本发明公开了一种龙虾清洗盐,其特征在于其配方原料包括:食用盐、金属螯合剂、有机酸、硫酸钠。本发明龙虾清洗盐,具有高效、安全、无残留等优点,对龙虾表面的污垢、黑斑、黑锈有优良的清洗效果。

一种龙虾清洗盐
技术领域
本发明涉及一种水产类清洗产品,具体涉及一种龙虾清洗盐。
背景技术
随着龙虾市场越做越大,以及人们日益关注的食品安全问题,龙虾的清洗工作受到了酒店餐馆、龙虾养殖场、加工场和批发市场的极度重视。龙虾养殖中由于环境恶化,或者管理不善,龙虾体表易附着大量的泥沙、腐殖质、有机质、重金属等污染物,形成黑斑、黄斑、黑锈等。目前,龙虾的清洗主要采用传统方法(手工毛刷清洗)、洗虾机(超声波震动清洗)、洗虾粉(化学清洗),如表1所示。

从表1中可以看出,传统方法清洗效率低,无法清除龙虾鳃里的污垢和龙虾表面黑斑、黄斑。洗虾机噪声大,无法清除龙虾表面黄斑黑斑和去除重金属离子。化学方法,如采用“洗虾粉”虽然清洗效率高、清洗彻底,然而会有化学物质残留。资料显示,目前市面上现有的“洗虾粉”的主要成分是工业领域普遍使用的一种除锈剂——草酸,其酸性为醋酸的10000倍,食用残留有洗虾粉的小龙虾,会使人体内酸碱度失去平衡,过量摄入草酸还会造成结石,对人体危害极大。同时,因洗虾粉中含有蛋白酶,能分解蛋白质,患者的肌红蛋白会迅速增高,并导致肾血管堵塞,患上横纹肌溶解症,即患者的肌肉正在被溶解。而肌红蛋白需要通过肾脏排泄,增高的肌红蛋白如无法正常排泄掉,严重时会引起急性肾衰,危及生命(2010年南京“龙虾门”事件)。为了解决目前龙虾清洗的问题,开发一种高效、安全无残留的龙虾清洗产品是市场迫切需要的。目前,现有技术中,中国专利(申请号201610068944)公开了一种以烷基葡萄糖苷、月桂酰谷氨酸钠、聚山梨酯-80、柠檬酸钾、碳酸氢钠、乙二胺四乙酸二钠、乙醇复配而成的小龙虾清洗剂,此专利主要原料为表面活性剂烷基葡萄糖苷、月桂酰谷氨酸钠、聚山梨酯-80等物质,此类原料使用时产生的泡沫过多,清洗龙虾过后几个小时龙虾都在持续吐泡沫,存在极大的食品安全隐患,而且影响龙虾清洗的整体效率。中国专利(申请号201610229782)公开了一种氨基酸型龙虾清洗剂,它由椰油酰甘氨酸钠、月桂酰谷氨酸钠、椰油酰丙氨酸钠和氨基酸依质量比1:2:2:1配制而成,此专利公开的配方由氨基酸类表面活性剂为主,由于龙虾表面污垢主要为腐殖质、有机质、重金属等污染物,因此产品的清洗效果不佳,而且由于表面活性剂加量过多,产品泡沫太过丰富,龙虾吐干净泡沫时间过长。因此,市场迫切需要一款清洁效果优良、无刺激性、无食品安全隐患的龙虾清洗类产品。
发明内容
针对上述问题,本发明的目的是提供一种龙虾清洗盐,本发明的龙虾清洗盐具有高效、安全、无残留等优点,对龙虾表面的污垢、黑斑、黑锈有优良的清洗效果。
本发明通过下述技术方案实现。
一种龙虾清洗盐,其特征在于其配方原料包括:食用盐、金属螯合剂、有机酸、硫酸钠。
作为具体技术方案,所述龙虾清洗盐的配方原料按重量份计包括:食用盐60~80份、金属螯合剂0.1~1份、有机酸15~25份、硫酸钠1~5份。
作为优选技术方案,所述龙虾清洗盐的配方原料包括:食用盐、金属螯合剂、有机酸、硫酸钠、烷基糖苷、酶制剂、植物提取物。
作为具体技术方案,所述龙虾清洗盐的配方原料按重量份计包括:食用盐60~80份、金属螯合剂0.1~1份、有机酸15~25份、硫酸钠1~5份、烷基糖苷1~5份、酶制剂0.5~1份、植物提取物1~5份。
作为优选技术方案,所述烷基糖苷为APG-06型烷基糖苷;烷基糖苷APG-06,为温和无泡型表面活性剂,具有吸附、润湿、渗透、乳化、分散和增溶等作用,能够降低体系的表面张力及界面的自由能,改变污垢、腐殖质、有机质与基质的界面性质,从而达到去除污垢的目的。
作为优选技术方案,所述酶制剂为淀粉酶、纤维素酶一种或两种的混合物。
作为优选技术方案,所述有机酸为柠檬酸、马来酸、苹果酸、酒石酸、丙氨酸中的一种或几种的混合物;有机酸可选用柠檬酸、马来酸、苹果酸、酒石酸、丙氨酸等,且均可作为食品级添加剂使用,安全性高,对龙虾表面的污垢、黑斑、黑锈等成分具有优良的清洗效果。
作为优选技术方案,所述有机酸为柠檬酸、酒石酸。
作为优选技术方案,所述植物提取物为柠檬提取物。
作为优选技术方案,所述食用盐为精制井矿盐;精制井矿盐采自千米深井以下侏罗纪地质年代的天然卤水和岩盐矿床,通过全密封真空工艺精炼而成,几乎不破坏其原有物质,是纯天然的,杂质少。本发明使用的精制井矿盐颗粒度大小为50-100目,具有润湿、扩散、渗透、杀菌消毒的作用,能够刺激龙虾肠胃,使其吐出体内淤泥,同时盐水具有较高的渗透压,能够杀死龙虾体内的寄生纤毛虫。
本发明的有益效果:
1、本发明的龙虾清洗盐以精制井矿盐为主,具有润湿、扩散、渗透、杀菌消毒的作用,能够刺激龙虾肠胃,使其吐出体内淤泥,同时盐水具有较高的渗透压,能够杀死龙虾体内的寄生纤毛虫。同时,由于目前市面还没有龙虾清洗盐类产品,本发明龙虾清洗盐以食用盐为载体,增加了盐产品的附加值,丰富了盐产品的种类。
2、本发明的龙虾清洗盐添加天然来源、安全性好、性质温和的烷基糖苷APG-06,该原料为无泡型的表面活性剂,清洗过后龙虾不会出现长时间吐泡沫的现象。
3、本发明的龙虾清洗盐不添加草酸、亚硫酸钠、焦亚硫酸钠等存在食品安全隐患的原料,用清洗效果优良的食品级柠檬酸、酒石酸、苹果酸、马来酸等作主要清洗成分,安全无残留,而且对龙虾本身无任何的刺激性和危害。本发明的龙虾清洗盐符合GB 14930.1(A)-2015食品安全国家标准洗涤剂的要求,其具体理化指标和微生物指标检测结果如表2所示。

