Background
The life of edible oil used in the processing of food frying and the stability of various indexes (color, peroxide value, acid value, etc.) are important factors affecting the frying cost and the quality of fried food. The frying is divided into warm oil, hot oil, boiled oil and boiling oil according to the difference of oil temperature, the temperature of the warm oil is 70-100 ℃, the oil level is calmer, and no green smoke and no sound are generated; the temperature of hot oil is 110-; the temperature of the high-temperature oil is 180-220 ℃, the oil surface emits green smoke, and the oil is cracked when stirred; when the boiling oil temperature reaches above 230 ℃, the whole boiler emits green smoke, the oil surface rolls and has severe crackling sound. In the prior art, the duck meat is fried by using boiled oil generally, so that the surface layer of the duck meat is golden and crisp. However, a large amount of toxic substances such as trans-fatty acids and the like are generated in the process of frying in the high-temperature oil, and the chips are remained in the oil during frying, so that the chips are continuously fried in the oil, and a large amount of toxic substances are further generated.
Therefore, there is a need for an improved structure that overcomes the above-mentioned deficiencies.
Disclosure of Invention
The invention aims to provide low-temperature frying equipment, which realizes frying, reduces the generation of harmful substances in oil and keeps oil clean.
The technical purpose of the invention is realized by the following technical scheme: a low-temperature frying device comprises a rack, wherein the rack is provided with a frying box for frying, the bottom layer of the frying box is used for storing high-temperature water, the upper layer of the frying box is used for storing oil for frying food, the side wall of the frying box is provided with a transparent observation tube for observing the oil-water layering position, and the rack is provided with a heating device for heating water and a frying placement mechanism for placing the food into the oil for frying;
the transparent observation tube is vertically arranged, the upper end and the lower end of the transparent observation tube are both communicated with the inner cavity of the frying box, and oil liquid flows into the upper part of the transparent observation tube and water flows into the lower part of the transparent observation tube;
the heating device is fixed on the bottom surface of the frying box and is used for heating water at the bottom of the frying box;
the frying placement mechanism comprises a frame which is lifted relative to the frying box, a first electric cylinder which is arranged on the frame and used for driving the frame to lift, and a turnover assembly used for driving the frame to turn and dump food, wherein the turnover assembly comprises a lifting seat which is connected to the frame in a sliding manner along the vertical direction, a driving shaft which is rotationally connected to the lifting seat, a driving motor which is fixedly connected to the lifting seat and connected with the driving shaft, and a cantilever which is arranged on the side wall of one side of the frame and fixedly connected with the driving shaft, the output end of the first electric cylinder is fixedly connected with the lifting seat, the lifting seat is provided with two buffer cushions which are abutted against the cantilever, and the two buffer cushions are respectively arranged on two sides of the driving shaft;
the frame bottom surface is provided with a plurality of material turning long openings, the material turning long openings extend to the side wall of the frame along the frame bottom surface, and the material turning long openings are uniformly arranged;
the frame is provided with the stirring subassembly that is used for food stirring, the stirring subassembly is including being located the fried incasement and for the baffle that the fried case reciprocated, a plurality of be the level set up in the baffle and with stirring long mouthful one-to-one's stirring pole, set up in the electronic jar of second that the frame and drive baffle go up and down, stirring pole rotate connect in the baffle.

The invention is further provided with: a rotating structure for driving the material turning rod to rotate is arranged between the frame and the material turning rod, and the rotating structure comprises a plurality of racks arranged on the outer side wall of the frame and gears fixed on the material turning rod and corresponding to the racks.
In conclusion, the invention has the following beneficial effects:
the water at the bottom of the frying box is heated to about the temperature through the heating device, and the oil is heated through the water, so that the oil temperature reaches about the temperature, the oil temperature requirement of warm oil is met, then the boiled duck meat is put into the oil to be fried at low temperature, the production of harmful substances can be reduced through the low oil temperature, and the chips in the duck meat are sunk into the oil and then fall into the water, so that the chips are prevented from being fried repeatedly, the cleanness of the oil is kept, and the service life of the oil is prolonged.
The position of the oil-water boundary is conveniently observed through the transparent observation pipe, and the position of the oil-water boundary is controlled through the water inlet pipe, the water outlet pipe, the oil inlet pipe and the oil outlet pipe, so that the oil-water boundary is kept at a proper position.
After the duck meat is put into the frame and immersed in oil for frying, the first electric cylinder drives the lifting seat and the frame to move upwards, so that the frame is separated from the oil liquid, the excessive oil liquid in the duck meat is drained, and the buffer cushion is abutted against the cantilever to play a supporting role; then drive the rotation of drive shaft through driving motor and realize the frame upset to empty the duck meat in the frame, later the frame reversal puts into the duck meat again, and immerses the duck meat in the oil and fry.
After the frame is immersed in oil, the guide plate and the material turning rod are driven to reciprocate up and down through the second electric cylinder, the material turning rod enters the frame through the material turning long opening and turns duck meat, the material turning effect is achieved, and the duck meat is guaranteed to be fried uniformly.
When the stirring rod enters the stirring long opening, the gear is in contact with the rack and moves relatively, so that the stirring rod is driven to rotate, the duck is further ensured to be overturned by the rotation of the stirring rod, and the stirring efficiency is improved.

Detailed Description
In order to make the technical means, the original characteristics, the achieved purposes and the effects of the invention easy to understand, the invention is further described with reference to the figures and the specific embodiments.
