When the mass ratio of the flushed steamed sweet potato meat to the barreled first honey water reaches 10: 1, namely when the flushed steamed sweet potato pulp reaches 300kg, a new barrel of the first barreled honey water needs to be replaced. Under the scouring action of the steamed sweet potatoes, when all sweet potato flesh falls into the first honey water in the barrel below, only a plurality of sweet potato plant fibers connected with sweet potato seedlings are left.
The process for washing the sweet potato pulp by using the first hydromel to obtain the sweet potato plant fiber with the sweet potato seedlings and forming the sweet potato raw material mixed solution by using the sweet potato pulp and the first hydromel not only can quickly prepare the sweet potato plant fiber and the sweet potato raw material mixed solution required by the subsequent process, but also the sweet potato plant fiber starts to permeate the hydromel in the washing process, so that the toughness, the softness and the nutrition of the sweet potato plant fiber are favorably increased, and the finally prepared honey and sweet potato cake slices have good taste and chewiness. In addition, because the washing of the sweet potato plant fiber and the formation of the sweet potato raw material mixed liquor are carried out simultaneously, the production time is saved, the production period is shortened, and the production efficiency is improved.
S3, soaking and shredding: soaking sweet potato plant fibers connected with the sweet potato seedlings in first honey water for 5 h, cutting the sweet potato seedlings, cutting the sweet potato plant fibers into sweet potato fiber small sections of 30mm, putting the sweet potato fiber small sections into the sweet potato raw material mixed solution, adding sesame and salt, and stirring uniformly to obtain sweet potato cake slices; wherein, the adding amount of sesame is 5% of the mass of the sweet potato raw material mixed liquor, and the adding amount of salt is 2% of the mass of the sweet potato raw material mixed liquor. On the basis that the sweet potato plant fibers are preliminarily flushed and permeated with the honey water in the step S2, the first honey water is further soaked, so that the content of honey is favorably improved, the honey water absorbed by the sweet potato plant fibers is saturated, and the subsequent shredding processing is favorably realized; cutting sweet potato plant fibers into sweet potato fiber small sections, then putting the sweet potato fiber small sections into the sweet potato raw material mixed liquid, and simultaneously adding sesame and salt, so that the toughness, flexibility and chewing strength of the sweet potato cake slices are further improved, and the taste and nutrition of the sweet potato cake slices are enriched.

The honey and sweet potato cake slices are characterized in that a very thin honey moisture regain layer combining dry and wet is formed on the surface of the sweet potato cake slices, so that the finally sliced and formed honey and sweet potato cake slices have moderate taste and fragrance, are not hard and stiff any more, and are chewy when being chewed.

s2, peeling and punching: vertically hanging the cleaned sweet potatoes with sweet potato seedlings, flushing the sweet potatoes below the sweet potato seedlings with steam, controlling the steam flushing time to be 0.5-2 min, rotating the sweet potato seedlings while flushing, softening and dropping the outer skins of the sweet potatoes, and obtaining the peeled sweet potatoes with the sweet potato seedlings; putting the peeled sweet potatoes into a steam box, exposing sweet potato seedlings at the head of the sweet potatoes outside the steam box when the peeled sweet potatoes are put into the steam box, cooking the sweet potatoes for 20-40 min by using steam until the interior of the sweet potatoes is completely cooked, taking the cooked sweet potatoes out of the steam box, and clamping the sweet potato seedlings at the head of the sweet potatoes to enable the cooked sweet potatoes to be vertically downward;
preparing first honey water, filling part of the first honey water into a water bucket, filling the other part of the first honey water into a water gun, placing the barreled first honey water below the steamed sweet potatoes, spraying the steamed sweet potatoes by using the water gun to ensure that the steamed sweet potato pulp completely falls into the lower barreled first honey water under the flushing of high-pressure honey water flow until a plurality of sweet potato plant fibers connected with sweet potato seedlings are left in the steamed sweet potatoes under the flushing action, and then stirring the barreled first honey water with the sweet potato pulp to form a sweet potato raw material mixed solution;
s3, soaking and shredding: soaking sweet potato plant fibers connected with the sweet potato seedlings in first honey water, cutting the sweet potato seedlings, cutting the sweet potato plant fibers into sweet potato fiber small sections of 1-30 mm, putting the sweet potato fiber small sections into the sweet potato raw material mixed solution, adding sesame and salt, and stirring uniformly to obtain sweet potato cake slices;
s4, tabletting and baking: putting the sweet potato cake slices obtained in the step S3 into a tablet press to be pressed into tablets, pressing to obtain initial blanks of the sweet potato cake slices, and putting the initial blanks of the sweet potato cake slices into a constant-temperature oven to be baked;
s5, atomizing and dampening: preparing second honey water, putting the baked sweet potato cake piece blank obtained in the step S4 into an atomization box, atomizing and spraying the second honey water onto the surface of the baked sweet potato cake piece blank by using an atomizer, and then dampening for 1-3 hours;
s6, slicing and packaging: and S5, putting the sweet potato cake piece initial blank subjected to the second honey water atomization and moisture regaining step into a slicing machine for slicing to form honey sweet potato cake pieces, and packaging the sliced honey sweet potato cake pieces.
