Abstract
本发明涉及一种特殊医学用途配方食品,具体涉及一种适用于心脏病患者的特殊医学用途配方食品。所述配方食品包括以下成分及其重量份:大蒜复合粉20‑50份、山药10‑30份、核桃5‑15份,橄榄油5‑10份、鸡蛋黄1‑5份,复合矿物质0.5‑3份和复合维生素0.01‑0.5份。本发明以大蒜复合粉作为配方食品的主要成分,复合粉中各成分相互配合不仅可消除大蒜臭味,使大蒜复合粉具有较好的口感,而且有效的保留了大蒜粉中的有效成分;本发明大蒜复合粉与其它各成分具有协同作用,具有保护心脏抗氧化能力、降低胆固醇和降血糖的功效。并且本发明配方食品无需添加防腐剂并具有很好的防腐效果,延长了产品的货架期。

本发明涉及一种特殊医学用途配方食品,具体涉及一种适用于心脏病患者的特殊医学用途配方食品。
背景技术
心脏病是一类比较常见的循环系统疾病,循环系统由心脏、血管和调节血液循环的神经体液组织构成,因此循环系统疾病也称为心血管病,其中以心脏病最为多见。心脏病分为先天性心脏病和后天性心脏病,其中,先天性心脏病是由于心脏在胎儿期中发育异常所致;后天性心脏病是出生后受到外来或机体内在因素作用所致,如冠状动脉粥样硬化性心脏病、风湿性心脏病、高血压性心脏病、肺源性心脏病及血液病性心脏病等,其中,高血压是近年来的心脏病的主要病因。心脏病在发作时常常伴有心悸、呼吸困难、咳嗽、咯血、胸痛等症状,且会有异常心音、心律失常、脉搏异常等。患有心脏病的患者丧失劳动能力,给家庭和个人带来严重的负担。
目前市场上作为治疗心脏病的药物多为西药,西药虽药效快,但却存在人体容易产生耐药性、药物具有毒性、药物容易引起心律失常等缺点,因而不能够较好的治疗心脏病。中医作为治疗心脏病药物已有很多,但大多存在药性单一,无法整体调理身体,效果单一,疗效差、药物提纯、加工复杂等的问题,因而限制了中药在治疗心脏病上的发展。
对于特殊营养食品,在美国、欧盟等发达国家都有相应的规定和开发应用;而我国GB29922-2013《特殊医学用途配方食品通则》食品安全国家标准中医学食品明确规定:2.1.1医学配方食品:可作为单一营养来源满足目标人群营养需求的特殊医学用途配方食品;2.1.2特定医学配方食品:可作为单一营养来源满足目标人群在特定疾病或医学状况下营养需求的特殊医学用途配方食品。
特殊医学用途配方食品的开发对于心脏病患者的营养支持和营养治疗方面具有非常重要的作用。而现有的用于心脏病患者的配方食品,如中国专利申请(CN104839679A)公开了一种心脏病医学配方食品,其结合心脏病患者的体质特征,根据传统中医精髓理论合理配伍多种“药食同源”之中药,采用多种经预水解SBE技术提取药食两用的中药提取物精华、多种微胶囊化的益生菌以及生物酶解提取的短肽、益生元、氨基酸、碳水化合物、有保健功能的油脂、多种维生素及矿物质一起混合等工艺加工制成,不仅可作为单一营养来源满足心脏病患者的营养需求,还起到了活血祛瘀、清心醒脾、滋补元气、扩张血管、降压、改善微循环及增强造血功能的功效。但是其成分繁多、复杂,并且没有提供确切的营养功效作用。中国专利申请(CN106912924A)公开了一种降糖、减肥、保护糖尿病器官的功能性营养粉及其制备方法和食用方法,该功能性营养粉按质量份数计组份如下:发酵甜荞麦面10-30份、炒熟糜子米粉5-15份、葡萄籽提取物1-5份、芦丁1-3份、壳聚糖1-3份。该发明产品对自发肥胖2型糖尿病db/db小鼠有明显降低体重和血糖作用,对其心脏组织器官有保护作用,且动物实验未发现毒副反应。但该产品功效还需进一步提高。
大蒜具有广泛的食疗和药用价值,主要功能包括抗菌消炎防腐、降血脂功能、提高肌体免疫力、抗肿瘤和抗衰老等作用。但是由于其特殊的臭味,限制了大蒜在食品中的应用。现有大蒜制品普遍涉及的问题就是有效成分的保留和脱臭问题。
发明内容
本发明的主要目的是提供一种适用于心脏病患者的特殊医学用途配方食品。本发明食品以大蒜复合粉为主要成分,以山药、核桃、橄榄油、鸡蛋黄、复合矿物质和复合维生素为辅料加工制成。本发明特殊医学用途配方食品,营养丰富、抗氧化能力强,在满足心脏病患者营养的基础上,也对心脏具有很好的保护作用。
