Abstract
An edible oil rich in natural water-soluble extracts and a production method thereof, wherein the edible oil rich in natural water-soluble extracts comprises the following raw materials: edible oil, natural water-soluble extract, gemini surfactant and solvent. The method comprises the steps of firstly adding gemini surfactant into a solvent, adding the natural water-soluble extract after dissolving, adding the natural water-soluble extract into the solvent, stirring the mixture at room temperature for dissolving, adding the mixture into edible oil, and stirring the mixture at room temperature until the mixture is clear. The content of the natural water-soluble extract in the edible oil can reach 0.8 percent, the natural water-soluble extract is fully dissolved and uniformly dispersed in the edible oil, no layering exists after long-term storage, the taste and the flavor are good, the edible oil has the specific pharmacological and health-care effects of the natural water-soluble extract, the addition amount of the gemini surfactant is small, the effect is good, and the gemini surfactant is green and safe; the method has simple process, is beneficial to the dissolution and dispersion of the natural water-soluble extract, is suitable for the addition of various natural water-soluble functional components in the grease, and has wide market prospect.

Technical Field
The invention relates to edible oil rich in natural extracts and a production method thereof, in particular to edible oil rich in natural water-soluble extracts and a production method thereof.
Background
The addition of natural functional components to edible oil is a new subject of extensive research in the current food science community. The addition of natural functional components is beneficial to improving the quality, taste, nutrition and health care of the edible oil. However, since natural functional ingredients are mostly water-soluble and hardly dissolved in fats and oils, they are the most important obstacles to the addition of natural functional ingredients to fats and oils.
CN101066075A discloses a method for producing edible oil by adding grape seed procyanidin microemulsion, which comprises using polyglycerol monooleate as emulsifier, mixing with ethanol, adding aqueous solution of grape seed procyanidin, making into water-in-oil (W/O) microemulsion, and adding into edible oil. However, the polyglycerol monooleate and the ethanol used in the method cannot be completely miscible with the aqueous solution of the grape seed procyanidin, but form suspended particles with fine radius, namely microemulsion, so that the microemulsion is difficult to disperse in the edible oil, and the addition amount of the grape seed procyanidin in the edible oil is very small.
CN1729805A discloses a method for producing lycopene edible oil, which comprises the steps of adding fat-soluble lycopene into edible oil, heating and mixing uniformly, and then carrying out pressurization treatment. The method does not add an emulsifier, but has harsh production conditions and is not suitable for adding water-soluble substances into edible oil.
Disclosure of Invention
The invention aims to solve the technical problem of overcoming the defects in the prior art and providing the edible oil rich in the natural water-soluble extract, which is full in dissolution, uniform in dispersion, high in content, good in taste and flavor, free of layering after being placed for a long time, green and safe.
The invention further aims to solve the technical problem of overcoming the defects in the prior art and provide a production method of the edible oil rich in the natural water-soluble extract, which has simple process and is beneficial to dissolving and dispersing the natural water-soluble extract.
The technical scheme adopted by the invention for solving the technical problems is as follows: an edible oil rich in natural water-soluble extracts comprises the following raw materials: edible oil, natural water-soluble extract, gemini surfactant and solvent.
Preferably, the edible oil rich in natural water-soluble extracts comprises the following raw materials in parts by weight: 1000 parts of edible oil, 1-50 parts of natural water-soluble extract, 0.05-1.00 part of gemini surfactant and 1-12 parts of solvent. If the dosage of the natural water-soluble extract is too small, the concentration of the active ingredients of the natural water-soluble extract in the finished product is too low, and the corresponding pharmacological and health-care effects cannot be achieved; if the amount of the natural water-soluble extract is too large, it is difficult to sufficiently dissolve the extract. If the dosage of the gemini surfactant is too small, the edible oil, the natural water-soluble extract and the solvent are difficult to be uniformly and homogeneously mixed; if the amount of the gemini surfactant is too much, the cost is high and the taste is affected. If the amount of the solvent is too small, the natural water-soluble extract will be difficult to be sufficiently dissolved; if the amount of the solvent is too large, the edible oil may be turbid or delaminated. In the invention, the gemini surfactant can bring out the best in each other only when being matched with the solvent, which is beneficial to the dissolution and dispersion of the water-soluble extract, and when only the gemini surfactant or only the solvent is used, the natural water-soluble extract cannot be dissolved in the edible oil.
