s3, selecting broken rice in the rice processing process as a raw material, cleaning the broken rice, removing impurities, drying, mixing the dried broken rice and walnut kernels according to a mass ratio of 7:1, and crushing to obtain rice flour;
s4, adding the fragrant and glutinous bamboo extract into the rice flour according to the mass ratio of 1:55, stirring and mixing uniformly at the temperature of 38 ℃, and then performing spray drying, granulation and polishing to obtain the bamboo-flavored health-care rice. Tests show that the extraction rate of the effective components of the fragrant waxy bamboo is as high as 97.5%.
Example two
The invention provides a processing method of health-care rice with bamboo flavor, which comprises the following steps:
s1, cleaning and drying fresh and tender fragrant and glutinous bamboo, crushing the dried fragrant and glutinous bamboo to obtain fragrant and glutinous bamboo dry powder, adding water into the fragrant and glutinous bamboo dry powder according to a mass ratio of 1:9.5, uniformly mixing, and pulping to obtain fragrant and glutinous bamboo pulp;
s2, compounding 45% ethanol, sodium citrate and cellulose according to a mass ratio of 6.5:1.5:1.5 to prepare a leaching agent, adding the leaching agent into the fragrant and glutinous bamboo pulp according to a mass ratio of 1:40, stirring and mixing uniformly at room temperature, performing ultrasonic extraction for 8min by adopting an ultrasonic extraction process under the conditions that the frequency is 90kHz and the temperature is 30 ℃, continuing to increase the temperature to 45 ℃, extracting for 8min by ultrasonic, extracting effective components in the fragrant and glutinous bamboo pulp, and filtering to obtain a fragrant and glutinous bamboo extracting solution;
s3, selecting broken rice in the rice processing process as a raw material, cleaning the broken rice, removing impurities, drying, mixing the dried broken rice and walnut kernels according to a mass ratio of 8.5:1, and crushing to obtain rice flour;
s4, adding the fragrant and glutinous bamboo extract into the rice flour according to the mass ratio of 1:65, stirring and mixing uniformly at the temperature of 48 ℃, and then performing spray drying, granulation and polishing to obtain the bamboo-flavored health-care rice. Tests show that the extraction rate of the effective components of the fragrant waxy bamboo is as high as 98.7%.
EXAMPLE III
The invention provides a processing method of health-care rice with bamboo flavor, which comprises the following steps:
s1, cleaning and drying fresh and tender fragrant and glutinous bamboo, crushing the dried fragrant and glutinous bamboo to obtain fragrant and glutinous bamboo dry powder, adding water into the fragrant and glutinous bamboo dry powder according to the mass ratio of 1:12, uniformly mixing, and pulping to obtain fragrant and glutinous bamboo pulp;
s2, compounding 45% ethanol, sodium citrate and xylanase according to a mass ratio of 8:1:2 to prepare a leaching agent, adding the leaching agent into the fragrant and glutinous bamboo pulp according to a mass ratio of 1:50, stirring and mixing uniformly at room temperature, performing ultrasonic extraction for 10min under the conditions of a frequency of 100kHz and a temperature of 35 ℃, continuing to increase the temperature to 50 ℃, performing ultrasonic extraction for 10min, extracting effective components in the fragrant and glutinous bamboo pulp, and filtering to obtain a fragrant and glutinous bamboo extracting solution;
s3, selecting broken rice in the rice processing process as a raw material, cleaning the broken rice, removing impurities, drying, mixing the dried broken rice and walnut kernels according to the mass ratio of 10:1, and crushing to obtain rice flour;
s4, adding the fragrant and glutinous bamboo extract into the rice flour according to the mass ratio of 1:75, stirring and mixing uniformly at the temperature of 58 ℃, and then performing spray drying, granulation and polishing to obtain the bamboo-flavored health-care rice. Tests show that the extraction rate of the effective components of the fragrant waxy bamboo is up to 96.9%.
Comparative example 1
The invention provides a processing method of health-care rice with bamboo flavor, which comprises the following steps:
s1, cleaning and drying fresh and tender fragrant and glutinous bamboo, crushing the dried fragrant and glutinous bamboo to obtain fragrant and glutinous bamboo dry powder, adding water into the fragrant and glutinous bamboo dry powder according to a mass ratio of 1:7, uniformly mixing, and pulping to obtain fragrant and glutinous bamboo pulp;
s2, compounding 45% ethanol and pectinase according to a mass ratio of 5:1 to prepare a leaching agent, adding the leaching agent into the fragrant and glutinous bamboo serous fluid according to a mass ratio of 1:30, uniformly stirring and mixing at room temperature, performing ultrasonic extraction for 5min under the conditions of a frequency of 80kHz and a temperature of 25 ℃, continuously raising the temperature to 40 ℃, performing ultrasonic extraction for 5min, extracting effective components in the fragrant and glutinous bamboo serous fluid, and filtering to obtain a fragrant and glutinous bamboo extracting solution;
s3, selecting broken rice in the rice processing process as a raw material, cleaning the broken rice, removing impurities, drying, mixing the dried broken rice and walnut kernels according to a mass ratio of 7:1, and crushing to obtain rice flour;
s4, adding the fragrant and glutinous bamboo extract into the rice flour according to the mass ratio of 1:55, stirring and mixing uniformly at the temperature of 38 ℃, and then performing spray drying, granulation and polishing to obtain the bamboo-flavored health-care rice. Tests show that the extraction rate of the effective components of the fragrant waxy bamboo is as high as 85.1%.

