Preferably, as shown in FIG. 3, the axis of the screw shaft is offset upward from the geometric center of the extrusion propulsion chamber to form an eccentric arrangement, so that the maximum clearance is formed between the rotation path of the spiral top surface and the lower side of the extrusion chamber, while the inner cavity of the die holder, i.e., the geometric center of the extrusion surface cavity, is concentric with the axis of the screw shaft. Therefore, the inner cavity of the die head bracket is deviated upwards relative to the outer side wall of the die head bracket, so that the wall thickness of the lower side of the die head bracket is larger than that of the upper side of the die head bracket, and the uniform strength is kept between the lower side of the die head bracket provided with the die head and the closed upper side of the die head bracket.
Alternatively, as shown in fig. 4, the axis of the screw shaft may be offset downward from the geometric center of the extrusion propulsion chamber to form an eccentric arrangement, so that a maximum clearance is formed between the rotation path of the screw top surface and the upper side of the extrusion chamber.
Because the dough extruding cylinder is integrally arranged at the lower part of the stirring cup, and a dough inlet hole is formed at the joint of the upper side of the dough extruding cylinder and the bottom wall of the stirring cup, the well-stirred dough can enter the dough extruding cylinder through the dough inlet hole. Therefore, when the axis of the screw shaft is offset downwards relative to the geometric center of the extrusion propulsion cavity to form an eccentric arrangement, a larger gap can be formed between the screw and the dough inlet hole, so that the well-stirred dough enters the dough extruding cylinder through the dough inlet hole and is pushed forwards by the screw.
Particularly, the outer side walls of the connecting sections of the die head bracket and the dough extruding cylinder are downwards deviated relative to the extruding propulsion cavity, and the wall thickness of the lower side of the connecting section of the dough extruding cylinder is increased, so that a corresponding proximity sensor can be arranged on the lower side of the connecting section, and whether the die head assembly is installed in place or not can be detected. When a user forgets to install the die head assembly, the proximity sensor can send a signal to a controller of the wheaten food machine, so that the motor can be prevented from being started, and the user is prevented from being injured.
Preferably, the axis of the screw shaft is concentrically arranged relative to the geometric center of the extrusion face cavity, and at the moment, the outer side wall of the die head bracket and the outer side wall of the extrusion face barrel are concentric, so that the extrusion face cavity and the outer side wall of the die head bracket are eccentric, the die head bracket generates a wall thickness difference, and the strength of the closed upper side of the die head bracket and the strength of the lower side of the die head are more uniform.
Of course, the axis of the screw shaft can be eccentrically arranged relative to the geometric center of the extrusion face cavity, and the geometric centers of the extrusion face cavity and the extrusion propulsion cavity are kept consistent. That is, the inner and outer sidewalls of the die holder are kept concentric to facilitate molding of the die holder and mounting of the die assembly to the barrel.
Further, at least a portion of the chamber is circular, or approximately circular, in cross-section. It should be noted that when the difference between the major and minor axes of the ellipse is very small (for example, the minor axis is greater than 95% of the major axis), or the cross section of the extrusion propulsion chamber has a shape of at least regular dodecagon, we can consider the cross section to be approximately circular. Because the screw rod and the extrusion propulsion cavity are eccentrically arranged, the maximum gap and the minimum gap are naturally formed between the screw rod and the extrusion propulsion cavity, thereby being beneficial to the gradual change of the pressure of the dough, and being convenient for the forming of the extrusion propulsion cavity and the uniform wall thickness.
Of course, at least part of the extrusion propulsion chamber may also be oval in cross-section, with its long axis arranged vertically. The axis of the screw rod can be positioned on the long axis of the ellipse and close to one of the focus positions, and the maximum gap and the minimum gap can be formed between the screw rod and the extrusion propulsion cavity at the moment, so that the gradual change of pressure of dough is facilitated, and the maximum gap between the screw rod and the extrusion propulsion cavity can be conveniently controlled on the premise of ensuring the minimum gap size between the screw rod and the extrusion propulsion cavity.