为实现上述目的,本发明采用以下技术方案:
本发明第一个方面,提供一种适用于心脏病患者的特殊医学用途配方食品,包括以下成分及其重量份:大蒜复合粉20-50份、山药10-30份、核桃5-15份,橄榄油5-10份、鸡蛋黄1-5份,复合矿物质0.5-3份和复合维生素0.01-0.5份。
优选地,所述适用于心脏病患者的特殊医学用途配方食品,由以下成分及其重量份组成:大蒜复合粉30-45份、山药15-20份、核桃10-15份,橄榄油6-8份、鸡蛋黄2-3份,复合矿物质1-2.5份和复合维生素0.05-0.1份。
优选地,所述大蒜复合粉由大蒜、枸杞、山楂和橙子按质量比10-20:1-3:5-10:1-5混合经破碎、喷雾干燥制得。
优选地,所述大蒜复合粉的制备方法,包括以下步骤:
(1)原料清洗:将大蒜、枸杞、山楂和橙子,进行去皮、去核及清洗处理;
(2)将步骤(1)清洗处理后的大蒜、枸杞、山楂和橙子按质量比10-20:1-3:5-10:1-5加入破碎机中,加入保护液,进行破碎、喷雾干燥,即得。
进一步优选地,所述步骤(2)中保护液由0.7%NaCl,0.025%EDTA和1%NaCO3组成的溶液,上述成分百分比为质量百分比。
优选地,所述复合矿物质由亚硒酸钠、氧化镁、氯化钾和葡萄糖酸锌按质量比0.1-0.5:2-6:1-3:0.01-0.02组成。
优选地,所述复合维生素由维生素E、维生素C和叶酸按质量比0.05-0.1:0.01-0.05:0.001-0.005。
优选地,所述的特殊医学用途配方食品为粉状或颗粒状,加温开水调和食用。
本发明第二个方面,提供一种适用于心脏病患者的特殊医学用途配方食品的制备方法,包括以下步骤:
(1)将鸡蛋黄粉碎干燥后与大蒜复合粉、复合维生素混匀,添加橄榄油,搅拌均匀,得混合物I;
(2)将山药、核桃研磨成粉后,与复合矿物质依次添加到混合物I中,混合均匀,即得。
优选地,制备得到的特殊医学用途配方食品含水质量百分比为5%-10%。
本发明提供了一种适用于心脏病患者的特殊医学用途配方食品,该食品以大蒜复合粉为主要成分,所述大蒜复合粉由大蒜、枸杞、山楂和橙子按质量比10-20:1-3:5-10:1-5混合经破碎、喷雾干燥制得;大蒜与枸杞、山楂和橙子一同破碎,山楂和橙子破碎溶出的酸性物质可破坏大蒜液中蒜氨酸酶,实现大蒜的脱臭处理,同时枸杞的加入可有效调和破碎浆液的口感,混合浆液经喷雾干燥后得到的复合粉具有一种淡淡的橙香。
山药中含有丰富的营养物质,具有增强人体免疫力的功能。核桃含有Ω-不饱和脂肪酸和纤维素,可以降低胆固醇和心脏动脉的炎症反应。橄榄油中含有多种不饱和脂肪酸和保护心脏血管的抗氧化剂-多酚。蛋黄中含有丰富的脂肪,包括中性脂肪、卵磷脂、胆固醇等;也含有丰富的钙、磷、铁等矿物质;同时含有丰富的蛋白质,而且是高生物价的蛋白质;而且含有丰富的维生素,其中以维生素A、维生素D、维生素B最多。
本发明大蒜复合粉与复合维生素成分具有协同作用,在发挥保护心脏功效的同时,还可防止核桃、橄榄油氧化变质,可以延长本发明食品的货架期。
硒对糖尿病小鼠心脏抗氧化功能及血液成分具有保护作用,但是硒和大蒜素合用其作用效果减弱。而在本发明配方食品中,意外发现复合矿物质中添加硒,使本发明食品对心脏的保护作用增强。本发明克服了大蒜素和硒的拮抗作用,其原因可能是硒虽然与大蒜素具有拮抗作用,但是硒与本发明配方食品中其它成分(如维生素E)等具有显著的协同效应,这种协同效应远高于拮抗作用,因而会出现效果增强的作用。
本发明取得的有益效果:
(1)本发明以大蒜复合粉作为配方食品的主要成分,复合粉中各成分相互配合不仅可消除大蒜臭味,使大蒜复合粉具有较好的口感,而且有效的保留了大蒜粉中的有效成分。本发明为大蒜在食品加工中的应用开拓了新思路。
(2)本发明大蒜复合粉与其它各成分相互配合,具有协同,对心脏抗氧化能力具有显著的保护作用,同时具有降低胆固醇、降血糖的功效。本发明克服了大蒜素、硒合用效果减弱的作用。
(3)本发明配方食品无需添加防腐剂,就可取得很好的防腐效果,有利于增长产品的货架期。

