Detailed Description
The present invention will be described in further detail with reference to specific examples, but the present invention is not limited to these examples.
The invention discloses a coconut water sports drink containing natural electrolytes and a preparation method thereof, and the coconut water sports drink prepared by the preparation method has excellent taste and rich natural electrolytes; the reason for realizing the natural electrolyte coconut water sports drink is mainly that the preparation method of the natural electrolyte coconut water sports drink is optimized and innovated, and the raw material formula is optimized and combined, and the specific description is as follows:
firstly, the preparation method of the invention is adopted to prepare the coconut water sports drink containing natural electrolytes
Examples 1 to 5 coconut water sports beverages containing natural electrolytes were prepared according to the weight percentages of the raw materials shown in table 1, and according to the following steps 1) to 6):
step 1): weighing coconut water with a formula amount, putting the coconut water into proper amount of RO water with the temperature of 60-100 ℃, uniformly stirring and mixing the coconut water by using a high-speed stirrer, adding an acidity regulator with the formula amount, and continuously stirring and uniformly mixing the coconut water to obtain a coconut water primary liquid; in the preparation process of the initial coconut water liquid, the coconut water is turbid liquid formed by shelling and concentrating coconut, and electrolytes contained in the coconut water comprise sodium ions, potassium ions, calcium ions and magnesium ions, wherein the content of the sodium ions is 2000-10000 mg/kg, and the content of the potassium ions is 10000-40000 mg/kg; the temperature of the used RO water is preferably controlled to be 85-95 ℃, and the material-water ratio of the coconut water to the used RO water is controlled to be 1: 10-30; the acidity regulator is at least one of citric acid, malic acid, phosphoric acid and sodium citrate;
filtering the obtained coconut water primary liquid by 200 meshes, rapidly cooling to not higher than 15 ℃ after filtering, and then placing the cooled coconut water primary liquid in a disk centrifuge for centrifugal treatment to remove impurities to obtain coconut water clarified liquid with turbidity of 1-20 NTU for later use; wherein the working parameters of the disk centrifuge are as follows: the rotating speed is controlled to be 3000 rpm-8000 rpm;
step 2): weighing the white granulated sugar with the formula ratio, putting the white granulated sugar into proper amount of RO water with the temperature of 50-60 ℃, uniformly stirring and dissolving the white granulated sugar by using a high-speed stirrer, and then filtering the mixture by using a 200-mesh sieve to obtain sugar liquor for later use;
step 3): weighing the salt lemon juice concentrated main agent according to the formula ratio, putting the salt lemon juice concentrated main agent into proper amount of RO water at the temperature of 50-60 ℃, stirring and dissolving the salt lemon juice uniformly by using a high-speed stirrer, and then filtering the salt lemon juice by using a 200-mesh sieve to obtain salt lemon juice for later use; in the invention, the salt lemon juice concentrated main agent is prepared by adopting a preparation method disclosed by the patent number 201410377331.7, and the specific preparation method is not detailed here;
step 4): weighing the edible essence according to the formula ratio, putting the edible essence into proper amount of RO water at the temperature of 50-60 ℃, and uniformly stirring and dissolving the edible essence by using a high-speed stirrer to obtain an essence solution for later use;
step 5): mixing the solutions prepared in the steps 1) to 4), and stirring and mixing uniformly to obtain a beverage preparation solution with a pH value of 3-4;
step 6): performing UHT sterilization treatment on the obtained beverage preparation liquid for 10-45 s at the sterilization temperature of 105-120 ℃; cooling to normal temperature after sterilization, and filling into a packaging container to obtain the coconut water sports beverage containing natural electrolytes, wherein the physical and chemical parameters are as follows: the soluble solid content is 3.0-8.0 g/100g, the sodium ion content in the electrolyte is 50-1200 mg/l, and the potassium ion content is 50-250 mg/l.

Secondly, preparing the traditional sports beverage
The sports drink in the current market is mainly divided into two types, wherein the first type is prepared by taking electrolytes (sodium chloride and potassium chloride) as main materials and adding various auxiliary materials such as saccharides, sour agents, edible essence and the like; the second one is prepared with vitamins (vitamin C, vitamin B3, vitamin B6) as main material and added sugar, sour agent, edible essence and other supplementary material. Examples are as follows:
comparative example 1:
according to the weight percentage, 0.1 percent of electrolyte (sodium chloride and potassium chloride), 7 percent of white granulated sugar, 0.3 percent of citric acid, 0.06 percent of edible pigment and 0.1 percent of edible essence are sequentially added into 92.44 percent of water, stirred and dissolved, and then the mixture is filled and sterilized after being uniformly mixed, thus obtaining the first traditional electrolyte sports drink.
Comparative example 2:
according to the weight percentage, 0.1 percent of vitamin (vitamin C, vitamin B3 and vitamin B6), 7 percent of white granulated sugar, 0.3 percent of citric acid, 0.06 percent of edible pigment and 0.1 percent of edible essence are sequentially added into 92.44 percent of water, stirred and dissolved, and the second traditional electrolyte sports drink is prepared after filling and sterilization after even mixing.
In addition to the two comparative exceptions, a comparative example 3 is provided, wherein the comparative example 3 has the same raw material formula and similar preparation method as the example 3, and the only difference is that: the coconut water initial liquid in the comparative example 3 is not centrifuged, and the rest process conditions are not changed.
Thirdly, product sensory evaluation and physical and chemical detection
1) Sensory evaluation of the product
The coconut water sports beverages containing natural electrolytes prepared in examples 1 to 5 of the present invention, the conventional sports beverages prepared in comparative examples 1 to 2, and the comparative sports beverage prepared in comparative example 3 were subjected to sensory evaluation, and the test results were as follows: table 2 is sensory evaluation criteria (including taste preference evaluation) for sports beverages; table 3 shows the results of sensory evaluation of the natural electrolyte-containing coconut water sports beverages of examples 1 to 5 of the present invention, the conventional sports beverages of comparative examples 1 to 2, and the comparative sports beverage of comparative example 3 with respect to taste preference.