实施例1
一种龙虾清洗盐,其配方原料包括:食用盐、金属螯合剂、有机酸、硫酸钠;另外,为了使最终产品具有较好的感官性状,本龙虾清洗盐的配方中还包括加入食用盐中通常使用的食品添加剂,如二氧化硅、硅酸钙、柠檬酸铁铵、亚铁氰化钾、亚铁氰化钠、酒石酸铁、氯化钾、阿拉伯胶等;为了保证产品的安全性,本配方中的原料均选用食品级添加剂。
实施例2
一种龙虾清洗盐,其配方原料按重量份计包括:食用盐60份、金属螯合剂0.1份、有机酸15份、硫酸钠1份;其中,金属螯合剂为EDTA-二钠、食用盐为精制井矿盐、有机酸为柠檬酸与酒石酸的混合物。

一种龙虾清洗盐,其配方原料按重量份计包括:食用盐80份、金属螯合剂1份、有机酸25份、硫酸钠5份;其中,金属螯合剂为EDTA-二钠、食用盐为精制井矿盐、有机酸为柠檬酸与酒石酸的混合物。

一种龙虾清洗盐,其配方原料按重量份计包括:食用盐70份、金属螯合剂0.5份、有机酸15份、硫酸钠2份;其中,金属螯合剂为EDTA-二钠、食用盐为精制井矿盐、有机酸为柠檬酸与酒石酸的混合物。

一种龙虾清洗盐,其配方原料按重量份计包括:食用盐60份、金属螯合剂0.1份、有机酸15份、硫酸钠1份、烷基糖苷5份、淀粉酶1份、柠檬提取物1份;其中,金属螯合剂为EDTA-二钠、食用盐为精制井矿盐、有机酸为柠檬酸与酒石酸的混合物。

一种龙虾清洗盐,其配方原料按重量份计包括:食用盐80份、金属螯合剂1份、有机酸25份、硫酸钠5份、烷基糖苷1份、纤维素酶0.5份、柠檬提取物5份;其中,金属螯合剂为EDTA-二钠、食用盐为精制井矿盐、有机酸为柠檬酸与酒石酸的混合物。
实施例7
本发明龙虾清洗盐的使用方法。清洗时,控制龙虾清洗盐与水的质量比为1:50、浸泡时间为10~20min,按照龙虾清洗工艺化步骤,包括吐污、浸泡(适当添加机械清洗效果更佳,如超声波)、清水喷淋等。
实施例8
本发明龙虾清洗盐与常规方法的清洗效果的比较
采用本发明实施例3~6中的配方对50只龙虾进行清洗;清洗时,控制龙虾清洗盐与水的质量比为1:50配比,浸泡时间为10、20min;常规方法即采用洗虾粉进行清洗,清洗效果将表3和图1;

由表3和图1可知,采用本发明的龙虾清洗盐清洗龙虾与洗虾粉相比,清洗效果差异不大,但是采用本发明龙虾清洗盐清洗龙虾后,基本不会产生泡沫;而采用洗虾粉清洗龙虾会产生大量泡沫,过后几个小时龙虾都在持续吐泡沫,并且有出现龙虾死亡的现象,可见洗虾粉由于使用了多种化学原料,在清洗龙虾时存在较大食品安全隐患。

3.如权利要求1所述的一种龙虾清洗盐,其特征在于配方原料包括:食用盐、金属螯合剂、有机酸、硫酸钠、烷基糖苷、酶制剂、植物提取物。
4.如权利要求3所述的一种龙虾清洗盐,其特征在于配方原料按重量份计包括:食用盐60~80份、金属螯合剂0.1~1份、有机酸15~25份、硫酸钠1~5份、烷基糖苷1~5份、酶制剂0.5~1份、植物提取物1~5份。
5.如权利要求3所述的一种龙虾清洗盐,其特征在于所述烷基糖苷为APG-06型烷基糖苷。
6.如权利要求3所述的一种龙虾清洗盐,其特征在于所述酶制剂为淀粉酶、纤维素酶一种或两种的混合物。