所述大蒜复合粉由大蒜、枸杞、山楂和橙子按质量比10:1:5:1混合经破碎、喷雾干燥制得。
所述大蒜复合粉的制备方法,包括以下步骤:
(1)原料清洗:将大蒜、枸杞、山楂和橙子,进行去皮、去核及清洗处理;

所述大蒜复合粉的制备方法,包括以下步骤:
(1)原料清洗:将大蒜、枸杞、山楂和橙子,进行去皮、去核及清洗处理;

实施例6一种适用于心脏病患者的特殊医学用途配方食品的制备方法
所述适用于心脏病患者的特殊医学用途配方食品的制备方法,包括以下步骤:
(1)将鸡蛋黄粉碎干燥后与大蒜复合粉、复合维生素混匀,添加橄榄油,搅拌均匀,得混合物I;
(2)将山药、核桃研磨成粉后,与复合矿物质依次添加到混合物I中,混合均匀,即得。制备得到的特殊医学用途配方食品含水质量百分比为5%-10%。
试验例1大蒜复合粉质量评定
大蒜提取物及大多数大蒜制品,例如国外销售的含有蒜粉的药片和胶囊的质量,都是以其硫代亚磺酸酯的含量进行评定,因而本发明以大蒜复合粉中硫代亚磺酸酯的含量为指标进行大蒜复合粉质量评定。
本发明以大蒜为原料用于制备特殊医学用途的配方食品,在确保大蒜复合粉中有效成分含量的同时,还要去除大蒜臭味。除本发明以上实施例方案外,本发明在实验过程中还设计了以下对照组:
对照组1:将大蒜与枸杞按质量比15:12混合,加入保护液,进行破碎、喷雾干燥。所述保护液由0.7%NaCl,0.025%EDTA和1%NaCO3组成的溶液,上述成分百分比为质量百分比。
对照组2:将大蒜进行切片,切片厚度为4mm,采用pH值为6.5的0.3%Na2SO3和0.1L-Cys配制的保护液浸泡大蒜片,50℃干燥后将大蒜粉与枸杞、山楂和橙子按质量比15:2:7:3混合。
对照组3:将大蒜、枸杞、柠檬和橙子按质量比15:2:7:3加入破碎机中,加入保护液,进行破碎、喷雾干燥,即得。所述保护液由0.7%NaCl,0.025%EDTA和1%NaCO3组成的溶液,上述成分百分比为质量百分比。
试验对象:实施例1-5组所用大蒜复合粉及对照组1-3大蒜复合粉。
试验方法:按改良的Lawson方法进行检测,具体参考文献:郭浪.大蒜粉—维生素降血脂胶囊的研制及其药效学研究[D].重庆大学,2007.
大蒜复合粉中有效成分(硫代亚磺酸酯)保留率直接会影响复合粉的功效,但是作为食品原料,其口感也会影响最终产品的品质,并且由于大蒜所特有的臭味,保证其口感风味至关重要。本发明对上述大蒜复合粉同时进行了感官评定。
试验结果:各组硫代亚磺酸酯保留率及口感风味情况具体如表1所示。

