Abstract
本发明涉及天然色素的加工领域,尤其涉及一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法。包括以下步骤:将脂溶性色素、乳化剂、吐温、甘油按照一定质量比例混合均匀,在50℃‑60℃下进行高速乳化,直至得到均一的乳化液;向水溶液中加入褪色抑制剂,并在其中添加相关辅料,待完全溶解后按一定比例将含有褪色抑制剂的水溶液缓慢加入到乳化液中,边加边快速搅拌,最终可得到含有脂溶性色素的澄清透明水溶液。该方法有效的将脂溶性天然色素转为水溶性,且产品的水溶性高,溶液透明度好,加入的褪色抑制剂可有效的抑制在紫外光辐射下的产品色素褪色。

天然色素是来源于自然界中带颜色的物质的总称,主要来自于植物的花、叶、果实和种子,还有少部分来自昆虫和微生物。天然色素常用于改善食品的色泽,也广泛用于医药、化妆品和布料的着色。天然色素具有以下特点:大部分从人们日常食用的动植物体中得到,安全无毒且没有副作用;易被人体吸收,对人体健康维护是一种有益的补充;多数天然色素具有生理和药理作用,对某些疾病具有防治功效。色彩柔和并具有芳香的气味,会给人带来愉悦的感觉。因此天然色素一直受到人们的喜爱,尤其是在化学合成色素安全事件频发的今天,人们更渴望在日常生活中能真正享用到纯天然的色素。
按照其溶解性能的不同天然色素可分为水溶性色素和脂溶性色素,脂溶性色素包括叶绿素和类胡萝卜素,但其溶解特性限定了其使用范围。而且天然色素也存在着稳定性较差、光照易褪色、价格较责等缺点,严重制约着它的开发应用。因此对天然色素稳定性的考察、改善,生理功能等方面的研究,引起了科技工作者的高度重视,并进行了大量有益的研究工作。
针对以上问题,本发明提出了一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,拓宽了脂溶性色素的使用范围,采用酶改性芸香苷作为褪色抑制剂,大大增强了色素在紫外光照条件下的稳定性。
发明内容
为了克服现有技术的上述缺点与不足,本发明的目的在于一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法。
本发明目的通过以下技术方案实现:
一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,包括以下步骤:将脂溶性色素、乳化剂、吐温、甘油按照一定质量比例混合均匀,在50℃-60℃下进行高速乳化,直至得到均一的乳化液;向水溶液中加入褪色抑制剂,并在其中添加相关辅料,待完全溶解后按一定比例将含有褪色抑制剂的水溶液缓慢加入到乳化液中,边加边快速搅拌,最终可得到含有脂溶性色素的澄清透明水溶液。
进一步地,脂溶性色素为β-胡萝卜素、辣椒红色素、番茄红色素、虾青素中的一种。
进一步地,乳化剂为甘油单硬脂酸酯、甘油单月桂酸酯、二乙酰化甘油单硬脂酸酯、山梨醇酐单硬脂酸酯、山梨醇酐单月桂酸酯、山梨醇酐油酸酯、蔗糖单月桂酸酯、蔗糖二硬脂酸酯中的一种或几种。
进一步地,乳化液中脂溶性色素含量为4%~15%、乳化剂含量为8%~25%、吐温含量为18%~30%、甘油含量为50%~65%。
进一步地,高速乳化的乳化探头的转速为5000rpm-8000rpm。
进一步地,褪色抑制剂为酶改性芸香苷,其主要成分为葡萄糖基芸香苷、芸香苷。
进一步地,褪色抑制剂的添加量为0.1%-1%。
进一步地,相关辅料为维生素C、维生素C钠、环糊精,且维生素C与褪色抑制剂的质量比为1∶2-1∶5,维生素C钠与褪色抑制剂的质量比为1∶1-2∶1,环糊精与褪色抑制剂的质量比为2∶1-4∶1。
进一步地,含有褪色抑制剂的水溶液与乳化液的质量比为1∶1.5-1∶4。
本发明的创新点及优势在于:
(1)本发明将脂溶性色素、乳化剂、吐温、甘油按照一定质量比例混合均匀,在50℃-60℃下进行高速乳化,直至得到均一的乳化液;向水溶液中加入褪色抑制剂,并在其中添加相关辅料,待完全溶解后按一定比例将含有褪色抑制剂的水溶液缓慢加入到乳化液中,边加边快速搅拌,最终可得到含有脂溶性色素的澄清透明水溶液,方法简便,易于操作,产品稳定性强,拓展了脂溶性色素的应用范围。
(2)本发明在制备过程中,对天然色素的色价没有造成任何破坏,且设备成本较低,便于规模化生产。
(3)将配制好含有脂溶性天然色素的水溶液在0.8W/m2的紫外光下进行辐照20-50个小时,通过紫外分光光度计测定其褪色率,并与不添加褪色抑制剂的相同浓度色素的水溶液进行比较。褪色率的计算方法为,褪色率=(A-A′)/A×100%,其中:A为特定波长下辐照前样品的吸光值,A′为特定波长下辐照后样品的吸光值。发现与传统技术相比,所添加的褪色抑制剂对保护色素有明显的效果,且添加量很小,对生产成本没有明显的影响。
具体实施方式
下面结合实施例对本发明进行进一步描述,实施例是为了更好的说明本发明,而不是对本发明进行限制。
实施例1:
