a pot body, an interlayer is arranged on the pot body, a sealing cover is buckled on the pot body, an exhaust pipe and a pressure pipe which are communicated with the inside of the pot body are arranged on the sealing cover, a liquid inlet pipe which is arranged at the upper end of the pot body and a liquid discharge pipe which is arranged at the lower end of the pot body are also arranged on the pot body, wherein,
the interlayer is communicated with an air inlet pipe and a liquid outlet pipe which are arranged on the pot body, and the liquid inlet pipe and the liquid outlet pipe are both communicated with the inside of the pot body;
the basket is used for containing oranges, the upper end of the basket is open, and the opening is in threaded connection with a pore plate;
the air exhaust pipe and the pressure pipe are respectively used for vacuumizing and breaking vacuum of the pot body;
the liquid inlet pipe and the liquid outlet pipe are respectively used for leading in and leading out soaking water into the pot body;
the air inlet pipe and the liquid outlet pipe are respectively used for leading in water vapor to the interlayer and leading out condensed water generated after the water vapor is condensed.

An evacuated pan for assisting orange peeling as claimed in claim 1, wherein a spiral tube is provided in the pan body to be closely attached to the inner wall thereof, and the lower end of the spiral tube is communicated with the inlet duct and the upper end thereof is communicated with the interlayer.

The evacuated pan for assisting orange peeling as claimed in claim 1, wherein a positioning table is arranged at the bottom in the pan body, a positioning column is vertically arranged on the positioning table, and a through hole for the positioning column to pass through is arranged at the bottom of the hanging basket;
a plurality of stop rods surrounding the periphery of the through hole are vertically arranged at the bottom in the hanging basket, and the upper ends of the stop rods are bent to gather towards the center of the through hole;
the positioning column penetrates into the hanging basket and is located below the bent position of the stop lever.
4. The evacuated pan for assisting orange peeling as claimed in claim 3, wherein the positioning table is hollow and has a plurality of filtering holes, and the drain pipe is arranged at the bottom of the pan body and is communicated with the hollow part of the positioning table.
5. An evacuated pan for assisting orange peeling as claimed in claim 1, wherein the upper panel surface of the perforated panel is fixedly connected with a knob located at the central position thereof.

The evacuated pan for assisting orange peeling as claimed in claim 1, wherein a plurality of fastening claws are fixedly connected to the outer wall of the lower end of the sealing cover, and an annular groove for the fastening claws to be clamped is formed in the outer wall of the upper end of the pan body; wherein,
the buckling claw comprises an elastic sheet, the upper end of the elastic sheet is connected with the sealing cover, and one side of the lower end of the elastic sheet close to the pot body is fixedly connected with a rubber clamping head.
7. An evacuated pan for assisting orange peeling as claimed in claim 1, wherein the liquid inlet pipe is located above the interlayer;
the air inlet pipe is positioned above the liquid discharge pipe, and the liquid discharge pipe is arranged at the bottom of the interlayer.

The evacuated pan for assisting orange peeling as claimed in claim 3, wherein the stop lever comprises a vertical threaded section and a bent elastic section, a threaded hole in threaded connection with the threaded section is formed at the bottom of the basket, and the outer diameter of the elastic section is smaller than the inner diameter of the threaded hole.
9. A process for peeling oranges using the evacuated kettle as provided in claim 1, comprising the steps of:
putting the hanging basket into the pot body, putting the oranges with the heads and tails removed in advance into the hanging basket, buckling the sealing cover, and then vacuumizing;
introducing soaking water to submerge the oranges in the hanging basket, and then vacuumizing again;
introducing steam to heat the soaking water in the pot body, keeping the temperature of the soaking water at 45-50 ℃ and maintaining for 2-3 h;
cutting off the introduced water vapor, introducing cooling water through an air inlet pipe to reduce the temperature of the soaking water to 12-15 ℃, then breaking vacuum to balance the pressure in the pot body with the outside, and leading out the soaking water in the pot body through a liquid discharge pipe;
then pressurizing the pot body through the exhaust pipe, maintaining the pressure for 10-15 min, and reducing the pressure in the pot body to be balanced with the outside through the pressure pipe;
and opening the sealing cover, taking out the hanging basket, unloading the oranges, conveying the oranges into a horizontal roller, performing rolling treatment for 5-8 min under the condition of 20-30 r/min, and guiding out and separating the orange peel and the orange flesh.
10. A process for peeling oranges according to claim 9 wherein the temperature of the steepwater is 30 to 35 ℃ and an enzyme preparation is mixed therein.