Combining tables 2 and 3, it can be seen that: the coconut water sports drink prepared by the embodiment of the invention has extremely high taste preference scores, and particularly, different from the coconut water sports drink prepared by the comparative examples 1 and 2, which is prepared by adding a chemical additive or a nutrition enhancer to serve as an electrolyte source of the sports drink, the coconut water sports drink prepared by the embodiment of the invention contains abundant natural electrolytes and meets the standard of healthy diet.
Compared with the traditional sports drink, the coconut water sports drink prepared by the invention is more popular with consumers, and mainly benefits from the fact that the coconut water sports drink has excellent mouthfeel and rich natural electrolyte content, the coconut water added into the raw material formula of the invention is turbid liquid formed by shelling and concentrating coconut, the coconut water contains high natural electrolyte, wherein the content of sodium ions is 2000-10000 mg/L, the content of potassium ions is 10000-40000 mg/L, a chemical additive or a nutrition enhancer added into the traditional sports drink can be well replaced, the natural and healthy end products of the invention are ensured, the mouthfeel of the end products of the invention is not influenced, the mouthfeel of the end products of the invention is more natural and refreshing, the coconut water used in the invention is subjected to acid treatment in sequence before being mixed and prepared with raw materials such as a saline lemon juice concentrate, white granulated sugar, edible essence and the like, the mouthfeel of the coconut water prepared by the invention is more natural and refreshing, the coconut water is subjected to rapid filtration treatment, cooling treatment, the turbidity is subjected to the RO treatment, the final clarified coconut water prepared by the addition of a salt concentrate, the white granulated sugar, the edible essence and the edible essence are mixed with the salt concentrate, the ammonium citrate concentrate, the coconut water is prepared by the ammonium citrate concentrate, the ammonium sulfate concentrate, the.
2) Physical and chemical detection of products

As can be seen from Table 4, the coconut water sports beverage containing natural electrolytes prepared in the embodiments 1 to 5 of the present invention has a soluble solid content, a sodium ion content and a potassium ion content all meeting the requirements of the national standard GB15266, and has a high nutritional value.
In conclusion, the coconut water sports drink prepared by optimizing the raw material formula and the preparation method has good taste, rich natural electrolytes and high nutritional value; the product obtained in the embodiment 3 is optimal, and has wide market prospect and market benefit.

Claims (2)
1. A preparation method of a coconut water sports beverage containing natural electrolytes is characterized by comprising the following steps: mainly comprises the following preparation steps:
step 1): the coconut water sports drink containing the natural electrolyte comprises the following raw materials in percentage by mass: 0.5-1.2 percent of coconut water, 0.02-0.15 percent of citric acid, 3-5 percent of white granulated sugar, 0.3-0.8 percent of salt lemon juice concentration main agent, 0.1-0.15 percent of edible essence and the balance of RO water;
firstly, weighing coconut water according to a formula amount, wherein the coconut water is turbid liquid formed by shelling and concentrating coconut, the sodium ion content of the coconut water is 2000-10000 mg/kg, and the potassium ion content of the coconut water is 10000-40000 mg/kg; adding coconut water with a formula amount into proper RO water with the temperature of 85-95 ℃, controlling the material-water ratio of the coconut water to the used RO water to be 1: 10-30, adding citric acid with the formula amount after uniformly stirring and mixing, and continuously stirring and uniformly mixing to obtain coconut water primary liquid; filtering the obtained coconut water primary liquid, rapidly cooling to not higher than 15 ℃ after filtering, and then placing the cooled coconut water primary liquid in a disk centrifuge for centrifugal treatment, wherein the rotating speed of the disk centrifuge is controlled to be 3000-8000 rpm to remove impurities, so as to obtain a coconut water clarified liquid with turbidity of 1-20 NTU for later use;
step 2): weighing the white granulated sugar with the formula ratio, putting the white granulated sugar into proper amount of RO water with the temperature of 50-60 ℃, stirring and dissolving the white granulated sugar uniformly, and then filtering the mixture to obtain sugar liquor for later use;
step 3): weighing the salt lemon juice concentrated main agent according to the formula ratio, putting the salt lemon juice concentrated main agent into proper RO water at the temperature of 50-60 ℃, stirring and dissolving the salt lemon juice uniformly, and then filtering the salt lemon juice to obtain salt lemon juice for later use;
step 4): weighing the edible essence according to the formula ratio, putting the edible essence into proper amount of RO water at the temperature of 50-60 ℃, and uniformly stirring and dissolving to obtain an essence solution for later use;
step 5): mixing the solutions prepared in the steps 1) to 4), and stirring and mixing uniformly to obtain a beverage preparation solution with a pH value of 3-4;
step 6): performing UHT sterilization treatment on the obtained beverage preparation liquid for 10-45 s at the sterilization temperature of 105-120 ℃; cooling to normal temperature after sterilization, and filling into a packaging container to obtain the natural electrolyte-containing coconut water sports beverage, wherein the physical and chemical parameters of the natural electrolyte-containing coconut water sports beverage are as follows: the soluble solid content is 3.0-8.0 g/100g, the sodium ion content in the electrolyte is 50-1200 mg/l, and the potassium ion content is 50-250 mg/l.
2. A coconut water sports drink containing natural electrolytes is characterized in that: the natural electrolyte-containing coconut water sports beverage as claimed in claim 1.
