本发明涉及食品技术领域,具体为一种含有冷冻魔芋和御面的擀面皮。
背景技术
现在市场上擀面皮配方单一,调制方法简单,口味保守,没有创新性突破。现有技术是:传统工艺,和面,洗面,煮面筋,洗面桨蒸擀面皮。调制方法是:绿豆芽,黄瓜丝,面筋,擀面皮,大料水,辣子油,混合调配,缺乏口味创新。
发明内容
针对上述存在的技术不足,本发明的目的是提供一种含有冷冻魔芋和御面的擀面皮,口味创新性高,口感独特味道好。
为解决上述技术问题,本发明采用如下技术方案:
一种含有冷冻魔芋和御面的擀面皮,其特征在于,由以下重量份的原料制备而成:
擀面皮50-70份,御面5-15份,冷冻魔芋10-20份,配菜10-20份,调料2-5份。
优选地,所述配菜由以下重量份的原料制备而成:
绿豆芽3-5份,黄瓜丝2-5份,面筋2-10份。
优选地,所述调料由以下重量份的原料制备而成:
大料水10-30份、大蒜水5-10份、辣子油3-7份、盐3-5份、醋5-9份、糖2-5份。
优选地,所述大料水由香料包熬制而成。

一种含有冷冻魔芋和御面的擀面皮,由以下重量份的原料制备而成:
擀面皮50-70份,御面5-15份,冷冻魔芋10-20份,配菜10-20份,调料2-5份,将擀面皮御面冷冻魔芋配菜和调料混合搅拌均匀,即可食用。
进一步的,配菜由以下重量份的原料制备而成:
绿豆芽3-5份,黄瓜丝2-5份,面筋2-10份。
进一步的,调料由以下重量份的原料制备而成:
大料水10-30份、大蒜水5-10份、辣子油3-7份、盐3-5份、醋5-9份、糖2-5份。
进一步的,大料水由香料包熬制而成,香料包选用市面常见的天然香料。
面筋的制作方法:
将面粉和成面团,加水换水清洗15次左右,直到洗面水基本清澈,洗剩下的就是面筋,面筋加清水煮20分钟,即制成面筋。
擀面皮的制作方法:
将面粉和成面团,加水换水清洗15次左右,直到洗面水基本清澈,洗面水先过滤后沉淀,沉淀5-7小时,倒掉表面清汤水,将面浆调成稀糊状,搭上蒸笼,摊薄在笼屉上高温蒸5分钟出笼,擀面皮制成。
御面的制作方法:
将面粉和成面团,加清水清洗,换水清洗,清洗15次左右,洗剩下的就是面筋,上锅煮熟面筋制成;洗面水过滤沉淀5-7小时,倒掉表面清汤水,保留面桨,搅拌成糊状,将糊状的面浆倒入不锈钢盆里,将不锈钢盆放在沸水锅中,隔水加热煮至7成熟,边煮边搅拌,避免糊锅底。将7成熟的面糊糊用工具和成条状或者其它形状,搓揉成型后再次上锅蒸20分钟,出锅,御面制成。
冷冻魔芋的制作方法:
用魔芋粉加水熬制成稀糊状,冷却后结块有弹性,将魔芋豆腐切成薄片放入冰柜冷冻室零下15℃冷冻72小时,食用前在沸水锅里煮5分钟捞起来备用。
实施例1
一种含有冷冻魔芋和御面的擀面皮,由以下重量份的原料制备而成:
擀面皮60份,御面10份,冷冻魔芋15份,配菜15份,调料3份;其中配菜为绿豆芽5份,黄瓜丝3份,面筋5份;调料为大料水15份、大蒜水8份、辣子油6份、盐4份、醋7份、糖3份;将擀面皮御面冷冻魔芋配菜和调料混合搅拌均匀,即可食用。
实施例2
一种含有冷冻魔芋和御面的擀面皮,由以下重量份的原料制备而成:
擀面皮55份,御面13份,冷冻魔芋13份,配菜17份,调料4份;其中配菜为绿豆芽3份,黄瓜丝2份,面筋5份;调料为大料水20份、大蒜水7份、辣子油4份、盐5份、醋6份、糖3份;将擀面皮御面冷冻魔芋配菜和调料混合搅拌均匀,即可食用。
实施例3
一种含有冷冻魔芋和御面的擀面皮,由以下重量份的原料制备而成:
擀面皮65份,御面14份,冷冻魔芋17份,配菜14份,调料4份;其中配菜为绿豆芽5份,黄瓜丝4份,面筋8份;调料为大料水23份、大蒜水8份、辣子油6份、盐5份、醋7份、糖4份;将擀面皮御面冷冻魔芋配菜和调料混合搅拌均匀,即可食用。
本发明的擀面皮,口味创新性高,口感独特味道好。
