Abstract
The invention discloses a preparation method of plateau rapeseed oil suitable for children to eat, which comprises the following steps: taking plateau rapeseed oil as a raw material, and adding 10-40 wt% of linseed oil; adding the prepared oil into compound lipase and water, carrying out enzymolysis reaction, and then carrying out purification and separation by three-stage molecular distillation; then adding 0.5-5 wt% of lysophospholipid DHA and 0.01-1 wt% of rosemary serving as a natural antioxidant, and uniformly stirring to obtain the rosemary extract. The rapeseed oil prepared by the method has the advantages that the flaxseed oil is added to adjust the fat proportion, so that the fatty acid of the rapeseed oil is more balanced; the fat is partially hydrolyzed by lipase, so that partial triglyceride is converted into diglyceride, the accumulation in the body is not generated when children eat the fat excessively, the problem of child obesity caused by the fat problem is avoided, meanwhile, the added lysophospholipid DHA plays an intelligence-improving role, and the lysophospholipid DHA is easier to be absorbed and utilized by the human body than ethyl ester type and triglyceride type DHA.
Description
Technical Field
The invention belongs to the technical field of edible oil processing, and particularly relates to a preparation method of plateau rapeseed oil which is suitable for children to eat and has health-care functions of balancing fatty acid, strengthening brain development and the like for the children.
Background
Rapeseed oil, abbreviated as "rape oil", is mainly taken from the seeds of cabbage-type rape and cabbage-type rape. The rapeseed oil has the unsaturated fatty acid content of more than 85 percent, contains rich oleic acid, linoleic acid, linolenic acid and phospholipid, has the digestibility of 99 percent to human bodies, and is rich in bioactive components such as vitamin E, polyphenol, squalene, sterol and the like. The unsaturated fatty acid has effects in regulating blood lipid, clearing away thrombi, regulating immunity, maintaining retina, nourishing brain, improving arthritic condition, and relieving pain.
Trans-fatty acid is a general term of all unsaturated fatty acids containing trans-double bonds, and can prevent grease from deteriorating, prolong the shelf life and improve the stability of food taste, but nutritional experts consider that trans-fatty acid is harmful to human health and mainly shows the defects of thrombosis, influence on development and fertility, reduction in memory, easiness in fatness and induction of coronary heart disease, so that the edible quality of rapeseed oil can be improved by extracting trans-fatty acid from the rapeseed oil.
At present, with the improvement of economic level, the health care consciousness of people is higher and higher, the nutrition structure of the traditional rapeseed oil is not rich enough, and the rapeseed oil can not provide sufficient nutrients for people due to single nutrient components after being eaten for a long time, has single effect and is particularly not suitable for children to eat for a long time. In view of the fact that rape oil is also the main edible oil in part of China, the invention provides plateau rape oil which has balanced nutrition and is suitable for children to eat.

The linseed oil contains α -linolenic acid 53%, α -linolenic acid is essential fatty acid for human body and can be converted into eicosapentaenoic acid and docosahexaenoic acid in human body, α -linolenic acid has the functions of resisting tumor, resisting thrombus, reducing blood fat, regulating vegetative nerve and the like, and the rosemary as a natural antioxidant has the functions of preventing oxidative rancidity of grease, resisting oxidation to human body, and preventing and treating xerophthalmia, nyctalopia, dermatitis and the like.
The plateau rapeseed oil prepared by the method has the advantages that the flaxseed oil is added to adjust the fat proportion, so that the fatty acid is more balanced; the fat is partially hydrolyzed by lipase, so that partial triglyceride is converted into diglyceride, and the fat is prevented from being accumulated in the body when children eat the fat excessively, thereby avoiding the problem of obesity of the children caused by the fat problem. Meanwhile, the added lysophospholipid DHA has the effect of improving intelligence, and the lysophospholipid DHA is easier to be absorbed and utilized by human bodies than ethyl ester DHA and triglyceride DHA.
