The invention relates to high dietary fiber flaxseed powder with good reconstitution property and a preparation method thereof, belonging to the technical field of preparation of flaxseed powder. The preparation method comprises the following steps: degumming: carrying out hot water extraction, acid treatment, water washing and freeze drying on the raw material seeds; degreasing: degreasing the degummed product by adopting a squeezing method; crushing: pulverizing and sieving the degreased product; and (3) sterilization: sterilizing the crushed product under microwave and cooling. The traditional preparation method of the protein powder is improved, so that the protein powder is convenient to eat and implement and popularize while meeting the nutritional requirements.

The invention relates to high dietary fiber flaxseed powder with good reconstitution property and a preparation method thereof, belonging to the technical field of preparation of flaxseed powder.
Background
With the improvement of living and consumption level of people, domestic functional and health food consumption groups are gradually increased, and the demand of protein powder is increased, such as linseed powder, chia seed powder and other cereal protein powder. Flaxseed contains 37-45% of oil and fat, has about 28% of dietary fiber, contains insoluble dietary fiber and soluble dietary fiber, has 75-800 times higher SDG content than other grains, fruits and vegetables, contains 6.1-13.3mg/g of lignan (SDG) in non-defatted flaxseed, contains 11.7-24.1mg/g of SDG in defatted flaxseed, is widely applied to foreign food development, can be used as a nutritional additive for certain foods, is applied to foods such as baked grain products, fiber rods, salad ingredients, bread, muffins, pasta and the like, and is widely applied to the food fields such as baking, dried pasta and the like. The consumers are advocated to eat the protein powder abroad, because the protein powder has higher utilization rate than the complete whole-seed nutrient substance, and compared with the seeds, the protein powder is easier to digest and utilize, and as a functional food, the flaxseed has become a necessity of common people, such as flaxseed bread and the like. The invention provides a preparation method of high dietary fiber flaxseed powder with good reconstitution property, which comprises the following steps: degumming: carrying out hot water extraction, acid treatment, water washing and freeze drying on the raw material seeds; degreasing: degreasing the degummed product by adopting a squeezing method; crushing: pulverizing and sieving the degreased product; and (3) sterilization: sterilizing the crushed product under microwave and cooling.
The invention preferably selects the material-liquid ratio of the hot water leaching as 1g/6-10mL, soaks for 0.25-1h at 55-95 ℃, repeats for 2-4 times.
The invention preferably uses food-grade citric acid with pH of 2-3 for acid treatment, the material-liquid ratio is 1g/4-5mL, and the treatment time is 20-40 min.
The invention preferably selects the material-liquid ratio of the water washing as 1g/4-5mL, stirs for 1-5min, repeats for 2-5 times.
The freeze drying is preferably carried out at the temperature of minus 30 to minus 20 ℃ for 5 to 12 hours.
In the present invention, the pressing temperature is preferably 100 ℃ or lower.
The invention is preferably that the sieve is sieved by a sieve with 30 to 130 meshes.

The invention can achieve the effect of flax seed degumming without shelling, fully retains the dietary fiber with rich raw materials, and the content of the dietary fiber in the final product can reach more than 25%.
The invention effectively improves the mixing property of the protein powder, ensures the product safety, and has simple and convenient preparation method, thus being beneficial to popularization.
The protein powder prepared by the invention has various eating methods such as brewing with boiled water, baking and the like, and the raw materials are fully utilized and simultaneously the nutrition intake of people is enriched.

The following non-limiting examples are presented to enable those of ordinary skill in the art to more fully understand the present invention and are not intended to limit the invention in any way.
Example 1
A preparation method of high dietary fiber flaxseed powder with good reconstitution property comprises the following steps:
screening: selecting raw material seeds from which impurities and deteriorated seeds are removed;
degumming: adding 90 ℃ water according to the material-liquid ratio of 1g/6mL to soak for 0.25h, repeating the hot water leaching for 2 times, then adding food-grade citric acid with pH 2 according to the material-liquid ratio of 1g/4mL to treat for 20min to carry out acid treatment so as to remove glue in the raw material seeds, then adding water according to the material-liquid ratio of 1g/4mL to stir for 5min, repeating the water washing for 3 times to clean acid remained in the seeds so as to prevent protein in the seeds from being damaged, finally carrying out freeze drying to remove the remained water, and carrying out freeze drying for 8h at the temperature of minus 30 ℃;
degreasing: degreasing the degummed product by adopting a squeezing method, wherein the squeezing temperature is below 100 ℃;
crushing: crushing the degreased product and sieving the crushed product with a 100-mesh sieve;
and (3) sterilization: sterilizing the pulverized product under microwave for 3min under 4kW, and covering the pulverized product with a thickness of 1 cm.
Example 2
A preparation method of high dietary fiber flaxseed powder with good reconstitution property comprises the following steps:
screening: selecting raw material seeds from which impurities and deteriorated seeds are removed;
degumming: adding 75 ℃ water according to the material-liquid ratio of 1g/8mL for soaking for 0.5h, repeating the hot water leaching for 3 times, then adding food-grade citric acid with the pH value of 2.5 according to the material-liquid ratio of 1g/4mL for treating for 30min for acid treatment to remove the glue in the raw material seeds, then adding water according to the material-liquid ratio of 1g/5mL for stirring for 4min, repeating the water washing for 4 times, cleaning the residual acid in the seeds to prevent the protein in the seeds from being damaged, finally performing freeze drying to remove the residual water, and drying for 10h at the temperature of minus 25 ℃ under the freeze-drying condition;
degreasing: degreasing the degummed product by adopting a squeezing method, wherein the squeezing temperature is below 100 ℃;
crushing: crushing the degreased product and sieving the crushed product with a 110-mesh sieve;
and (3) sterilization: sterilizing the pulverized product under microwave for 4min under 3.5kW, and covering the pulverized product with a thickness of 1 cm.
Example 3
A preparation method of high dietary fiber flaxseed powder with good reconstitution property comprises the following steps:
screening: selecting raw material seeds from which impurities and deteriorated seeds are removed;
degumming: adding water with the temperature of 55 ℃ into the mixture according to the material-liquid ratio of 1g/10mL for soaking for 1h, repeating the hot water extraction for 4 times, then adding food-grade citric acid with the pH value of 3 into the mixture according to the material-liquid ratio of 1g/5mL for treating for 40min for acid treatment to remove the glue in the raw material seeds, then adding water into the mixture according to the material-liquid ratio of 1g/5mL for stirring for 4min, repeating the water washing for 4 times to clean the acid remained in the seeds to prevent the protein in the seeds from being damaged, finally performing freeze drying to remove the remained water, and drying for 12h under the freeze-drying condition of 20 ℃ below zero;
degreasing: degreasing the degummed product by adopting a squeezing method, wherein the squeezing temperature is below 100 ℃;
crushing: crushing the degreased product and sieving the crushed product with a 120-mesh sieve;
and (3) sterilization: sterilizing the pulverized product under microwave for 5min under 3kW, and covering the pulverized product with a thickness of 1 cm.

1. A preparation method of high dietary fiber flaxseed powder with good reconstitution property is characterized by comprising the following steps: the preparation method comprises the following steps:
degumming: carrying out hot water extraction, acid treatment, water washing and freeze drying on the raw material seeds;
degreasing: degreasing the degummed product by adopting a squeezing method;
crushing: pulverizing and sieving the degreased product;
and (3) sterilization: sterilizing the crushed product under microwave and cooling.
