Abstract

The cutter is intended for dividing set milk (curds) into pieces by rotating it in the cylindrical vessel containing the curds whilst it revolves about its own axis. It comprises a (rectangular) frame carrying at least one set of parallel cutting blades at least approximately parallel to the rotational axes. The frame may contain three superimposed blade sets separated by cross-members of the frame and the respective blade spacings may be different, preferably increasing in downward direction. The blades pref. consist of, e.g. 15 mm wide, steel strips with cutting edges. USE/ADVANTAGE - One of a number of such cutters revolvingly rotating the (heatable) vessel. The cutter produces a minimum amt. of fine (fusty) material which would be lost in the whey.

   BESCHREIBUNG



   Die vorliegende Erfindung betrifft eine Schneidharfe zum Zerkleinern von Gallertmasse, insbesondere eingedickte Milch beim Verkäsen nach dem Oberbegriff des unabhängigen Patentanspruches 1.



   Bei der Käseherstellung wird bekanntlich nach der Dicklegung der Milch, die nach Zusatz von Lab bewirkt wird, die Dickete zerschnitten. Die zerkleinerten Teile, als Käsebruch bezeichnet, schrumpfen durch Abgabe von Sirte zusammen und bei Erreichen eines gewünschten Zustandes wird der Käsebruch aus der Sirte entnommen.



   Die zum Zerschneiden benützten Schneidharfen müssen durch die gesamte Masse gezogen werden, damit auch wirklich an jeder Stelle im Gefäss Käsebruch entsteht. Eine solche Harfe ist beispielsweise in der CH-A-474 946 beschrieben. Es werden deshalb mehrere Harfen kreisend um eine gemeinsame Mittelachse gedreht und selbst noch um eine eigene Achse rotiert. Dazu werden Planetengetriebe verwendet.



  In der CH-A-587 608 wurde ein derartiger Antrieb beschrieben. Dabei soll durch Schrägstellung der Planetenwelle bezüglich der Hauptantriebswelle und Ausrichtung der Planetenwelle auf den Kulminationspunkt der Wölbung des Gefässbodens bewirkt werden, dass einerseits keine toten Räume im Gefäss entstehen und ferner soll vermieden werden, dass der Inhalt selbst zum Rotieren kommt.



   Es hat sich jedoch gezeigt, dass durch eine Harfe, bei der in einem Rahmen parallele Drähte angeordnet sind, neben dem Käsebruch noch sogenannter Staub entsteht, der bei der Entnahme des Käsebruchs in der Sirte bleibt und einen Verlust darstellt. Dieser Verlust kann in der Grössenordnung von 10% liegen.



   Es ist deshalb eine Aufgabe der Erfindung eine Schneidharfe zu schaffen, bei der kein oder höchstens ein unwesentlich kleiner Teil Staub entsteht.



   Erfindungsgemäss wird dies durch die Merkmale im kennzeichnenden Teil des unabhängigen Patentanspruches 1 erreicht.



   Ein Ausführungsbeispiel der Erfindung wird nachfolgend anhand der Zeichnung erläutert. Es zeigen:
Fig. 1 eine Ansicht auf eine Harfe, und
Fig. 2 eine Schnittansicht gemäss der Schnittlinie   II - II    in Fig. 1 in vergrössertem Massstab.



   Vor einer Vorrichtung zum Schneiden von Gallertmasse gemäss CH-A-587 608, bestehend aus einem heizbaren zylindrischen Gefäss mit sphärisch bombierten Boden und einem darüber befindlichen jochartigen Träger mit dem Antrieb für mehrere Schneidharfen, ist hier nur eine Schneidharfe dargestellt. Vom nicht dargestellten Planetengetriebe aus ist eine Traverse 10 als Tragarm für die Schneidharfe 11 gezeigt. An dieser Traverse 10 ist ein zylindrisches Drehgelenk 12 befestigt, damit die Harfe 11 in einer geeigneten Grundstellung bezüglich der Traverse 10 eingestellt werden kann. Die Harfe 11 selbst ist an einem zweischenkligen Tragarm 13 befestigt.



   Die Schneidharfe 11 besteht aus einem starren Rahmen 20 mit zwei Querstreben 21, 22. Obwohl diese Querstreben 21, 22 äquidistant gezeichnet sind, können die Abstände auch ungleich sein. Zwischen oberem horizontalem Rahmenteil 23 und oberer Querstrebe 21 ist eine erste Schar 25 vertikaler Messer 28, zwischen oberer Querstrebe 21 und unterer Querstrebe 22 eine zweite Schar 26 vertikaler Messer 28 und zwischen unterer Querstrebe 22 und unterem horizontalem Rahmenteil 24 ist eine dritte Schar 27 vertikaler Messer 28 vorhanden.



   Die Messer 28 jeder Schar 25, 26, 27 sind hier unter sich gleich und in jeder Schar sind von oben nach unten betrachtet etwa die Hälfte Messer der vorangehenden Schar enthalten.



