Abstract

The invention discloses meat product production equipment and a production process thereof. The meat product production equipment comprises a meat conveying mechanism and a meat beating mechanism. The meat conveying mechanism comprises a conveying base and a conveying assembly line arranged on the conveying base; the conveying base sequentially forms a meat conveying area, a meat beating area and a meat pulp output area along the conveying direction of the conveying assembly line; meat beats mechanism includes: the hammering support seat, the rotating shaft, the fixing shaft and the hammering device. Background
Meatballs generally refer to spherical food products made from shredded meat.
The traditional method is to cut meat into small pieces, then place the small pieces of meat on a chopping board, and then repeatedly beat the meat on the chopping board by utilizing a manually-matched meat ball knife, thereby obtaining the meat paste with very high flexibility. As shown in fig. 2, the meat conveying mechanism 20 includes a conveying base 100 and a conveying line 200 mounted on the conveying base 100. In the conveying direction of conveying line 200, conveying base 100 forms, in sequence, a meat conveying region 110, a meat hammering region 120, and a meat slurry delivery region 130. Further, the meat conveying mechanism 20 further includes a line driving device (not shown) which is drivingly connected to the conveying line 200, and in this embodiment, the line driving device is a motor-belt driving structure.
As shown in fig. 2, a first blocking wall 121 and a second blocking wall 122 are disposed at the meat hammering region 120 of the conveying base 100, and the first blocking wall 121 and the second blocking wall 122 are respectively disposed at both sides of the conveying line 200.
As shown in fig. 3, the meat hammering mechanism 30 includes: the hammering support seat 300, the rotating shaft 400, the fixing shaft 500 and the hammering device 600. The rotating shaft 400 is rotatably installed on the hammering support base 300, and the fixing shaft 500 is fixedly installed on the hammering support base 300.
Referring to fig. 3, 4 and 5, the hammering device 600 includes: gear 610, bearing 620, shell fragment 630, beat stick 640. The gear 610 is connected with the rotating shaft 400 in a key mode, the inner ring of the bearing 620 is connected with the fixed shaft 500 in a key mode, the elastic sheet 630 is fixed on the outer ring of the bearing 620, two ends of the elastic sheet 630 are bent to form a forward hammering end 631 and a reverse separation end 632, the forward hammering end 631 and the reverse separation end 632 of the elastic sheet 630 alternately abut against convex teeth of the gear 610, the hammering rod 640 is provided with a fixed end 641 and a hammering end 642, the fixed end 641 of the hammering rod 640 is fixed on the outer ring of the bearing 620, and the hammering end 642 of the hammering rod 640 extends to the meat hammering area 120 of the conveying base 100 in the conveying pipeline 200.
As shown in FIG. 3, meat hammering mechanism 30 further comprises a hammer driving means 700 for driving rotation of rotary shaft 400. In this embodiment, hammering drive 700 is a motor-belt drive configuration.
As shown in fig. 2, the first blocking wall 121 is provided with an avoiding groove 123, and the hammering rod 640 is disposed through the avoiding groove 123.
The operation of the meat product producing apparatus 10 of the above-described structure will be explained below:

when the pork reaches the meat beating region 120, the conveying pipeline 200 stops conveying, the pork temporarily stays in the meat beating region 120, and the meat beating mechanism 30 beats the pork; it should be noted that, when necessary, the conveying pipeline 200 can reciprocate back and forth within a certain distance range, so that the pork in the meat beating region 120 also reciprocates correspondingly, and the meat beating mechanism 30 can be better matched to beat the pork, so that the pork can be beaten more uniformly;
the beating driving device 700 drives the rotating shaft 400 to rotate, the rotating shaft 400 further drives the gear 610 thereon to rotate, the rotating gear 610 further drives the bearing 620 on the fixed shaft 500 to make reciprocating rotation through the elastic sheet 630, and then the beating rod 640 fixed on the bearing 620 also makes corresponding reciprocating rotation, so that the beating end 642 of the beating rod 640 performs beating operation on the pork in the meat beating area 120;
when the pork in the meat beating area 120 is beaten to a certain degree, the small pieces of pork become meat slurry;
after the conversion of the meat pulp of the small pork blocks is finished, the meat pulp is conveyed from the meat beating area 120 to the meat pulp output area 130 through the conveying pipeline 200, and at the moment, the meat pulp in the meat pulp output area 130 can be scooped up and placed in a vessel through an iron shovel in a manual operation mode;
the pork cut into small blocks is uninterruptedly put into the meat conveying area 110, conveyed by the conveying pipeline 200, sequentially passes through the meat beating area 120 and the meat pulp output area 130, is beaten by matching with the meat beating mechanism 30, is output in the meat pulp output area 130 to obtain continuous meat pulp, and greatly improves the production efficiency on the basis of insisting on 'ancient method' manufacturing.
Here, the operation principle of the meat hammering mechanism 30 will be described (as shown in fig. 4 and 5):
the rotating shaft 400 drives the gear 610 thereon to rotate, and the rotating gear 610 can impact the elastic sheet 630;
as shown in fig. 4, when the forward striking end 631 of the elastic sheet 630 touches the convex teeth of the gear 610, the elastic sheet 630 drives the bearing 620 to rotate forward, so that the striking end 642 of the striking rod 640 on the bearing 620 strikes the pork in the meat striking area 120;
as shown in fig. 5, when the forward striking end 631 of the elastic piece 630 disengages from the teeth of the gear 610, the backward disengaging end 632 of the elastic piece 630 immediately touches the teeth of the gear 610, the elastic piece 630 drives the bearing 620 to rotate backward, and the striking end 642 of the striking rod 640 on the bearing 620 temporarily leaves the pork in the meat striking area 120;
it can be seen that the forward hammering end 631 and the backward disengagement end 632 of the elastic sheet 630 alternately abut against the teeth of the gear 610, the bearing 620 rotates clockwise and counterclockwise alternately, and the hammering rod 640 correspondingly swings in a reciprocating manner, so that the hammering end 642 of the hammering rod 640 hammers the pork in the meat hammering region 120.
It should be noted that, in the present invention, the elastic sheet 630 is adopted, the elastic sheet 630 has better elasticity, the elastic sheet 630 can be matched with the convex teeth of the gear 610 with better compatibility, and the elastic sheet 630 can also apply elastic force to the beating rod 640 through the bearing 620, so that the beating rod 640 can elastically beat pork.
In the process of beating the pork by the beating rod 640, the pork is bounced, and in the present invention, the first blocking wall 121 and the second blocking wall 122 are particularly disposed, so that the bounced meat pieces can be well prevented from being splashed out. The avoidance groove 123 is formed in the first blocking wall 121 to provide a space for the hammering rod 640 to escape.