Preferably, the edible oil rich in natural water-soluble extracts comprises the following raw materials in parts by weight: 1000 parts of edible oil, 2-15 parts of natural water-soluble extract, 0.1-0.5 part of gemini surfactant and 4-10 parts of solvent.
Preferably, the edible oil is vegetable oil or animal oil, wherein the vegetable oil is soybean oil, rapeseed oil, peanut oil, corn oil, sesame oil, sunflower oil, camellia oil, palm oil or olive oil, and the animal oil is lard, whale oil or fish oil.
Preferably, the natural water-soluble extract is one or more of momordica grosvenori extract, immature bitter orange extract, sweet orange extract, ginkgo biloba extract, hawthorn extract, rosemary extract, medlar extract, tea extract, stevia extract or eurycoma longifolia extract.
Preferably, the content of mogroside V in the momordica grosvenori extract is 4-99% (more preferably 20-80%) by mass.
Preferably, the gemini surfactant is an amino acid type and/or glycoside type gemini surfactant. The gemini surfactant is a surfactant with two or more hydrophilic and oleophilic groups in a molecule, has the advantages of low critical micelle concentration, strong hydrophobic effect, good water solubility, strong solubilizing property, no toxic or side effect, good biocompatibility, good biodegradability and the like, has incomparable excellent activity compared with a common single-bond single-head surfactant, and utilizes the amphiphilicity of the gemini surfactant to enable a natural water-soluble extract dissolved in a solvent to be in a dissolved state in edible oil so as to realize uniform dispersion. And other types of surfactants have undesirable effects or are toxic and harmful, and are not suitable for being added into the edible oil.
Preferably, the amino acid type gemini surfactant is N, N-dilauroyl ethylenediamine sodium glutamate, and the glycoside type gemini surfactant is N, N, -dialkyl-N, N, -diglucosaminide ethylenediamine and/or lauric acid glucose ester glycol maleic acid diester.
Preferably, the solvent is water, ethanol or an aqueous alcohol solution of any concentration. Because the natural water-soluble extract has high polarity and the edible oil has low polarity, the natural water-soluble extract cannot be dissolved in the edible oil, the natural water-soluble extract is dissolved in the edible oil by using the solvent, and the gemini surfactant is used for changing the interfacial property between oil and the solvent and improving the solubility of the natural water-soluble extract in the solvent, so that the natural water-soluble extract is dissolved in the edible oil. The edible oil can dissolve a small amount of water, and the gemini surfactant exists, so that the edible oil can not be separated into layers even if water is used as a solvent.
Preferably, the volume concentration of the alcohol aqueous solution is 40-70%.
The technical scheme adopted for further solving the technical problems is as follows: a method for preparing edible oil rich in natural water soluble extract comprises adding gemini surfactant into solvent, dissolving, adding natural water soluble extract, stirring at room temperature for dissolving, adding into edible oil, and stirring at room temperature for clarifying. The gemini surfactant is added into the solvent, and the water-soluble extract is added, so that the water-soluble extract is more favorably dissolved in a small amount of solvent.
The method has the following beneficial effects:
(1) the edible oil rich in the natural water-soluble extract has the advantages that the content of the natural water-soluble extract in the edible oil rich in the natural water-soluble extract can reach 0.8%, the natural water-soluble extract is fully dissolved and uniformly dispersed in the edible oil, the appearance and the color are not different from those of common edible oil, no layering occurs after standing for 1 year, the taste and the flavor are good, the obvious improvement is realized, the specific pharmacological and health-care effects of the natural water-soluble extract are realized, the addition amount of the gemini surfactant is small, the effect is good, the edible oil is green and safe, and no toxic or side effect;
(2) the method has simple process, is beneficial to the dissolution and dispersion of the natural water-soluble extract, is suitable for the addition of various natural water-soluble functional components in the grease, and has wide market prospect.