由表1可知,本发明实施例1-5中大蒜复合粉的硫代亚磺酸酯保留率均在82%以上,其中是实施例3大蒜复合粉保留率最高,高达87.5%,说明本发明大蒜复合粉有效成分保留率高并且口味俱佳。与实施例3大蒜复合粉相比,对照组1大蒜复合粉中硫代亚磺酸酯保留率仅为50.1%,说明山楂和橙子对大蒜中有效成分具有显著的保护作用;对照组2保留率为82.5%,但其蒜臭味明显,因此本发明实施例大蒜复合粉处理效果更佳;对照组3保留率为72.9%,说明替换本发明实施例3大蒜复合粉中组合成分会影响复合粉中硫代亚磺酸酯的保留率。
试验例2本发明特殊医学用途配方食品对糖尿病小鼠心脏及血液成分保护作用
大蒜具有降低血脂、扩张血管、改善血液粘稠度及降血糖的作用。糖尿病状态下心脏极易遭受氧化损伤,因此本发明探究了本发明配方食品对糖尿病小鼠心脏及血液成分的保护作用。
为了获得能够与本发明大蒜复合粉发挥协同作用的辅料,本发明技术人员在设计本发明实施例1-5方案的同时,还设计了以下对照组:
对照组A:所述复合矿物质中不含亚硒酸钠氧化镁、氯化钾和葡萄糖酸锌按质量比4.3:2:0.015混合,其它均与实施例3相似。
对照组B:复合维生素由维生素E和维生素C按质量比0.08:0.08组成,其它均与实施例3相似。
试验对象:实施例3、对照组A和对照组B特殊医学用途配方食品。
试验方法:
采用ICR级小鼠50只:体重18-20g。
动物模型的建立:随机选取小鼠40只,造模前饥饿24小时,采用四氧嘧啶水溶液腹腔注射一次性给药,剂量100mg/kg,3天后眼眶采血,邻甲苯胺法测定空腹血糖,将血糖值超过200mg/d的小鼠留用。
将动物分为六组:
第一组为正常对照组;第二组糖尿病模型组;第三组糖尿病模型+实施例3配方食品,每天2次(早晚各一次),1.5g/kg体重(相当于人等效量),连续4周;第四组糖尿病模型+对照组A配方食品,每天2次(早晚各一次),1.5g/kg体重(相当于人等效量),连续4周;第五组糖尿病模型+对照组B配方食品,每天2次(早晚各一次),1.5g/kg体重(相当于人等效量),连续4周。
测定方法:DTNB直接法测定GSHpx的活性;以H2O2为底物测定过氧化氢(Cat)活性;以邻苯三酚自氧化法测定超氧化物歧化酶(SOD)活性;以TBA比色法测定脂质过氧化产物(MDA)含量;邻甲苯胺法测定血糖;按临床常用方法检测血常规及胆固醇含量。
试验结果:具体试验结果如下表2、表3和表4所示。

由表2可知,与正常对照组相比,糖尿病小鼠心脏多种抗氧化酶活性明显下降,MDA明显增多,说明糖尿病小鼠造模成功。与糖尿病模型组比,本发明实施例3配方食品可使GSHpx、SOD、Cat活性极显著提高(△△p<0.01),MDA含量下降也极为显著(△△p<0.01);本发明实施例3组效果明显优于对照组A,说明亚硒酸钠的加入,可与本发明其它成分发挥协同作用,本发明克服了大蒜素、硒合用效果减弱的作用。本发明实施例3组效果优于对照组B,说明叶酸与维生素E、维生素C组合,效果更佳。

由表3可知,与正常对照组相比,糖尿病小鼠白细胞数及血红蛋白含量明显减少,血清胆固醇含量明显升高,说明糖尿病小鼠造模成功。与糖尿病模型组比,本发明实施例3配方食品能极为显著地(△△p<0.01)提高糖尿病小鼠中白细胞数及血红蛋白含量,并且能极为显著(△△p<0.01)降低胆固醇含量。

