Claims (8)
1. A yoghurt fermentation apparatus, comprising:
an outer pan (10), the outer pan (10) having a receiving cavity;
the inner pot (20), the said inner pot (20) is placed in the said holding cavity, the said inner pot (20) is used for holding the food material making sour milk;
a cover (30), wherein the cover (30) is covered on the outer pot (10), the cover (30) has a first open position for avoiding the inner pot (20), and the cover (30) has a first closed position for closing the inner pot (20), and when the cover (30) is positioned at the first closed position, a closed working cavity (51) is formed between the cover (30) and the inner pot (20);
the vacuum generating device (40) is arranged in the outer pot (10), and the vacuum generating device (40) is used for exhausting the working cavity so as to form a vacuum state in the working cavity;
the outer pot (10) comprises:
a base (11);
the heat preservation cover (12), the heat preservation cover (12) is arranged in the base (11), the accommodating cavity is formed in the heat preservation cover (12), an installation cavity (13) is formed between the outer peripheral surface of part of the heat preservation cover (12) and the inner wall of the base (11), the vacuum generating device (40) is arranged in the installation cavity (13), a channel communicated with the working cavity is formed in at least one of the base (11), the heat preservation cover (12), the pot cover (30) and the inner pot (20), and the vacuum generating device (40) is communicated with the working cavity through the channel;
a part of the outer circumferential surface of the inner pot (20) and the inner wall of the heat preservation cover (12) are arranged with a distance, so that a hollow interlayer (52) is formed between the outer circumferential surface of the inner pot (20) and the inner wall of the heat preservation cover (12), the hollow interlayer (52) is communicated with the channel, and the vacuum generating device (40) is used for generating a vacuum state in the working cavity (51) by pumping air into the hollow interlayer (52);
the yoghurt fermentation device further comprises:
a heating part (60), wherein the heating part (60) is arranged in the hollow interlayer (52), or the heating part (60) is arranged between the bottom of the heat insulation cover (12) and the inner wall of the base (11);
the temperature controller (70) is arranged on the outer pot (10), and the temperature controller (70) is used for monitoring the temperature in the hollow interlayer (52);
a pressure sensor disposed on the outer pan (10) for monitoring the pressure within the hollow interlayer (52);
the vacuum generating device (40) comprises:
the vacuum pump (41) is arranged in the mounting cavity (13), a first through hole (121) is formed in the side wall of the heat insulation cover (12), and the working end of the vacuum pump (41) is communicated with the hollow interlayer (52) through the first through hole (121);
the first control chamber (42) is arranged on the outer peripheral surface of the heat preservation cover (12), the first control chamber (42) is communicated with the hollow interlayer (52) through the first through hole (121), and the working end of the vacuum pump (41) is communicated with the hollow interlayer (52) through the first control chamber (42);
-a first control valve (43), the first control valve (43) being connected to the first control chamber (42), the first control valve (43) having a second open position opening the first through-hole (121) to communicate the first control chamber (42) with the hollow interlayer (52), and the first control valve (43) having a second closed position closing the first through-hole (121) to disconnect the first control chamber (42) from the hollow interlayer (52);
the liquid storage tank (44), liquid storage tank (44) set up in install chamber (13), liquid storage tank (44) with cavity intermediate layer (52) are linked together, liquid storage tank (44) are used for to carry heat transfer medium in cavity intermediate layer (52).
2. Yoghurt fermentation apparatus in accordance with claim 1, wherein the vacuum generating device (40) further comprises:
the second control chamber (45), the second control chamber (45) is arranged at the bottom of the heat insulation cover (12), a second through hole (122) is arranged at the bottom of the heat insulation cover (12), the second control chamber (45) is communicated with the hollow interlayer (52) through the second through hole (122), and the liquid storage tank (44) is communicated with the second control chamber (45);
-a second control valve (46), the second control valve (46) being connected to the second control chamber (45), the second control valve (46) having a third open position opening the second through hole (122) to communicate the second control chamber (45) with the hollow interlayer (52), and the second control valve (46) having a third closed position closing the second through hole (122) to disconnect the second control chamber (45) from the hollow interlayer (52).
3. Yoghurt fermentation apparatus in accordance with claim 2, wherein the tank (44) comprises:
-a first conduit (441), a first end of said first conduit (441) being in communication with said tank (44), a second end of said first conduit (441) being in communication with said second control chamber (45);
and a second pipeline (442), wherein a first end of the second pipeline (442) is communicated with the liquid storage tank (44), a second end of the second pipeline (442) is communicated with the first control valve (43), and when the vacuum pump (41) pumps air into the first control chamber (42), the liquid storage tank (44) conveys a heat transfer medium into the hollow interlayer (52) through the second pipeline (442).
4. A yoghurt fermentation device as claimed in claim 3, wherein the reservoir (44) further comprises:
and a circulation pump (47), wherein the circulation pump (47) is arranged on the first pipeline (441).
5. Yoghurt fermentation apparatus in accordance with claim 2, wherein the first control valve (43) and/or the second control valve (46) is a solenoid valve, the first control valve (43) being in the second open position after the temperature in the hollow centre (52) has reached a first preset temperature.
6. A method of yoghurt fermentation using a yoghurt fermentation apparatus as claimed in any one of claims 1 to 5, which comprises the steps of:
a working cavity (51) is formed between the pot cover (30) and the inner pot (20);
starting the vacuum generating device (40), and pumping air into the working cavity (51) by the vacuum generating device (40) to form vacuum in the working cavity (51), so that the food in the inner pot (20) is fermented for a first preset time in a vacuum state.
7. The method according to claim 6, wherein the step of activating the vacuum generating means (40) further comprises:
opening a first control valve (43) and a second control valve (46) of the vacuum generating device (40) to enable a heat transfer medium in a liquid storage tank (44) to enter a hollow interlayer (52) formed between a heat insulation cover (12) and a base (11) of the vacuum generating device (40);
closing the second control valve (46) when the amount of the heat transfer medium entering the hollow interlayer (52) reaches a preset amount;
closing the first control valve (43) and the vacuum pump (41) of the vacuum generating device (40) after the pressure value in the hollow interlayer (52) reaches a preset pressure;
starting a heating part (60) of the yoghurt fermentation device to heat a heat transfer medium in the hollow interlayer (52) so as to enable the temperature in the hollow interlayer (52) to reach a second preset temperature;
after the heating part (60) heats the heat transfer medium for a second preset time, the second control valve (46) is opened to reflux the heat transfer medium remained in the hollow interlayer (52) into the liquid storage tank (44), and the vacuum pump (41) is opened to discharge the steam generated in the hollow interlayer (52).
8. The method of claim 7, wherein the step of activating the vacuum generating means (40) further comprises:
a circulation pump (47) provided on a first pipe (441) of the tank (44) is activated to bring the heat transfer medium into the hollow interlayer (52).
