技术领域
本发明涉及保健食品领域,具体地说,是一种具有保健功能的凝胶糖果。
背景技术
凝胶糖果是以砂糖、淀粉糖浆为主要原料,以琼脂、变性淀粉、明胶、果胶作为凝固剂,经熬制、成型等工艺制成,含水分较高、质地柔软的糖果。由于其水分均高于l0%,有的可高达20%以上,因此按软硬分类属于软糖,用于凝胶软糖的凝胶剂通常有琼脂、明胶、果胶、魔芋胶和淀粉等,有时也添加糖的微晶体或气泡体、水果的酱体或碎块等,这些可作为分散相,因而使凝胶糖果形成不同的多相分散体系,使凝胶糖果的质构、香气和滋味等性质产生明显的差异,形成不同的品种花式,从凝胶糖果的主要特性看,可以把它们看成是一种含有糖溶液的凝胶体,而凝胶体的形成取决于凝胶剂的水合作用。
基于凝胶糖果的这种特性,可以将凝胶糖果作为基体,将一些具备生物活性的营养组分添加在凝胶糖果中,能够保证其在运输和销售过程中不会失活。因此,作为一种适口性好且老少咸宜的零食,可以在其中添加一些保健品类原料作为功能性组分,可以作为具备日常保健效果的保健零食。
随着抗生素、化学抗菌药以及免疫疫苗的发明和应用,细菌和病毒性疾病已经不是人类健康的主要威胁,在高度工业化、信息化、集约化时代,能量摄取的相对过剩、脑力劳动取代体力劳动、营养平衡的失调给肥胖、高血脂、动脉硬化、冠心病、高血压、糖尿病、癌症的发生、发展提供了条件,使得这些代谢性疾病成为人类健康的头号杀手,即使是非致命性疾病如炎症(关节炎、前列腺炎等)、过敏性疾病也给患者带来诸多的痛苦。这类代谢类疾病的根源在于长期不健康的生活习惯导致的三高,为避免出现严重的疾病影响人们的生活质量,我们需要从日常生活中进行保健条例,因此一种适合日常服用来调理三高的功能性软糖很有必要。
发明内容
发明目的:本发明目的在于针对现有技术的不足,提供一种具有保健功能的凝胶糖果。
技术方案:本发明所述一种具有保健功能的凝胶糖果,包括功能性组分和包裹体组分,
按重量组分计,所述包裹体组分包括凝胶剂10~20份、包埋剂1~3份,水1~5份,甜味剂1~4份,保湿剂1~6份和口感增强组分0.3~1份;
按重量组分计,所述功能性组分包括磷酯酰丝氨酸1~3份,不饱和脂肪酸7~12份,维生素组分4~8份,膳食纤维4~8份,中药组分4~8份;
其中,所述不饱和脂肪酸组分包括鱼油、卵磷脂、藻油、葡萄籽油、牛油果油、初榨橄榄油和磷虾油中的一种或多种;
其中,所述维生素组分包括复合维生素粉末、鱼肝油和天然果蔬组分的混合冻干粉末。
作为优选的,所述天然果蔬组分包括胡萝卜、卡曼橘、柠檬、蓝莓、树莓、黑莓、苹果、杏仁、巴旦木、榛子中的一种或多种。
作为优选的,所述凝胶剂包括明胶、果胶、卡拉胶、琼脂、刺槐豆胶、海藻酸钠中的一种或多种。
作为优选的,所述包埋剂包括阿拉伯胶、α-环状糊精、β-环状糊精、γ-环状糊精、变性淀粉中的一种或多种。
作为优选的,所述中药组分包括荷叶、决明子、五味子、蒲公英和菊花中的一种或多种经破壁机充分处理后获得的粉末。
作为优选的,所述甜味剂包括山梨糖醇、麦芽糖醇、赤藓糖醇、异麦芽酮糖醇、乳糖醇、木糖醇、甘露醇和阿巴斯甜中的一种或多种。
作为优选的,所述保湿剂包括甘油,所述口感增强组分包括微晶纤维素。
本发明相比于现有技术具有以下有益效果:(1)功能性组分基于食补型原料,长期服用可以起到降血脂、降血压和降血糖的作用,可以有效避免慢性病的产生;
(2)优选添加了磷酯酰丝氨酸,可以起到提高记忆力,镇静安神缓解精神压力的作用;
(3)加入了不饱和脂肪酸,维生素组分和膳食纤维,可以调理肠胃、软化血管并补充日常饮食中可能缺乏补充的营养素。

一种具有保健功能的凝胶糖果,包括功能性组分和包裹体组分,按重量组分计,包裹体组分包括凝胶剂10~20份、包埋剂1~3份,水1~5份,甜味剂1~4份,保湿剂1~6份和口感增强组分0.3~1份;
