selecting fresh, disease-free and tender Chinese toon sprouts which are 10-15 cm long and are not lignified as initial raw materials, washing pollutants on the surfaces of the Chinese toon sprouts with clear water, and not excessively kneading the Chinese toon sprouts during cleaning so as to avoid tissue damage; using sodium bicarbonate with the mass fraction of 0.2% as a blanching liquid to blanch clean Chinese toon sprouts for 30s to complete the de-enzyming treatment of the Chinese toon leaves; immediately taking out the Chinese toon sprouts after blanching treatment, putting the Chinese toon sprouts into a sodium bicarbonate solution for cooling, and meanwhile, adopting a plurality of containers for containing cooling liquid for accelerating cooling to carry out graded cooling; then, controlling the dry moisture of the cooled Chinese toon sprouts, putting the cooled Chinese toon sprouts into a sterilized plastic bag according to the filling amount of 0.5 kg/bag, and placing, wherein the heads and the tails of the Chinese toon sprouts are arranged orderly, and the openings of the bags are folded; then placing the packaged toona sinensis into a freezer at the temperature of minus 80 ℃, quickly freezing for at least 24 hours, and transferring the quickly frozen bagged toona sinensis buds to the environment at the temperature of minus 18 ℃ for low-temperature storage for later use; taking base wine with the alcoholic strength of 40-60 degrees (v/v) as raw wine for later use;
b. freeze drying and crushing:
taking out the Chinese toon sprouts preserved at the low temperature in the step a from the bag, tiling until the tiling thickness is not more than 5cm, and then putting the tiled Chinese toon sprouts into a freezing vacuum drying machine at the temperature of between 50 ℃ below zero and 40 ℃ below zero for vacuum drying treatment to obtain dried Chinese toon sprouts; then taking out the dried Chinese toon sprouts, putting the dried Chinese toon sprouts into a grinder for grinding, sieving the ground Chinese toon sprouts through a 100-mesh sieve, bagging the Chinese toon sprout powder, and storing the bagged Chinese toon sprout powder for later use;
c. extracting the active ingredients of the Chinese toon:
transferring the toona sinensis powder prepared in the step b into an extraction device, adding an ethanol water solution with the concentration of 70% (v/v) into the toona sinensis powder to obtain a mixed solution, putting the mixed solution into an ultrasonic instrument, performing ultrasonic-assisted extraction, filtering, taking a supernatant, extracting for at least three times, performing extraction treatment for at least 0.5h each time, and combining the supernatants to obtain an active ingredient solution of the toona sinensis;
d. concentration and freeze drying:
c, concentrating the toona sinensis active ingredient solution prepared in the step c at 46 ℃ by using a rotary evaporator for at least 1h to the required concentration, and freezing and storing; freezing at-80 deg.C for 24 hr, vacuum freeze drying to obtain dry powder of the ethanol extract of Toona sinensis, and sealing for storage;
e. preparing, filtering, post-treating and packaging the cedrela sinensis wine:
adding the dry powder of the toona sinensis alcohol extract prepared in the step d into base liquor according to the mixing proportion of adding not less than 0.3g of dry powder of the toona sinensis alcohol extract into 500ml of raw liquor to obtain toona sinensis liquor, filtering the toona sinensis liquor by adopting a vacuum filtering method, carrying out high-pressure sterilization, and carrying out glass bottle filling on the toona sinensis liquor to obtain the finished product of the toona sinensis liquor.

The preparation method of the toona sinensis baijiu according to claim 1, which is characterized by comprising the following steps: in the step e, the cedrela sinensis wine is prepared according to the mixing proportion of 0.5g of dry powder of the cedrela sinensis alcohol extract added into 500ml of raw material wine, and the material-liquid ratio is 0.5g of dry powder of the alcohol extract: 500ml of Chinese toon white spirit.