s1, cleaning and drying fresh and tender fragrant and glutinous bamboo, crushing the dried fragrant and glutinous bamboo to obtain fragrant and glutinous bamboo dry powder, adding water into the fragrant and glutinous bamboo dry powder according to a mass ratio of 1:7, uniformly mixing, and pulping to obtain fragrant and glutinous bamboo pulp;
s2, compounding 45% ethanol and sodium citrate according to a mass ratio of 5:2 to prepare a leaching agent, adding the leaching agent into the fragrant and glutinous bamboo serous fluid according to a mass ratio of 1:30, stirring and mixing uniformly at room temperature, performing ultrasonic extraction for 5min under the conditions of a frequency of 80kHz and a temperature of 25 ℃, continuing to increase the temperature to 40 ℃, performing ultrasonic extraction for 5min, extracting effective components in the fragrant and glutinous bamboo serous fluid, and filtering to obtain a fragrant and glutinous bamboo extracting solution;

s2, adding 45% ethanol into the fragrant and glutinous bamboo serous fluid according to the mass ratio of 1:30, stirring and mixing uniformly at room temperature, performing ultrasonic extraction for 5min under the conditions of the frequency of 80kHz and the temperature of 25 ℃, continuing to increase the temperature to 40 ℃, performing ultrasonic extraction for 5min, extracting effective components in the fragrant and glutinous bamboo serous fluid, and filtering to obtain a fragrant and glutinous bamboo extracting solution;
s3, selecting broken rice in the rice processing process as a raw material, cleaning the broken rice, removing impurities, drying, mixing the dried broken rice and walnut kernels according to a mass ratio of 7:1, and crushing to obtain rice flour;
s4, adding the fragrant and glutinous bamboo extract into the rice flour according to the mass ratio of 1:55, stirring and mixing uniformly at the temperature of 38 ℃, and then performing spray drying, granulation and polishing to obtain the bamboo-flavored health-care rice. Tests show that the extraction rate of the effective components of the fragrant waxy bamboo is up to 77.9%.
The data of the first example and the first to third comparative examples show that the sodium citrate and the pectinase are used together in the leaching agent prepared by the invention, so that the synergistic effect is achieved, and the extraction rate of the effective components of the fragrant waxy bamboo can be obviously improved.

Claims (7)
1. A processing method of health care rice with bamboo flavor is characterized by comprising the following steps:
s1, cleaning and drying fresh and tender fragrant and glutinous bamboo, crushing the dried fragrant and glutinous bamboo to obtain fragrant and glutinous bamboo dry powder, adding water into the fragrant and glutinous bamboo dry powder, uniformly mixing, and pulping to obtain fragrant and glutinous bamboo pulp;
s2, adding a leaching agent into the fragrant and glutinous bamboo serous fluid according to the mass ratio of 1:30-50, stirring and mixing uniformly at room temperature, extracting effective components in the fragrant and glutinous bamboo serous fluid by adopting an ultrasonic extraction process, and filtering to obtain a fragrant and glutinous bamboo extracting solution;
s3, selecting broken rice in the rice processing process as a raw material, cleaning the broken rice, removing impurities, drying, mixing the dried broken rice with walnut kernels, and crushing to obtain rice flour;
s4, adding the fragrant and glutinous bamboo extract into the rice flour according to the mass ratio of 1:55-75, stirring and mixing uniformly at the temperature of 38-58 ℃, and then performing spray drying, granulation and polishing to obtain the bamboo-flavored health-care rice.
2. The processing method of the bamboo-flavored health-care rice as claimed in claim 1, wherein the mass ratio of the dry powder of the fragrant waxy bamboo to the water in the step S1 is 1: 7-12.
3. The processing method of bamboo-flavored health-care rice as claimed in claim 1, wherein the leaching agent in the step S2 is prepared by compounding ethanol, sodium citrate and enzyme in a mass ratio of 5-8:1-2: 1-2.
4. The processing method of health rice with bamboo flavor according to claim 3, wherein the concentration of ethanol is 45%.
5. The processing method of health rice with bamboo flavor according to claim 3, wherein the enzyme is one of protease, amylase, pectinase, cellulase, xylanase or beta-glucanase.
6. The processing method of health rice with bamboo flavor according to claim 1, wherein the ultrasonic extraction conditions in the step S2 are as follows: under the conditions that the frequency is 80-100 kHz and the temperature is 25-35 ℃, ultrasonic extraction is carried out for 5-10 min, then the temperature is continuously raised to 40-50 ℃, and ultrasonic extraction is carried out for 5-10 min.
7. The processing method of the bamboo-flavored health-care rice as claimed in claim 1, wherein the mass ratio of the broken rice to the walnut kernels in the step S3 is 7-10: 1.
