Abstract
The invention provides lemon paste with the efficacy of moistening lung to arrest cough and a preparation method thereof, belonging to the technical field of foods or health-care products. The lemon paste comprises the following components in parts by weight: 30-50 parts of lemon, 15-30 parts of platycodon grandiflorum, 10-20 parts of orange peel, 5-10 parts of momordica grosvenori, 10-15 parts of lily and 5-15 parts of almond, wherein the mass ratio of the lemon, the platycodon grandiflorum and the orange peel is controlled to be 2-5:1-3:1, and the mass ratio of the lily to the almond is controlled to be 1-3:1 in the implementation process, so that the stability of the prepared lemon paste can be obviously improved, and the lung moistening and cough relieving effects of the obtained product are achieved, wherein in the preparation process, the platycodon grandiflorum and the momordica grosvenori are firstly juiced, and then the juice and the lemon slices are mixed according to the: grinding at a ratio of 1.5-2.0(mL/g), and preparing the juice can effectively improve the taste of the obtained lemon juice, and the obtained lemon paste has good quality and good taste.

Further, as disclosed in chinese patent application 201910514216.2, a lemon-rose paste and a preparation method thereof are provided, which aim to solve the technical problems of loss of effective components of lemon, reduction of medicinal value of lemon and single function of the product in the preparation method of the prior art. The lemon rose paste comprises the following raw materials in parts by weight: 40-60 parts of lemon, 45-55 parts of rock candy, 3-8 parts of dried orange peel powder, 3-8 parts of fritillary bulb and 2-10 parts of rose; the preparation method comprises the following steps: (1) rubbing clean lemon with edible salt for 15-20 s, soaking in clear water, and washing; (2) slicing lemon, wherein the thickness of the lemon slices is 0.5-0.7 cm; (3) according to the formula, the lemon slices, the rock sugar and the dried orange peel powder are stewed for 7-9 hours in a water-proof way, the lemon seeds are fished out, the Sichuan fritillary bulb powder is added, the mixture is continuously decocted for 1-3 hours, the rose is added, the mixture is decocted for 4-6 hours, and the paste is obtained; (4) cooling, vacuumizing and bottling. The lemon rose paste prepared by the method has good taste, and also has the effects of appetizing, tonifying spleen, moistening throat, relieving cough, eliminating fatigue, expelling toxin, beautifying and the like, but the application does not pay attention to the stability of the obtained product, impurities in the product and the limit of microorganisms.
Therefore, the lemon paste which has high stability, high release degree of effective components, good taste, excellent color and luster, less impurities and lung moistening and cough relieving efficacy needs to be developed.

In the implementation process, the fact that the stability of the prepared lemon paste can be obviously improved when the mass ratio of the lemon, the platycodon grandiflorum and the orange peel is controlled to be 2-5:1-3:1 is unexpectedly found, so that the limit of microorganisms in the obtained lemon paste after being placed for a long time is low, and the effective period of the lemon paste is obviously prolonged.

The lily powder, the orange peel powder and the almond powder prepared in the step (2) have the particle size of 100-150 meshes;
the operation steps of the step (3) are as follows: firstly, crushing platycodon grandiflorum and momordica grosvenori, and then decocting the platycodon grandiflorum and the momordica grosvenori in water for 2 times, wherein the mass of the water added for the first time is 3-5 times that of the fingered citron, and the decocting time is 1-2 hours; the second time of adding water is 1-3 times of the mass of the fingered citron, and the decoction time is 0.5-1 hour.

orange peel: bitter and pungent taste, warm in nature; entering lung and spleen meridians; the main effects are as follows: regulating qi-flowing, strengthening spleen, eliminating dampness and phlegm, the main indications are: a gastric and abdominal distention, poor appetite, vomiting and diarrhea, cough with profuse sputum.
Momordica grosvenori: sweet and cool in nature, enters lung and large intestine channels, has the effects of moistening lung for arresting cough, promoting fluid production to quench thirst, is suitable for lung heat or lung dryness cough, pertussis, body fluid impairment caused by summer heat and thirst and the like, and has the effect of relaxing bowel;

the preparation method of the lemon paste comprises the following steps:
(1) cleaning fresh lemons, slicing and removing seeds for later use;
(2) grinding lily, orange peel and almond according to the formula dosage into powder with the particle size of 100 meshes for later use;
(3) crushing platycodon grandiflorum and momordica grosvenori according to the formula dosage, adding water, and decocting for 2 times, wherein the mass of the water added for the first time is 5 times that of fingered citron, and the decocting time is 1 hour; adding water for the second time, wherein the mass of the water is 1 time of that of the fingered citron, the decocting time is 1 hour, and the juice is taken for later use;
(4) adding the juice obtained in the step (3) into the lemon slices obtained in the step (1) for polishing to obtain juice;
(5) adding the lily powder, the orange peel powder and the almond powder obtained in the step (2) into the juice obtained in the step (4), decocting the mixture into a viscous state with slow fire, adding crystal sugar, adding beta-cyclodextrin and tamarind seed polysaccharide gum after the crystal sugar is dissolved, and collecting the paste to obtain the lemon paste.
The volume-mass ratio of the juice to the lemon slices in the step (4) is 2.0: 1.5 (mL/g).

