香料、白芷香料、茴香香料、多香果香料、肉桂香料、黄春菊香料、芥末香料、小豆蔻香料、葛楼子香料、孜然香料、丁香香料、胡椒香料、芫荽子香料、黄樟香料、香薄荷属香料、山椒香料、紫苏香料、杜松子香料、生姜香料、八角茴芹香料、辣根香料、百里香香料、龙嵩香料、莳萝香料、辣椒香料、肉豆蔻香料、罗勒香料、墨角兰香料、迷迭香香料、月桂香料、芥末香料等);坚果香料(杏仁香料、胡桃香料、花生香料等);酒精香料(葡萄酒香料、威士忌香料、白兰地香料、朗姆酒香料等);茶香料(绿茶、乌龙茶、红茶、茉莉花茶等);乳香料(牛奶、酸奶等)、香草香料、蔬菜香料等。香料可以含有1种或2种以上。
本发明的饮料中的香料的含量无特别限制,优选0.01~0.5质量%,更优选0.03~0.4质量%,特别优选0.05~0.3质量%。
(其他成分)
饮料中含有乳成分等蛋白质的情况下,本发明的课题难以突显出来。因此,含有乳成分的饮料被排除在本发明的优选方式之外。此处,所谓乳成分,可列举乳脂成分、全脂乳、脱脂乳等,例如可列举炼乳、脱脂粉乳、乳清蛋白、黄油、乳酪等。具体而言,本发明的优选饮料的一例,为饮料每100ml的蛋白质的量为0.5g以下,优选为0.4g以下,更优选为0.3g以下的饮料。
除了上述成分以外,只要在不损害所期待的目的的范围内,本发明的饮料中还可以含有碳酸、维生素、矿物质、抗氧化剂、泡沫稳定剂、酯、色素、乳化剂、防腐剂、调味料、果汁、蔬菜汁、质量稳定剂等添加剂的1种或2种以上。
(容器装)
本发明的饮料可以是填充至通用的容器中并密封,而在饮用时打开的形态的容器装饮料。
实施例
以下,示出实验例来具体说明本发明的详细情况,但本发明不限定于此。此外,在本说明书中,如果没有特殊声明,数值范围记载为包含其端点值。
实验1:咖啡因引起的甜味的降低(1)
使用果葡糖浆(Bx75)15质量%、柠檬酸0.12质量%、柠檬酸三钠0.03质量%,制备pH2.7,甜味度10.8,Bx11的水溶液。向其中添加1~45mg/100ml的浓度的咖啡因(纯度99%以上)。向5名专业评审,提供由未添加咖啡因的饮料,和添加了咖啡因的饮料组合而成的实验组。专业评审通过2点识别试验法,评价所提供的实验组中哪一种饮料可更强烈地感觉到甜味。改变日期重复实施2次该2点识别试验法。5名专业评审给出的累计10次的结果如表2所示。在含有4mg/100ml以上浓度的咖啡因的饮料中,咖啡因的添加导致了甜味的降低。

实验2:咖啡因引起的甜味的降低(2)
将作为实验1的甜味成分的果葡糖浆,变更为蔗糖2质量%、乙酰磺胺酸钾0.028质量%、三氯蔗糖0.004质量%,制备pH2.7,甜味度10,Bx2.1的水溶液。以与实验1相同的方式,向其中添加表3所示的量的咖啡因,以与实验1相同的方式评价甜味的强度。结果如表3所示。在使用蔗糖、乙酰磺胺酸钾及三氯蔗糖的饮料中,与使用实验1的果葡糖浆的Bx75的饮料相比,可更明显地察觉到咖啡因引起的甜味的降低。

实验3:γ-氨基丁酸的甜味降低抑制作用
向以5mg/100ml、25mg/100ml及40mg/100ml添加了咖啡因从而甜味降低的实验2的各饮料中,进一步调配0.1质量%的柠檬香料。向该柠檬风味饮料中,添加表4所示的量的γ-氨基丁酸。针对各种含有咖啡因及γ-氨基丁酸的柠檬风味饮料,由5名专业评审,对以实验2的未添加咖啡因的饮料作为对照时的甜味强度进行了评价。评价统计了判定为与对照组同等程度的甜味的人数。
结果如表4所示。已明确添加咖啡因会导致甜味降低,但通过含有4mg/100ml以上的γ-氨基丁酸,可抑制甜味降低。在含有40mg/100ml的γ-氨基丁酸的饮料中,由于γ-氨基丁酸自身的风味会使得甜味难以被察觉,因此γ-氨基丁酸的上限为40mg/100ml左右。此外,相对于咖啡因,γ-氨基丁酸为0.20以上时,甜味的降低抑制作用会更加明显。
专业评审全员评价如下:对照组(3-1)的柠檬风味饮料,柠檬香料的粘稠度较差,是水分多且味淡的饮料,而本发明的同时存在特定量的咖啡因和γ-氨基丁酸的饮料,与对照组相比,可感觉到更强的柠檬风味,是嗜好性高的饮料。

Claims (3)
1.一种饮料,其特征在于,含有下述成分(A)、(B)及(C):
(A)甜味成分,
(B)咖啡因,及,
(C)γ-氨基丁酸,
饮料中的成分(B)的含量为3~15mg/100ml,
饮料中的成分(C)的含量为4~40mg/100ml,
饮料的pH为2.0~5.5,
成分(C)相对于成分(B)的质量比,即(C)/(B)为0.20~4.00。
2.根据权利要求1所述的饮料,其特征在于,饮料的甜味度为5~15。
3.根据权利要求1或2所述的饮料,其特征在于,作为成分(A),含有蔗糖、三氯蔗糖及乙酰磺胺酸钾中的1种或2种以上。