As shown in fig. 1 to 4, the low-temperature frying apparatus provided by the present invention includes a frame 1, wherein the frame 1 is provided with a frying tank 2 for frying, a bottom layer of the frying tank 2 is used for storing high-temperature oil, an upper layer of the frying tank 2 is used for storing oil for frying food, a side wall of the frying tank 2 is provided with a transparent observation tube 3 for observing the oil-water separation position, the frame 1 is provided with a heating device 4 for heating water, a frying placement mechanism for placing food into oil for frying, and the heating device 4 is fixed on the bottom surface of the frying tank 2 and is used for heating water at the bottom of the frying tank 2. The water at the bottom of the frying box 2 is heated to about 90 ℃ through the heating device 4, oil is heated through the water, the oil temperature reaches about 80 ℃, the oil temperature requirement of warm oil is met, then the boiled duck meat is put into the oil to be fried at low temperature, the generation of harmful substances can be reduced through the low oil temperature, and the chips in the duck meat are sunk into the oil after entering the oil, so that the chips are prevented from being fried repeatedly, the cleanness of the oil is kept, and the service life of the oil is prolonged.
In the embodiment, the transparent observation tube 3 is vertically arranged, the upper end and the lower end of the transparent observation tube 3 are both communicated with the inner cavity of the frying box 2, and oil liquid flows into the upper part of the transparent observation tube 3 and water flows into the lower part of the transparent observation tube 3; and deep-fry case 2 installs inlet tube 5, the outlet pipe 6 that is used for changing water, inlet tube 5 and outlet pipe 6 are close to 2 bottom positions in deep-fry case, deep-fry case 2 is provided with into oil pipe 7, the oil pipe 8 that is used for changing oil, it is located 2 oil water boundary positions in deep-fry case to advance oil pipe 7 and oil pipe 8. The position of the oil-water boundary is conveniently observed through the transparent observation pipe 3, and the position of the oil-water boundary is controlled through the water inlet pipe 5, the water outlet pipe 6, the oil inlet pipe 7 and the oil outlet pipe 8, so that the oil-water boundary is kept at a proper position.
The frying placement mechanism comprises a frame 9 which is lifted relative to the frying tank 2, a first electric cylinder 10 which is arranged on the frame 1 and used for driving the frame 9 to lift, and a turnover assembly used for driving the frame 9 to turn and pour food, wherein the turnover assembly comprises a lifting seat 11 which is slidably connected to the frame 1 along the vertical direction, a driving shaft 12 which is rotatably connected to the lifting seat 11, a driving motor 13 which is fixedly connected to the lifting seat 11 and is connected with the driving shaft 12, and a cantilever 14 which is arranged on one side wall of the frame 9 and is fixedly connected with the driving shaft 12, the output end of the first electric cylinder 10 is fixedly connected with the lifting seat 11, the lifting seat 11 is provided with two cushion pads 15 which are abutted against the cantilever 14, and the two cushion pads 15 are respectively arranged on two sides of the driving shaft 12. After duck meat is put into the frame 9 and immersed into oil for frying, the first electric cylinder 10 drives the lifting seat 11 and the frame 9 to move upwards, so that the frame 9 is separated from the oil liquid, the excessive oil liquid in the duck meat is drained, and the buffer cushion 15 is abutted against the cantilever 14 to play a supporting role; then the frame 9 is overturned by driving the driving shaft 12 to rotate through the driving motor 13, so that the duck meat in the frame 9 is poured, then the frame 9 is reversely rotated and the duck meat is put in again, and the duck meat is immersed in oil for frying.
In this embodiment, the bottom surface of the frame 9 is provided with a plurality of material turning long openings 16, the material turning long openings 16 extend to the side wall of the frame 9 along the bottom surface of the frame 9, the plurality of material turning long openings 16 are uniformly arranged, and the length direction of the material turning long openings 16 is perpendicular to the axial direction of the driving shaft 12. Frame 1 is provided with the stirring subassembly that is used for food stirring, the stirring subassembly is including being located in frying case 2 and for the baffle 17 that frying case 2 reciprocated, a plurality of levels that are set up in baffle 17 and with stirring long mouthful 16 one-to-one stirring pole 18, set up in frame 1 drives the electronic jar 19 of second that baffle 17 goes up and down, stirring pole 18 rotate connect in baffle 17. After the frame 9 is immersed in oil, the guide plate 17 and the material turning rod 18 are driven by the second electric cylinder 19 to reciprocate up and down, the material turning rod 18 enters the frame 9 through the material turning long opening 16 and turns duck meat, the material turning effect is realized, and the duck meat is uniformly fried.
A rotating structure for driving the material turning rod 18 to rotate is arranged between the frame 9 and the material turning rod 18, and the rotating structure comprises a plurality of racks 20 arranged on the outer side wall of the frame 9 and gears 21 fixed on the material turning rod 18 and corresponding to the racks 20. When the material turning rod 18 enters the material turning long opening 16, the gear 21 is in contact with the rack 20 and moves relatively, so that the material turning rod 18 is driven to rotate, the rotation of the material turning rod 18 further ensures that the duck meat is turned, and the material turning efficiency is improved.
In this embodiment, a supporting portion 22 is fixed to an end of the frame 9 away from the suspension arm 14, and the frame 1 is provided with an abutting block 23 against which the supporting portion 22 abuts. When the support part 22 is abutted by the abutting block 23, both ends of the frame 9 are supported during frying, so that the supporting strength of the frame 9 is improved, and the frying safety is improved.