The paint comprises the following components in parts by weight: 50 parts of lemon, 30 parts of platycodon grandiflorum, 20 parts of orange peel, 10 parts of momordica grosvenori, 15 parts of lily, 15 parts of almond, 10 parts of rock candy, 4 parts of beta-cyclodextrin and 6 parts of tamarind seed polysaccharide gum;
the preparation method of the lemon paste comprises the following steps:
(1) cleaning fresh lemons, slicing and removing seeds for later use;
(2) grinding lily, orange peel and almond with the formula dosage into powder with the particle size of 150 meshes for later use;
(3) crushing platycodon grandiflorum and momordica grosvenori according to the formula dosage, adding water, and decocting for 2 times, wherein the mass of the water added for the first time is 3 times that of fingered citron, and the decocting time is 1 hour; adding water for the second time, wherein the mass of the water is 1 time of that of the fingered citron, the decocting time is 0.5 hour, and the juice is taken for later use;
(4) adding the juice obtained in the step (3) into the lemon slices obtained in the step (1) for polishing to obtain juice;

The preparation method of the lemon paste comprises the following steps:
(1) cleaning fresh lemons, slicing and removing seeds for later use;
(2) grinding lily, orange peel and almond according to the formula dosage into powder with the particle size of 120 meshes for later use;
(3) crushing platycodon grandiflorum and momordica grosvenori according to the formula dosage, adding water, and decocting for 2 times, wherein the mass of the water added for the first time is 3 times that of fingered citron, and the decocting time is 2 hours; adding water 3 times the weight of fructus Citri Sarcodactylis for the second time, decocting for 0.5 hr, and collecting the decoction;

The preparation method of the lemon paste comprises the following steps:
(1) cleaning fresh lemons, slicing and removing seeds for later use;
(2) grinding lily, orange peel and almond with the formula dosage into powder with the particle size of 150 meshes for later use;

(1) cleaning fresh lemons, slicing and removing seeds for later use;
(2) grinding lily, orange peel and almond according to the formula dosage into powder with the particle size of 120 meshes for later use;
(3) crushing platycodon grandiflorum and momordica grosvenori according to the formula dosage, adding water, and decocting for 2 times, wherein the mass of the water added for the first time is 5 times that of fingered citron, and the decocting time is 1 hour; adding water for the second time, wherein the mass of the water is 1 time of that of the fingered citron, the decocting time is 1 hour, and the juice is taken for later use;

The difference from example 5 is that: the mass ratio of the lemon, the platycodon grandiflorum and the orange peel is 1:3:1, namely 18 parts of the lemon, 54 parts of the platycodon grandiflorum and 18 parts of the orange peel, and the contents of other components are the same as those in example 5.

Effect test
1. Active ingredient detection
The active ingredients in the lemon paste prepared according to the formulas and methods of the above examples 1-5 and comparative examples 1-3, 4 and 7 are tested, and the specific test results are shown in table 1 below.
The detection instrument is as follows: an ultraviolet spectrophotometer and an HPLC (high performance liquid chromatography) detection method comprises the following steps: colorimetric method, and high performance liquid chromatography.

According to the detection data in the table 1 above, it can be seen that the content of the effective components of the paste prepared in examples 1-5 is high, especially the amount of the effective components of the lemon paste prepared in example 5 is significantly higher than that of other examples, which indicates that the content and the ratio of the components significantly affect the content of the effective components in the paste, while the raw material types in the components are changed or the storage amount of the effective components in the product is significantly affected by changing the mass ratio of the components in comparative examples 1-3, the content of the effective components of the product is also affected to a certain extent by changing the mass ratio of the lily to the almond in comparative example 4, and the content of total flavonoids and hesperidin in the paste is significantly reduced by changing the preparation method in comparative example 7, so that the effectiveness of the paste is reduced.
2. Microbial limit detection
According to the invention, by reasonably controlling the content and the proportion of various components, the prepared paste has better stability, the growth rate of microorganisms is slow after long-term storage, and the paste can be stored for a long time without deterioration, and is shown in Table 2.

As can be seen from the test data in Table 2 above, the pastes prepared in examples 1 to 5 of the present invention have high stability, do not increase in the content of microorganisms upon long-term storage, and are suitable for long-term storage, while comparative examples 1 to 3 have an effect on superior stability by changing the mass ratio between the components or by changing the kind of the components, while comparative examples 5 to 6 have an effect on stability of the paste to significantly shorten the storage life by changing the kind of the stabilizer.
3. Product color and taste detection
The lemon creams prepared in examples 1 to 5 and comparative examples 7 to 9 were subjected to sensory evaluation (color, taste) by 15 men and women, respectively, and were fully divided by 10 points, to obtain Table 3:

According to the evaluation scores in the table 3, the color and taste of the paste prepared in the examples 1-5 of the present invention are better, especially the paste prepared in the example 5 has the best taste and color, while the taste and the color of the product are obviously affected by changing the preparation method or changing the mass ratio of the juice to the lemon slices in the preparation process in the comparative examples 7-9.
3. Stability, impurity condition detection
The detection method comprises the following steps: the prepared paste is put into a container, and is kept stand at room temperature to observe whether the paste is stable or not and whether a precipitate is separated out or not, which is shown in the following table 4.

According to the detection of the table 4, the paste prepared by the invention has higher stability, the paste becomes stable and uniform after long-term storage, and the water seepage phenomenon cannot occur, while the comparative examples 5-7 change the type of the stabilizer or change the preparation method to influence the performance of the paste, so that the stability of the paste is influenced, and the water seepage and the separation of the paste are influenced after long-term storage, so that the edible mouthfeel is influenced.

(4) adding the juice obtained in the step (3) into the lemon slices obtained in the step (1) for polishing to obtain juice;
(5) adding the lily powder, the orange peel powder and the almond powder obtained in the step (2) into the juice obtained in the step (4), decocting the mixture into a viscous state with slow fire, adding crystal sugar, adding beta-cyclodextrin and tamarind seed polysaccharide gum after the crystal sugar is dissolved, and collecting the paste to obtain the lemon paste.
10. The method of claim 9, wherein: the volume mass ratio of the juice to the lemon slices in the step (4) is 2.0-2.5: 1.5-2.0 (mL/g).