由表4可知,本发明实施例3配方食品还具有显著的降血糖作用。
试验例3本发明特殊医学用途配方食品防腐试验
试验对象:实施例3、对照组A和对照组B特殊医学用途配方食品。
试验方法:称取上述食品10g,进行密封包装后,放置于28℃、65%RH下保存,定期观察,并按国标GB4789.2—2016食品微生物菌落总数的测定方法监控菌落总数是否超标(菌落总数>104cfu/g)。
试验结果:试验结果如下表5所示。

由上表5可知,本发明实施例3组配方食品防腐效果明显优于对照组A、对照组B,由此可知,亚硒酸钠、维生素的组成不仅会影响本发明配方食品的功效,而且对本发明配方食品的防腐效果也具有显著的影响作用。
综上可知,本发明以大蒜复合粉作为配方食品的主要成分,复合粉中各成分相互配合不仅可消除大蒜臭味,使大蒜复合粉具有较好的口感,而且有效的保留了大蒜粉中的有效成分;本发明大蒜复合粉与其它各成分具有协同作用,具有保护心脏抗氧化能力、降低胆固醇和降血糖的功效。并且本发明配方食品无需添加防腐剂并具有很好的防腐效果,延长了产品的货架期。
上述实施例为本发明较佳的实施方式,但本发明的实施方式并不受上述实施例的限制,其他的任何未背离本发明的精神实质与原理下所作的改变、修饰、替代、组合、简化,均应为等效的置换方式,都包含在本发明的保护范围之内。

1.一种适用于心脏病患者的特殊医学用途配方食品,其特征在于,包括以下成分及其重量份:大蒜复合粉20-50份、山药10-30份、核桃5-15份,橄榄油5-10份、鸡蛋黄1-5份,复合矿物质0.5-3份和复合维生素0.01-0.5份。

3.根据权利要求1所述适用于心脏病患者的特殊医学用途配方食品,其特征在于,所述大蒜复合粉由大蒜、枸杞、山楂和橙子按质量比10-20:1-3:5-10:1-5混合经破碎、喷雾干燥制得。
4.根据权利要求3所述适用于心脏病患者的特殊医学用途配方食品,其特征在于,所述大蒜复合粉的制备方法,包括以下步骤:
(1)原料清洗:将大蒜、枸杞、山楂和橙子,进行去皮、去核及清洗处理;
(2)将步骤(1)清洗处理后的大蒜、枸杞、山楂和橙子按质量比10-20:1-3:5-10:1-5加入破碎机中,加入保护液,进行破碎、喷雾干燥,即得。
5.根据权利要求4所述适用于心脏病患者的特殊医学用途配方食品,其特征在于,所述步骤(2)中保护液由0.7%NaCl,0.025%EDTA和1%NaCO3组成的溶液,上述成分百分比为质量百分比。
6.根据权利要求1所述适用于心脏病患者的特殊医学用途配方食品,其特征在于,所述复合矿物质由亚硒酸钠、氧化镁、氯化钾和葡萄糖酸锌按质量比0.1-0.5:2-6:1-3:0.01-0.02组成。
7.根据权利要求1所述适用于心脏病患者的特殊医学用途配方食品,其特征在于,所述复合维生素由维生素E、维生素C和叶酸按质量比0.05-0.1:0.01-0.05:0.001-0.005。
8.根据权利要求1-6任一所述适用于心脏病患者的特殊医学用途配方食品,其特征在于,所述的特殊医学用途配方食品为粉状或颗粒状,加温开水调和食用。
9.一种适用于心脏病患者的特殊医学用途配方食品的制备方法,其特征在于,包括以下步骤:
(1)将鸡蛋黄粉碎干燥后与大蒜复合粉、复合维生素混匀,添加橄榄油,搅拌均匀,得混合物I;
(2)将山药、核桃研磨成粉后,与复合矿物质依次添加到混合物I中,混合均匀,即得。
10.根据权利要求9所述制备方法,其特征在于,制备得到的特殊医学用途配方食品含水质量百分比为5%-10%。
