Description

Mulberry paste with liver and kidney protecting effects and preparation method thereof
Technical Field
The invention belongs to the technical field of food or health care products, and particularly relates to mulberry paste with liver and kidney protecting effects and a preparation method thereof.
Background
Mulberry, also known as mulberry, jujube and mulberry, is a mature fruit cluster of Morus alba Linn, which is a Morus alba Linn, is mostly reddish purple or black oval flower and fruit, about 1-2.5 cm long, thick and honey juice, sweet and sour and fragrant, and rich in nutrient components. The scientific identification shows that the fresh fruits contain a large amount of free acid and 16 amino acids, and also contain mineral substances and trace elements such as zinc, iron, calcium, manganese and the like which are lacked by human bodies, carotene, fructose, glucose, succinic acid pectin, cellulose and the like, so the fresh fruits are known as third-generation fruits together with sea buckthorn, raspberry and the like. Is listed as one of the agricultural products with homology of medicine and food which are not only food but also medicine by the national ministry of health.
Because the mulberry contains amino acids necessary for human bodies, polysaccharide easy to absorb, abundant vitamins, haematochrome, minerals such as calcium, iron, zinc, selenium and the like which are deficient in human bodies, the mulberry has the effects of enhancing immunity, promoting the growth of hematopoietic cells, promoting metabolism and the like, has abundant nutritional values and certain pharmacological values, and a plurality of classical Chinese medicine documents also record that the mulberry has the effects of benefiting five-organ joints, promoting blood circulation, calming spirit, reducing blood pressure and quenching thirst, enabling people to be smart and eyesight, whitening and not aging, relieving alcoholism and the like. The modern medicine clinical proves that the main pharmacological actions of the mulberry comprise: (1) antioxidation: the mulberry polysaccharide contained in the mulberry has the functions of removing hydroxyl free radicals and superoxide anion free radicals, blocking free radical reaction chains and having certain antioxidation and anti-aging functions, and the mulberry extract has abundant phenolic substances and pigments, can obviously improve the activity of antioxidase and has the function of delaying the decline of memory in the aging process; (2) the hypoglycemic effect: the mulberry polysaccharide has obvious hypoglycemic effect, and can basically maintain the blood sugar within a normal range; (3) anti-aging effect: the mulberry anthocyanin can enhance the activity of antioxidant enzyme in vivo and inhibit lipid peroxidation, and has obvious anti-aging effect.
Because of its good health-care effect, in order to make the mulberry be better eaten, people prepare it into drinks such as mulberry juice, mulberry wine, mulberry vinegar, etc., but the product component is single, and the absorption effect is not good after using, and the preservation time is shorter, so in order to improve the preservation time of mulberry product and increase the diversity of its component, prepare it into mulberry paste, for example Chinese patent application 201910055054.0 discloses a mulberry paste for benefiting qi and nourishing blood, its raw materials include by weight: 52-58 parts of mulberry, 20-49 parts of linden leaf, 20-30 parts of Chinese yam, 30-40 parts of honey, 15-30 parts of donkey-hide gelatin, 32-35 parts of medlar extract and 18-20 parts of red date, and the invention also discloses a preparation method of the mulberry paste, but the preparation method provided by the application adopts a method of soaking, extracting and concentrating, but the method can cause the waste of effective ingredients in mulberry, and the temperature in the concentration process is higher, so that the effective ingredients in the components can be damaged, and the nutritional value of the product is reduced.
Further, as disclosed in chinese patent application 201810866559.0, a mulberry paste and a process for producing the same, the process comprises: carrying out countercurrent extraction on mulberry in a solvent to obtain an extracting solution; performing horizontal-spiral centrifugation on the extracting solution, and filtering for the first time to obtain a first filtrate; then carrying out butterfly centrifugation on the first filtrate, and filtering for the second time to obtain a second filtrate; then, carrying out membrane concentration on the second filtrate to obtain a first concentrated solution; performing single-effect concentration on the first concentrated solution to obtain a second concentrated solution; the second concentrate is then filled aseptically under vacuum. The process has high efficiency and low energy consumption; the extraction and concentration time is short, the extraction and concentration temperature is low, and the like; can effectively protect the inherent components of the mulberry and ensure the original taste and flavor of the mulberry; meanwhile, the purity of the paste can be ensured, and impurities are avoided. However, the mulberry paste product provided in the application has single components and cannot supplement various nutrients at the same time.
Therefore, there is a need to develop a mulberry paste with abundant raw material components, good taste, high content of effective components and better liver and kidney protection efficacy and a preparation method thereof.
