Abstract
Die Erfindung offenbart ein Verfahren zur Zartmachung von vorgefertigtem Rindergulasch und zum Verbessern dessen Qualität mittels Mikrowellenwiedererwärmung und gehört zum technischen Gebiet der Fleischproduktverarbeitung. In der Erfindung wird das aufgetaute rohe Rindfleisch mit Messerseite für 30 Sekunden geklopft, anschliessend in die Ultraschall-unterstützte Papainlösung eingetaucht und eine Vorbehandlung der Zartmachung wird durchgeführt. Während des Kochens werden den Hilfsstoffen Tee-Polyphenole und Bayberry-Polyphenole anteilig hinzugegeben und das gekochte Rindergulasch mit Brühe wird in einem hochtemperaturbeständigen Kochbeutel vakuumverpackt und in einem 4-°C-Kühlraum gelagert. Im Vergleich zum Rindergulasch ohne Vorbehandlung der Zartmachung kann die Zartheit bei dem erfindungsgemässen Produkt des Rindergulasches während der Kaltlagerung gut gehalten werden. Wegen der Zartmachung und der Zugabe des Antioxidationsmittels hat das Rindergulasch nach abwechselnder Wiedererwärmung mit der Mikrowelle 915 MHz/2450 MHz somit eine stärkere rote und hellere Farbe. Der Grad der Fettoxidation ist auf 30% bis 40% reduziert. Das Magerfleisch ist mässig weich, aber nicht trocken und elastisch, und das Fettfleisch schmilzt im Mund. Das aufgetaute grossstückige Rindfleisch wird mit Messerseite für 30 Sekunden geklopft, damit das Rindfleisch eine lockere Textur erhält. Das grossstückige rohe Rindfleisch wird in 3x3x3 cm—4x4x4 cm quadratische Fleischstücke geschnitten. In der ersten Stufe beträgt die Ultraschallleistung 40 W, die Frequenz 20 kHz und die Behandlungszeit 15 Minuten. In der zweiten Stufe beträgt die Ultraschallleistung 150 W und die Frequenz 40 kHz und die Behandlungszeit wieder 15 Minuten. Die Rindfleischstücke werden aus der Papainlösung herausgenommen, zweimal mit Wasser abgespült und abgetropft. Nachdem das Wasser zum Kochtopf mit einer Zwischenschicht hinzugefügt und das Dampfventil geöffnet wird, werden die Fleischstücke bei Luftdruck von 1 MPa für 45 Minuten erwärmt. Beim Sieden des Wassers werden die Rinderstücke ins Wasser gelegt. Mit dem Löffel wird das Wasser mit den Rinderstücken 10 Mal in einer Minute gerührt und nach Vorkochen von 20 Minuten in siedendem Wasser soll der schwimmende Schaum entfernt werden. Die Rindfleischstücke werden herausgenommen und für 5 Minuten mit fliessendem Wasser abgespült, bis sie sauber gespült sind. Nachdem das Gasventil des Kochtopfs mit einer Zwischenschicht geöffnet wird und der Druck 0,1 MPa beträgt, werden 80 g Salatöl, 80 g Lauchzwiebel, 80 g Ingwer hinzugefügt und für 4 Minuten angebraten. Die in siedendem Wasser vorgekochten Rindfleischstücke werden hinzugefügt und für 8 Minuten angebraten. Dazu werden Wasser 3 kg, Tee-Polyphenole 0,8 g, Bayberry-Polyphenole 1,2 g, dunkle Sojasosse 8 g, Salz 8 g, raffinierter Weisszucker 40 g, Tomatensosse 40 g, Glutamat 12 g, Huhn Essenz 12 g, Chilisosse 12 g, Sternanis 8 g, Lorbeerblätter 4 g, Zimt 6 g, getrocknete Chili 8 g, getrocknete Mandarinenschale 12 g und chinesischer Blütenpfeffer 8 g hinzugefügt und gekocht, bis der Ventildruck ca. 0,5 MPa erreicht. Bei Sieden der Marinade wird der Deckel geschlossen, der Druck des Gasventils wird auf 0,3 MPa eingestellt und die Rindfleischstücke werden 2 Stunden lang geknetet. Das Rindfleisch wird herausgenommen, in eine Edelstahlschale gelegt und danach in einen luftgekühlten Lagertank zum Abkühlen gestellt, bis die Temperatur unter 10 °C liegt. Nach dem Abkühlen wird das Rindergulasch derart mit Vakuumbeutel vakuumverpackt, dass fünf Fleischstücke mit Zugabe der Brühe in die jeweiligen Beutel gefüllt werden, wobei das Verhältnis von Rindergulasch zu Brühe 4:1 beträgt. Der Beutel wird für 18 Sekunden bei einem Druck von -0,15 bis -0,1 MPa unter Verwendung einer Vakuumverpackungsmaschine vakuumgesaugt und bei einer mittleren Temperatur von 80-90 °C in 1,8 Sekunden versiegelt. Nach Vervollständigung der Verpackung wird das Rindergulasch bei 4 °C kühl gelagert. Wenn das Rindergulasch durch Mikrowellen wieder erwärmt werden soll, soll ein Vakuumbeutel zuerst geöffnet und das Rindergulasch darin zum Wiedererwärmen in eine Mikrowellen-Konservierungsschale gegossen werden.