The present invention will be further described with reference to the following examples.
The momordica grosvenori extract and the tea extract used in the embodiment of the invention are both purchased from Huacheng biological resource GmbH in Hunan; the gemini surfactants used in the embodiment of the invention are all purchased from Hubei Germany chemical Co Ltd; the starting materials or chemicals used in the examples of the present invention are, unless otherwise specified, commercially available in a conventional manner.
The method for measuring the content of mogroside V is a high performance liquid chromatography external standard method.

Examples 1-4 of an edible oil rich in natural water-soluble extracts
The weight parts of the raw materials are shown in table 1:

Examples 1-4 the natural water-soluble extract in the edible oil rich in natural water-soluble extract was dissolved sufficiently and dispersed uniformly, the appearance and color were the same as those of common edible oil, and no delamination occurred after standing for 1 year.
Examples 1 to 4 of production methods of edible oil rich in natural water-soluble extract
According to the quality of the table 1, the gemini surfactant is added into the solvent, the natural water-soluble extract is added after the gemini surfactant is dissolved, the natural water-soluble extract is added into the solvent and stirred and dissolved at room temperature, and then the natural water-soluble extract is added into the edible oil and stirred at room temperature until the mixture is clear, so that the edible oil is obtained.
The edible oil rich in the natural water-soluble extract obtained in the examples 1 to 4 is respectively used as cooking oil for cooking wax gourd and sparerib soup (2 g/500 g), stir-fried lettuce (5 g/500 g) or stewed mutton (6 g/500 g), and the dishes are cooked by the same amount of the edible oil essence without the momordica grosvenori extract. All dishes were tasted by 10 people for a test eating rating, and scored according to the rating scoring table 2, with the evaluation results shown in table 3.

As can be seen from table 3, the edible oil added with the natural water-soluble extract has substantially no difference in color compared with common commercial edible oil cooking dishes, but has significant improvement and improvement in both flavor and mouthfeel.
Claims (9)
1. The edible oil rich in natural water-soluble extracts is characterized by comprising the following raw materials in parts by weight: 1000 parts of edible oil, 1-50 parts of natural water-soluble extract, 0.05-1.00 part of gemini surfactant and 1-12 parts of solvent;
the gemini surfactant is amino acid type and/or glucoside type gemini surfactant, the amino acid type gemini surfactant is N, N-dilauroyl ethylenediamine sodium glutamate, and the glucoside type gemini surfactant is N, N, -dialkyl-N, N, -diglucosylamide ethylenediamine and/or lauric acid glucose ester glycol maleic acid diester;
the production method of the edible oil rich in natural water-soluble extract comprises the following steps: adding Gemini surfactant into solvent, dissolving, adding natural water soluble extract, stirring at room temperature for dissolving, adding into edible oil, and stirring at room temperature for clarifying.
2. The edible oil rich in natural water-soluble extracts as claimed in claim 1, wherein the weight parts of the raw materials are as follows: 1000 parts of edible oil, 2-15 parts of natural water-soluble extract, 0.1-0.5 part of gemini surfactant and 4-10 parts of solvent.

The edible oil enriched in natural water-soluble extracts according to claim 1 or 2, characterized in that: the natural water-soluble extract is one or more of fructus Siraitiae Grosvenorii extract, fructus Aurantii Immaturus extract, fructus Citri sinensis extract, folium Ginkgo extract, fructus crataegi extract, herba Rosmarini officinalis extract, fructus Lycii extract, folium Camelliae sinensis extract, sweet stevia extract or Eurycoma longifolia extract; the mass content of mogroside V in the fructus momordicae extract is 4-99%.