将8gβ-胡萝卜素、20g甘油单月桂酸酯、25g吐温、60g甘油依次加入乳化罐中,控制乳化罐温度50℃,开启乳化探头,控制转速为6000rpm,乳化30分钟后,得到均一的乳化液。取酶改性芸香苷0.5g、维生素C0.3g、维生素C钠0.5g,环糊精1g,溶解在50g纯化水中,待完全溶解后,将其缓慢加入到乳化液中,边加边剧烈搅拌,最终得到含有褪色抑制剂和脂溶性天然色素的澄清透明溶液,在460nm下测定其吸光值为A1为1.218。然后重复以上操作,但水中不添加酶改性芸香苷及相关辅料,配置不含褪色抑制剂的脂溶性天然色素澄清透明溶液,测定其吸光值A2为1.186。分别量取以上溶液各50ml放入透明玻璃瓶中,在0.8W/m2的紫外光下进行辐照50个小时,然后分别测定其吸光值,A1′为1.202,A2′为0.142。添加和不添加褪色抑制剂的样品光照后的褪色率分别为1.3%和88.0%,说明酶改性芸香苷对于加强β-胡萝卜素的稳定性有明显的效果。
实施例2:
将8g虾青素、15g甘油单月桂酸酯、10g山梨醇酐单硬脂酸酯、23g吐温、55g甘油依次加入乳化罐中,控制乳化罐温度55℃,开启乳化探头,控制转速为7000rpm,乳化30分钟后,得到均一的乳化液。取酶改性芸香苷1g、维生素C 0.6g、维生素C钠1.5g,环糊精3g,溶解在50g纯化水中,待完全溶解后,将其缓慢加入到乳化液中,边加边剧烈搅拌,最终得到含有褪色抑制剂和脂溶性天然色素的澄清透明溶液,在489nm下测定其吸光值为A1为1.521。然后重复以上操作,但水中不添加酶改性芸香苷及相关辅料,配置不含褪色抑制剂的脂溶性天然色素澄清透明溶液,测定其吸光值A2为1.472。分别量取以上溶液各50ml放入透明玻璃瓶中,在0.8W/m2的紫外光下进行辐照25个小时,然后分别测定其吸光值,A1′为1.379,A2′为0.108。添加和不添加褪色抑制剂的样品光照后的褪色率分别为9.3%和92.7%,说明酶改性芸香苷对于加强虾青素的稳定性有明显的效果。
实施例3:
将8g辣椒红色素、10g甘油单硬脂酸酯、15g二乙酰化甘油单硬脂酸酯、20g吐温、60g甘油依次加入乳化罐中,控制乳化罐温度50℃,开启乳化探头,控制转速为8000rpm,乳化30分钟后,得到均一的乳化液。取酶改性芸香苷1g、维生素C 0.4g、维生素C钠2g,环糊精3g,溶解在60g纯化水中,待完全溶解后,将其缓慢加入到乳化液中,边加边剧烈搅拌,最终得到含有褪色抑制剂和脂溶性天然色素的澄清透明溶液,在460nm下测定其吸光值为A1为1.387。然后重复以上操作,但水中不添加酶改性芸香苷及相关辅料,配置不含褪色抑制剂的脂溶性天然色素澄清透明溶液,测定其吸光值A2为1.304。分别量取以上溶液各50ml放入透明玻璃瓶中,在0.8W/m2的紫外光下进行辐照40个小时,然后分别测定其吸光值,A1′为1.307,A2′为0.113。添加和不添加褪色抑制剂的样品光照后的褪色率分别为5.8%和91.3%,说明酶改性芸香苷对于加强辣椒红色素的稳定性有明显的效果。
包括以上所述,仅为本发明的具体实施方式,但本发明的保护范围并不局限于此,任何熟悉本技术领域的技术人员在本发明揭露的技术范围内,可轻易想到变化或替换,都应涵盖在本发明的保护范围之内。因此,本发明的保护范围应以所述权利要求的保护范围为准。
Claims (9)
1.一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于,包括以下步骤:将脂溶性色素、乳化剂、吐温、甘油按照一定质量比例混合均匀,在50℃-60℃下进行高速乳化,直至得到均一的乳化液;向水溶液中加入褪色抑制剂,并在其中添加相关辅料,待完全溶解后按一定比例将含有褪色抑制剂的水溶液缓慢加入到乳化液中,边加边快速搅拌,最终可得到含有脂溶性色素的澄清透明水溶液。
2.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的脂溶性色素为β-胡萝卜素、辣椒红色素、番茄红色素、虾青素中的一种。
3.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的乳化剂为甘油单硬脂酸酯、甘油单月桂酸酯、二乙酰化甘油单硬脂酸酯、山梨醇酐单硬脂酸酯、山梨醇酐单月桂酸酯、山梨醇酐油酸酯、蔗糖单月桂酸酯、蔗糖二硬脂酸酯中的一种或几种。
4.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的乳化液中脂溶性色素含量为4%~15%、乳化剂含量为8%~25%、吐温含量为18%~30%、甘油含量为50%~65%。
5.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的高速乳化的乳化探头的转速为5000rpm-8000rpm。
6.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的褪色抑制剂为酶改性芸香苷,其主要成分为葡萄糖基芸香苷、芸香苷。
7.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的褪色抑制剂的添加量为0.1%-1%。
8.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述的相关辅料为维生素C、维生素C钠、环糊精,且维生素C与褪色抑制剂的质量比为1∶2-1∶5,维生素C钠与褪色抑制剂的质量比为1∶1-2∶1,环糊精与褪色抑制剂的质量比为2∶1-4∶1。
9.根据权利要求1所述的一种将脂溶性天然色素转为水溶性色素及其褪色保护的方法,其特征在于:所述含有褪色抑制剂的水溶液与乳化液的质量比为1∶1.5-1∶4。
