Abstract
The invention discloses a phyllostachys pracecox shoot dietary fiber functional chewable tablet and a preparation method thereof. The preparation method comprises the steps of preprocessing phyllostachys pracecox shoots, preparing coarse dietary fiber powder through acid, alkali and decoloration, preparing nano cellulose through dynamic high-pressure micro-jet homogenization, and then preparing the dietary fiber chewable tablets with the antioxidant function by taking the phyllostachys pracecox shoots nano dietary cellulose as a raw material and adding dextrin, milk powder, citric acid, bamboo flavone, cane sugar and the like. The results show that the optimal conditions for preparing the phyllostachys pracecox shoot residue nanocellulose by combining the chemical method with the dynamic high-pressure microjet mechanical treatment are that the phyllostachys pracecox shoot residue nanocellulose is homogenized for 3 times, 2 times and 1 time respectively at 40MPa, 80MPa and 100 MPa. The content, physicochemical properties and biological activity of soluble dietary fiber in the nano-cellulose are improved. The chewable tablet is convenient to carry and eat, can effectively supplement the situation of insufficient intake of dietary fiber in daily diet, is suitable for different crowds, and has certain antioxidant capacity.
Description
Technical Field
The invention belongs to the technical field of functional food preparation, and relates to a phyllostachys pracecox shoot dietary fiber chewable tablet with antioxidant activity and a preparation method thereof.
Background
Chewable tablets are generally tablets that are manufactured by the pharmaceutical industry to be easily carried and taken by patients, and which have an increased surface area through chewing and are better dissolved and absorbed in the body. Along with the continuous improvement of living standard, the acceptance degree of the public to the chewable tablets is further improved, and the chewable tablets not only stay in medicinal preparations, but also have leisure and health-care functions. The formula process is most important in the production of the chewable tablet, and the formula not only directly influences the sensory quality of the formed chewable tablet, but also highlights the important indexes of different chewable tablet processes. At present, the preparation of the chewable tablets from dietary fibers serving as raw materials is still in a continuous exploration stage by using more leisure or health-care foods mainly comprising milk tablets and composite fruit and vegetable chewable tablets. The chewable tablet has simple preparation process, and the production of the chewable tablet by machines such as a mixing tank, a tablet press and the like in the modern process can meet the industrialized requirement. The dietary fiber is 'the seventh nutrient' after water, protein, fat, mineral, vitamin and carbohydrate, and has physiological functions of reducing blood sugar, preventing constipation, colon cancer and cardiovascular diseases, treating obesity, adsorbing heavy metal, resisting oxidation activity and the like. The nanometer dietary fiber prepared by combining a chemical method with a dynamic high-pressure micro-jet technology has small granularity and large surface area, so that the activity and the adsorption performance of the dietary fiber are further improved, and the nanometer dietary fiber has higher use value. At present, the research on the nano dietary fiber is mostly focused on the aspects of composite materials, acoustic materials, food packaging materials, drug carriers and the like. Because the particle size is small, the surface area is large, the dietary fiber can be used as a novel dietary fiber to be applied to the field of food, on one hand, the strong water holding capacity and the oil and fat adsorption capacity of the dietary fiber are better exerted, so that the health of gastrointestinal tracts is promoted, the speed of intestinal contents passing through intestinal tracts is accelerated, the effects of increasing the weight of excrement and promoting defecation are achieved, oil and bile salt are absorbed, the absorption of human body oil and the synthesis of cholesterol are reduced, and on the other hand, the biological activity function of the dietary fiber is better exerted.
The phyllostachys praecox shoots are excellent edible bamboo species of Phyllostachys of Bambusoideae of Gramineae, have the characteristics of early bamboo shoot emergence, high yield, long bamboo shoot period, delicious bamboo shoot taste, high benefit, strong adaptability and the like, and have higher nutrition and commodity value. At present, the deep processing of the phyllostachys pracecox shoots and the research, development and utilization of effective active ingredients of the phyllostachys pracecox shoots are less. Scholars at home and abroad respectively conduct preliminary exploration and research on the nutritional value and comprehensive utilization of the phyllostachys pracecox shoots and processing wastes. The phyllostachys pracecox shoots are rich in dietary fiber and are high-quality fibers.
