Background
Eurotium cristatum, commonly known as golden flower, is an enzyme-type bacterium beneficial to human body. The golden flower can secrete amylase and oxidase, can catalyze the conversion of protein and starch in the tea into monosaccharide, and catalyze the oxidation of polyphenol compounds into substances beneficial to human bodies. The golden flower is an important standard for judging the quality of the brick tea, the more the golden flower is contained in the brick tea, the higher the quality grade of the brick tea is, the more mellow the taste of the tea is, and the more intense the fungus fragrance is.
The black tea brick tea in the existing market basically has flowers in the brick, and the surface of the brick tea has no flowers or slightly golden flowers, and in the Chinese patent 'CN 201610529149.8 a brick tea manufacturing method', the brick tea is cultivated in a baking room with constant temperature and constant humidity at the temperature of 29 ℃ and the humidity of 30% for 6-15 days, and golden flowers are formed on the surface of the brick tea; however, the humidity of the baking room in the method is only 30 percent, and the humidity is relatively low, so that the rapid growth and the propagation of eurotium cristatum are not facilitated, and the quality and the content of the golden flowers are not ideal.
In a patent CN201510998514.5 brick tea double-sided flowering process, a brick tea flowering process is disclosed, three stages of high temperature and high humidity, medium temperature and humidity, low temperature and low humidity and drying are adopted, and finally, golden flowers are uniformly distributed on two surfaces of the brick tea; however, the temperature range of the flowering process is too wide, the temperature and the humidity need to be adjusted for many times, the operation process is too complex, the growth environment of eurotium cristatum is unstable, the stable growth of golden flowers is not facilitated, the golden flowers are uniformly distributed on the front surface and the back surface of the brick tea, and the content of the golden flowers is not high.
