Description
Verfahren zur Darstellung- von Karamel. Vorliegende Erfindung bezieht sich auf jene Verfahren zur Herstellung von Karamel, bei welchen der Zucker in Gegenwart inver tierend wirkender Säure erhitzt wird, mid ist dadurch gekennzeichnet, dar die in wiissrigei- Lösung zugesetzte Säure 0,03- 0,10,/o der behandelten Zuckermenge beträgt und die Erhitzung höchstens bis 1d'0 Celsius getrieben wird.
Als invertierender Zusatz wird mit be sonders vorteilhafter Wirkung Salzsäure ver wendet.
Die Konzentration der Ztiekerliisung ist von dem beabsichtigten Invertierungsgrade abhängig. Selbstverständlich beschränkt sich dieses Verfahren nicht nur auf Rübenzucker, sondern auf alle Biosen und andere Zucker arten, welche bei Zersetzung Kararriel liefern. Auch Dextrose verhält sich beim Karaineli- eieren in Gegenwart freier Säure ähnlich.
Um die Karamelbildung rasch durchzu- führen, ist es zweckmässig, dar die Reaktions masse deutlich sauer reagiere. Die Säurernenge ist von der Natur des zu verarbeitenden Zuckers abhängig und beträgt bei Raffinade, also nahezu chemisch reinem Kristallzucker, etwa 1-'2 "/,. einer "igen HCI Lösung, bei liohziickei-, welcher alkalisch reagiert, etwas mehr;
nach erfolgter Karamehsierung kann die Säure neutralisiert werden, doch ist dies nicht unbedingt erforderlich.
Die vollständige Karainelisierung erfolgt hierbei bereits bei 11-3-139' C und kann sogar bei Verarbeitung vollständig invertier ter Zuckermasse schon bei 120, bezw. 125 o C beendet sein; der hierbei auftretende Substanz verlust betrügt hiichsteris 100;e, und die Menge der Zersetzungsgase ist eine derart. geringe, (ia1.) Entlüftungseinrichtungen ent behrlich sind.
Das Verfahren ergibt grosse bis 251)/0 der verarbeitenden Menge reichende Zuckerer- sparnis und ebenso eine erhebliche Ersparnis an Brennmaterial, weil der Prozess rascher lind bei wesentlich niedrigeren Temperaturen verläuft, wie bei den bis nein angewendeten Verfahren.
Weitere Vorteile liegen in der müAichsten Erhaltung des Nährwertes des Zuckers, sowie in der geschmacklichen Ver- bes,#erung des Karamels durch Verhinderung der Bildung von Röstbitter und Zuckerkohle.