按重量组分计,功能性组分包括磷酯酰丝氨酸1~3份,不饱和脂肪酸7~12份,维生素组分4~8份,膳食纤维4~8份,中药组分4~8份;
其中,不饱和脂肪酸组分包括鱼油、卵磷脂、藻油、葡萄籽油、牛油果油、初榨橄榄油和磷虾油中的一种或多种;
其中,维生素组分包括复合维生素粉末、鱼肝油和天然果蔬组分的混合冻干粉末。
这一技术方案的优点在于功能性组分基于食补型原料,长期服用可以起到降血脂、降血压和降血糖的作用,可以有效避免慢性病的产生;优选添加了磷酯酰丝氨酸,可以起到提高记忆力,镇静安神缓解精神压力的作用;加入了不饱和脂肪酸,维生素组分和膳食纤维,可以调理肠胃、软化血管并补充日常饮食中可能缺乏补充的营养素。
其中,磷脂酰丝氨酸(phosphatidylserine,简称PS)是一种能够调控细胞膜关键蛋白功能的磷脂,它广泛存在于所有动物、高等植物以及微生物中,是细胞膜重要的组分之一,另外,PS也是大脑中主要的酸性磷脂,约占哺乳类动物脑中全部磷脂的10~20%,PS主要的药理作用表现在以下5个方面:1、改善记忆力、延缓脑疲劳,治疗老年痴呆症,A.Zanotti等对有记忆损伤的年长大鼠进行Morris水下迷宫逃生试验研究,结果发现在摄取一定量的PS后,大鼠的空间回忆和被动回避反应的记忆能力得到了大幅度改善;治疗儿童多动症,内科医生的临床试验研究显示,对21个多动症患者(4~19岁)进行200~300mg/d剂量的PS饮食摄入,连续摄入4周后发现,注意力和学习能力有显著提高;3、缓解精神压力,Hellhammer等研究了大豆磷脂酸和PS混合物对人精神压力的影响,以安慰剂为对照进行社会压力测验(TSST)后,发现400mg混合物对其有明显缓解作用,且对心率无影响;4、治疗抑郁症,Brambilla等研究发现PS能够调节大脑中控制情绪的神经递质的激素水平,患者抑郁度平均降低70%,情绪紊乱、行为异常、焦虑、易怒等症状得到了显著改善;5、竞技运动营养,Kingsley等研究发现,每天补充从大豆中摄取PS 750mg,连续10d,在观察身体机能的实验结果后,发现PS的补充能减少积累氧债并能提高运动耐力。

荷叶、决明子、五味子、蒲公英和菊花作为中药,具备降血脂、降血糖和降血压的作用,且在中药的理论里都有祛湿解毒降肝火的效用。
具体实施时,天然果蔬组分包括胡萝卜、卡曼橘、柠檬、蓝莓、树莓、黑莓、苹果、杏仁、巴旦木、榛子中的一种或多种;凝胶剂包括明胶、果胶、卡拉胶、琼脂、刺槐豆胶、海藻酸钠中的一种或多种;包埋剂包括阿拉伯胶、α-环状糊精、β-环状糊精、γ-环状糊精、变性淀粉中的一种或多种;中药组分包括荷叶、决明子、五味子、蒲公英和菊花中的一种或多种经破壁机充分处理后获得的粉末;甜味剂包括山梨糖醇、麦芽糖醇、赤藓糖醇、异麦芽酮糖醇、乳糖醇、木糖醇、甘露醇和阿巴斯甜中的一种或多种;此外,保湿剂包括甘油,口感增强组分包括微晶纤维素。
关于天然果蔬组分和中药组分的选择主要基于不同用户需求的产品选择,天然果蔬组分和中药组分的用料不同可以给予产品不同针对性的保健效果。
实施例:一种具有保健功能的凝胶糖果,包括功能性组分和包裹体组分,其中,功能性组分包括磷酯酰丝氨酸3份,不饱和脂肪酸10份,维生素组分8份,膳食纤维8份,中药组分6份,其中不饱和脂肪酸包括鱼油、卵磷脂、藻油、葡萄籽油、牛油果油、初榨橄榄油和磷虾油,维生素组分包括复合维生素粉末、鱼肝油以及胡萝卜、卡曼橘、柠檬、蓝莓、树莓、黑莓、苹果、杏仁、巴旦木、榛子的冻干混合粉末,中药组分包括荷叶、决明子、五味子、蒲公英和菊花的混合冻干粉末。
选两组受试者,一组为对照组正常生活,另一种为实验组在正常生活的同时定期服用实施例所提供的凝胶糖果,持续40个月后进行体检,可见相比于实验组,对照组的三高比例提高了1.96%。
