本发明涉及一种食品豆腐,特别是一种板豆腐。
背景技术
板豆腐目前在市面比较常见,主要供应大量使用豆腐的农贸市场和团购客户,属于散装产品无严密包装,故随时间的推移,豆腐中的水分会逐步脱离豆腐内部组织结构形式而游离到豆腐外层,即常见的“出水”问题,从而影响了豆腐的保质期、质量、成本,同时也会造成客户满意度的下降。
发明内容
本发明主要解决的技术问题是提供一种板豆腐,解决了板豆腐因出水问题而造成的豆腐质量低下。
    为解决上述技术问题,本发明采用的一个技术方案是:提供一种板豆腐,所述卤水豆腐的原料配方由下列质量百分含量的材料组成:
       水                    88.00%;
         大豆                  11.40%;
         马铃薯淀粉             0.33%;
         石膏                   0.02%;
     葡萄糖酸内酯           0.25%。
本发明的有益效果是:提供一种板豆腐,采用最合适的材料比例,增加了板豆腐的持水性问题,减少了板豆腐在保存过程中出现的出水问题,提高大豆的出品率。
