b. wrapping powder: conveying the sea cucumber strips into a powder wrapping machine through a conveying belt for wrapping, wherein the weight of the wrapped powder is controlled to be 3% of the weight of the sea cucumber strips according to the surface area of the sea cucumber;
c. wrapping pulp: coating the powder-coated sea cucumber strips with pulp by using a pulp coating machine, wherein the weight of the pulp coating is 20% of that of the sea cucumber strips; d. Frying: conveying the wrapped sea cucumber strips to a frying machine through a conveying belt for frying, wherein the frying temperature is 185 ℃, and the frying time is 35 seconds;
e. quick-freezing: the fried sea cucumber strips are subjected to quick-freezing treatment by a single freezing machine;
f. packaging: and packaging by an automatic packaging machine.
The coating powder comprises, by weight, 70 parts of wheat flour, 15 parts of tapioca starch, 3 parts of granulated sugar, 1 part of salt, 1 part of glucose, 0.5 part of disodium dihydrogen pyrophosphate and 0.5 part of sodium bicarbonate, wherein each part is 1 kg. The coating pulp comprises, by weight, 60 parts of wheat flour, 40 parts of corn flour, 3 parts of granulated sugar, 2 parts of edible salt, 0.8 part of glucose, 0.1 part of disodium dihydrogen pyrophosphate, 0.5 part of sodium bicarbonate, 0.01 part of capsanthin and 200 parts of ice water, wherein each part is 1 kg.
Compared with the prior art, the invention has the beneficial effects that:
1. by utilizing the process of wrapping powder and wrapping slurry, the oil wrapping layers of the fried sea cucumber strips are tightly bonded without shelling, so that a good sealing and fresh-keeping effect is achieved, and the nutrient elements of the sea cucumber are kept from being left; the process is simple, the product quality is stable, and the production efficiency is high; the powder-coated slurry-coated fried sea cucumber strip is golden in appearance and color and crisp in taste.
2. The coating of the aquatic products can be solidified by frying, particularly, the oil is used as an emulsifier, so that the aquatic products in the coating can be better sealed, and the freshness of the aquatic products can be kept.
3. Coating powder and coating pulp are used as freezing and fresh-keeping components; the coating layer is directly contacted with aquatic products and coated on the surfaces of aquatic product materials, and has the following functions: the wrapping powder can absorb the moisture on the surface of the matrix and provide the adhesive force between the surface of the matrix material and the edible film layer so as to prevent the matrix food from being separated from the edible film layer and further keep the freshness of the aquatic products. Secondly, the coating layer can improve the stability, viscosity and brittleness of the coating, reduce the oil content of the product and the like.
4. The combination of the coating and the coating syrup can ultimately be prepared into a product having selected taste, color, odor and texture characteristics for optimal consumer palatability.
5. The quick-frozen sea cucumber is fried after being coated with flour and slurry, so that the taste, freshness and nutrient elements of the sea cucumber are not influenced by quick freezing.

Claims (3)
1. A method for preparing quick-frozen fried sea cucumber strips by coating flour and slurry is characterized by comprising the following steps:
a. sea cucumber strips: instant sea cucumber is cut into strips, the width of the sea cucumber strips is 0.5-0.8cm, and the length of the sea cucumber strips is 4-6 cm;
b. wrapping powder: conveying the sea cucumber strips into a powder wrapping machine through a conveying belt for wrapping, wherein the weight of the wrapped powder is controlled to be 2-3% of the weight of the sea cucumber strips according to the surface area of the sea cucumber;
c. wrapping pulp: coating the powder-coated sea cucumber strips with pulp by using a pulp coating machine, wherein the weight of the pulp coating is 15-20% of that of the sea cucumber strips;
d. frying: conveying the wrapped sea cucumber strips to a frying machine for frying at the frying temperature of 180 ℃ and 185 ℃ for 30-40 seconds through a conveying belt;
e. quick-freezing: carrying out quick-freezing treatment on the fried sea cucumber strips by a single freezer until the central temperature of the sea cucumber strips reaches-18 ℃;
f. packaging: and packaging by an automatic packaging machine.
2. The method for preparing the quick-frozen fried sea cucumber strips coated with flour and slurry according to claim 1, which is characterized by comprising the following steps: the wrapping powder comprises the following components in parts by weight,
60-80 parts of wheat flour, 10-20 parts of cassava starch, 1-5 parts of granulated sugar, 1-2 parts of salt, 0.5-1 part of glucose, 0.1-0.5 part of disodium dihydrogen pyrophosphate and 0.1-0.5 part of sodium bicarbonate.
3. The method for preparing the quick-frozen fried sea cucumber strips coated with flour and slurry according to claim 1, which is characterized by comprising the following steps: the wrapping pulp consists of the following components in percentage by weight,
40-60 parts of wheat flour, 30-40 parts of corn flour, 1-5 parts of granulated sugar, 1-2 parts of edible salt, 0.5-1 part of glucose, 0.1-0.5 part of disodium dihydrogen pyrophosphate, 0.1-0.5 part of sodium bicarbonate, 0.01-0.1 part of capsanthin and 100 parts of ice water.
