本发明属一食品加工保鲜方法。
本发明系利用机械方法将新鲜大蒜直接加工制成膏状以后,灌装于软管中保存食用。
经DIALOG国际联机“食品科技数据库”和“专利文献数据库”系统捡索,证明本发明或类似本发明的文献和专利在国内外均未见报道。
大蒜保鲜一直是大蒜贮藏中的一大难题。大蒜收获后,即使在低温下贮藏,最多也只能维持保鲜到同年九月,此后便开始发芽、变黄、变软并失去原有成分的风味。
本发明系将鲜蒜经消毒处理后,用机械方法将其制成膏状,再酌加适量附加剂后,装于软管中保存、食用。不仅可满足人们食用鲜蒜泥的习惯,保持鲜蒜原有风味,更重要的是可以长期贮存且携带、运输、食用方便。
本发明适于工业化生产,设备、工艺简单,适合于就地加工。不仅解决了大蒜产地收获季节的储运困难,还可使大蒜长久保持其独特风味,有利于大蒜食品的深加工和精加工,使大蒜食品进入到现代化包装的食用成品行列之中。
Claims (2)
1、一种鲜蒜或以鲜蒜为主的食品加工保鲜方法,其特征在于:鲜蒜经消毒后用机械方法制成膏状,加入适量附加剂后灌装于软管中。
2、一种食品加工包装方法,其特征在于:所用包装材料为金属或塑料软管。
