Abstract
Die Erfindung offenbart ein Verfahren zur Zartmachung von vorgefertigtem Rindergulasch und zum Verbessern dessen Qualität mittels Mikrowellenwiedererwärmung und gehört zum technischen Gebiet der Fleischproduktverarbeitung. In der Erfindung wird das aufgetaute rohe Rindfleisch mit Messerseite für 30 Sekunden geklopft, anschließend in die Ultraschall-unterstützte Papainlösung eingetaucht und eine Vorbehandlung der Zartmachung wird durchgeführt. Während dem Kochen werden den Hilfsstoffen Tee-Polyphenole und Bayberry-Polyphenole anteilig hinzugegeben und das gekochte Rindergulasch mit Brühe wird in einem hochtemperaturbeständigen Kochbeutel vakuumverpackt und in einem 4°C-Kühlraum gelagert. Im Vergleich zum Rindergulasch ohne Vorbehandlung der Zartmachung kann die Zartheit bei dem erfindungsgemäßen Produkt des Rindergulasches während der Kaltlagerung gut gehalten werden. Wegen der Zartmachung und der Zugabe des Antioxidationsmittels hat das Rindergulasch nach abwechselnder Wiedererwärmung mit der Mikrowelle 915MHz/2450MHz somit eine stärkere rote und hellere Farbe. Der Grad der Fettoxidation ist auf 30% bis 40% reduziert. Das Magerfleisch ist mäßig weich, aber nicht trocken und elastisch, und das Fettfleisch schmilzt im Mund.
