Abstract

发明公开了一种魔芋粉‑卡拉胶可食性包装膜,所述的可食性包装膜由下列组分制成:魔芋粉、卡拉胶、甘油和聚乙二醇。本发明采用的所有材料均为安全无毒可食用材料,提高了膜的食用安全性。本发明以魔芋粉和卡拉胶为成膜物质,添加甘油和聚乙二醇为增塑剂,以去离子水为溶剂,在一定条件下共混均匀后,将所得的成膜液倒入玻璃皿中,在经过静置消泡和烘干过程制备成可食性包装膜。所制得的产品机械强度优良,安全、无毒、可食用、易降解,不会对环境产生污染,可代替塑料膜或塑料袋用于食品、药品和化妆品领域,该膜具有良好的亲水性,尤其适用于油性食品的包装。

一种魔芋粉-卡拉胶可食性包装膜
技术领域
本发明涉及包装膜制作领域,具体涉及一种可食性包装膜的制备方法。
背景技术
可食性包装膜是以天然可食性物质(如蛋白质、脂肪类、多糖、纤维素等)为原料,添加小分子物质为增塑剂,通过不同分子间的相互作用形成具有致密网络结构的可食性膜。与传统的用于食品包装的合成材料不同,可食用性包装膜具有可降解、无污染、可增强食品风味甚至增加营养等作用。
魔芋粉的主要成分是魔芋葡甘聚糖(Konjac glucomannan,简称KGM),是从魔芋球茎中提取的一种水溶性可生物降解的高分子多糖,具有良好的凝胶性、增稠性和成膜性,广泛应用于食品行业,可作为一种可食性的膜材料。卡拉胶(Carrageenan)是一种天然的水溶性非线性凝胶高分子多糖,主要从角叉菜、麒麟菜等红藻中提取,具有优良的热可逆凝胶性、溶解性、稳定性,是新型的可食性包装膜材料之一。在一定情况下,二者均可以单独成膜。但魔芋粉单独成膜时膜的拉伸强度小,伸长率大,而卡拉胶单独成膜时膜的拉伸强度大,伸长率小。κ-卡拉胶与魔芋胶共混后有明显的协同增效作用,适当调配制得的凝胶硬度和粘弹性等性能优异,制得的可食性包装膜的机械性能相比于单一成分成膜有较大提高。为了改善魔芋粉-卡拉胶可食性包装膜的综合性能,本实验同时加入了甘油和聚乙二醇两种增塑剂,大大提高了复合膜的机械性能。且相比现有的可食性包装膜,魔芋粉-卡拉胶可食性包装膜的制作安全无污染。
发明内容
本发明的目的是提供一种可食性包装膜,本发明通过以下技术方案实现:
一种魔芋粉-卡拉胶可食性包装膜,其特征在于,所述的可食性包装膜凝胶按重量百分比计由下列组分制成:魔芋粉1.2%、卡拉胶0.3%、甘油0.2%、聚乙二醇0.4%、去离子水97.9%,所述聚乙二醇分子量为200。
进一步地,所述的魔芋粉-卡拉胶可食性包装膜的制作方法为:
1)按比例称取魔芋粉和卡拉胶粉末,放入烧杯中,加入去离子水将粉末冲散,再加入甘油和聚乙二醇;
2)将步骤1)所得混合物放入水浴锅中加热并搅拌30min,水浴温度为75℃;
3)将步骤2)所得的成膜液倒入玻璃皿中室温静置2h脱泡;
4)将静置后的成膜液放入烘箱中干燥4~5h成膜,烘干温度为75℃。
本发明的有益效果是:(1)针对现有技术存在的上述不足,本发明采用的所有材料都是安全无毒的,红外检测结果表明该包装膜有良好的食用安全性;(2)采用的卡拉胶和魔芋粉共混时有良好的协同作用,提高了包装膜的机械性能,并且制作过程安全无污染,避免了传统可食用性包装膜生作中需要除去有毒副产物的繁琐过程。

具体实施方式
下面将结合实例对本发明做更详细的描述,但所述实施例不构成对本发明的限制。
实施例1:
1)称取1.2g魔芋粉和0.3g卡拉胶粉末,放入烧杯中,加入200ml去离子水将粉末冲散,再加入0.4g甘油和0.75g聚乙二醇200;
2)将步骤1)所得混合物放入水浴锅中加热并搅拌30min,水浴温度为75℃;
3)将步骤2)所得的成膜液倒入玻璃皿中常温静置消泡2h;
4)将静置后的成膜液放入烘箱中干燥4~5h成膜,烘干温度为75℃;
5)揭下干燥的膜,裁剪试样并测量其机械性能,其性能参数见表1。
实施例2:
1)称取1.125g魔芋粉和0.375g卡拉胶粉末,放入烧杯中,加入200ml去离子水将粉末冲散,再加入0.4g甘油和0.75g聚乙二醇;
2)将步骤1)所得混合物放入水浴锅中加热并搅拌30min,水浴温度为75℃;
3)搅拌的同时滴入8滴酒精消泡;
4)将步骤2)所得的成膜液倒入玻璃皿中常温静置消泡2h;
5)将静置后的成膜液放入烘箱中干燥4~5h成膜,烘干温度为75℃;
6)揭下干燥的膜,裁剪试样并测量其机械性能,其性能参数见表1。
实施例2:
1)称取1.125g魔芋粉和0.375g卡拉胶粉末,放入烧杯中,加入200ml去离子水将粉末冲散,再加入0.4g甘油和0.25g聚乙二醇;
2)将步骤1)所得混合物放入水浴锅中加热并搅拌30min,水浴温度为75℃;
3)将步骤2)所得的成膜液倒入玻璃皿中常温静置消泡2h;
4)将静置后的成膜液放入烘箱中干燥4~5h成膜,烘干温度为75℃;
5)揭下干燥的膜,裁剪试样并测量其机械性能,其性能参数见表1。

Claims (6)

1.一种魔芋粉-卡拉胶可食性包装膜,其特征在于,所述的可食性包装膜凝胶按重量百分比计由下列组分制成:魔芋粉1.2%、卡拉胶0.3%、甘油0.2%、聚乙二醇0.4%、去离子水97.9%。
2.根据权利要求书1所述的一种魔芋粉-卡拉胶可食性包装膜,其特征在于,所述的可食性包装膜的制作方法为:
1)按比例称取魔芋粉和卡拉胶粉末,放入烧杯中,加入去离子水将粉末冲散,再加入甘油和聚乙二醇;
2)将步骤1)所得混合物放入水浴锅中加热并搅拌30min,水浴温度为75℃;
3)将步骤2)所得的成膜液倒入玻璃皿中室温静置2h脱泡;
4)将静置后的成膜液放入烘箱中干燥4~5h成膜,烘干温度为75℃。
3.根据要求书2所述的一种魔芋粉-卡拉胶可食性包装膜,其特征在于,上述的步骤1)中所使用的聚乙二醇分子量为200。
4.根据要求书2所述的一种魔芋粉-卡拉胶可食性包装膜,其特征在于,上述的步骤2)中搅拌时的搅拌速率为180~200r/min。
5.根据要求书2所述的一种魔芋粉-卡拉胶可食性包装膜,其特征在于,上述的步骤2)中使用的玻璃皿的直径为205mm~210mm。
6.根据要求书2所述的一种魔芋粉-卡拉胶可食性包装膜,其特征在于,上述的步骤3)中室温静置的温度为20~30℃。