   Wie Fig. 2 zeigt, sind die Messer 28 wenigstens in Bewegungsrichtung betrachtet vorn mit einer Schneide 29 versehen.

 

   Während der Bewegung der Schneidharfen gemäss diesem Vorschlag, durchschneiden die Messer 28 die Masse und es werden keine Krümel gebildet, die sonst entstehen, wenn die Drähte der bisher bekannten Schneidharfen durch die Dickete gedrückt werden. Damit entsteht praktisch kein Staub und der Verlust wird auf ein Minimum reduziert.



   Obwohl in diesem Ausführungsbeispiel drei Scharen 25, 26, 27 mit unterschiedlichen Anzahlen von Messern 28 in jeder Schar dargestellt wurde, könnte selbstverständlich nur eine oder zwei Scharen vorgesehen sein, oder es könnten auch mehr als drei Scharen sein, je nach dem Fassungsvermögen des Gefässes und der Art des Käses, der herzustellen ist.



   Als Material für die Messer kann irgend ein Bandmaterial verwendet werden, insbesondere hat sich Stahlband mit einer Breite von 15 mm als geeignet erwiesen. 



  
 



   DESCRIPTION



   The present invention relates to a cutting harp for crushing gelatinous mass, in particular thickened milk when cheesing, according to the preamble of independent patent claim 1.



   In cheese production, it is known that after the milk has been thickened, which is caused by the addition of rennet, the thicket is cut up. The shredded parts, referred to as cheese curd, shrink by dispensing sirte and when a desired state is reached, the cheese curd is removed from the sirte.



   The cutting harps used for cutting must be pulled through the entire mass so that cheese curd really occurs at every point in the vessel. Such a harp is described, for example, in CH-A-474 946. Several harps are therefore rotated in a circle around a common central axis and even rotated around their own axis. Planetary gears are used for this.



  Such a drive has been described in CH-A-587 608. By slanting the planetary shaft with respect to the main drive shaft and aligning the planetary shaft with the culmination point of the curvature of the vessel bottom, on the one hand no dead spaces are created in the vessel and furthermore it is to be avoided that the content itself rotates.



   However, it has been shown that a harp, in which parallel wires are arranged in a frame, produces so-called dust in addition to the curd, which remains in the sirte when the curd is removed and represents a loss. This loss can be of the order of 10%.



   It is therefore an object of the invention to provide a cutting harp in which no or at most an insignificantly small part of dust is produced.



   According to the invention this is achieved by the features in the characterizing part of independent claim 1.



   An embodiment of the invention is explained below with reference to the drawing. Show it:

   In front of a device for cutting gelatinous mass according to CH-A-587 608, consisting of a heatable cylindrical vessel with a spherically convex bottom and a yoke-like support located thereon with the drive for several cutting harps, only one cutting harp is shown here. A traverse 10 is shown as a support arm for the cutting harp 11 from the planetary gear, not shown. A cylindrical swivel joint 12 is fastened to this cross member 10 so that the harp 11 can be adjusted in a suitable basic position with respect to the cross member 10. The harp 11 itself is attached to a two-legged support arm 13.



   The cutting harp 11 consists of a rigid frame 20 with two cross struts 21, 22. Although these cross struts 21, 22 are drawn equidistantly, the distances can also be unequal. Between the upper horizontal frame part 23 and the upper cross strut 21 is a first set 25 of vertical knives 28, between the upper cross strut 21 and the lower cross strut 22 a second set 26 of vertical knives 28 and between the lower cross strut 22 and the lower horizontal frame part 24 is a third set 27 of vertical knives 28 available.



   The knives 28 of each group 25, 26, 27 are here identical to each other and, viewed from top to bottom, each group contains approximately half the knives of the previous group.



   As FIG. 2 shows, the knives 28 are provided with a cutting edge 29, at least when viewed in the direction of movement.

 

   During the movement of the cutting harps according to this proposal, the knives 28 cut through the mass and no crumbs are formed which would otherwise arise when the wires of the previously known cutting harps were pressed through the thicket. This means there is practically no dust and the loss is reduced to a minimum.



   Although in this exemplary embodiment three sets 25, 26, 27 with different numbers of knives 28 were shown in each set, only one or two sets could of course be provided, or there could be more than three sets, depending on the capacity of the vessel and the type of cheese to be made.



   Any band material can be used as the material for the knives, in particular steel band with a width of 15 mm has proven to be suitable.


    

Claims (7)

PATENTANSPRÜCHE 1. Schneidharfe zum Zerkleinern von Gallertmasse, insbesondere eingedickte Milch beim Verkäsen, welche Schneidharfe in einem zylindrischen Gefäss mittels eines Rührwerks kreisend und rotierend angetrieben ist, dadurch gekennzeichnet, dass in einem Rahmen (20) wenigstens eine Schar parallel zueinander und wenigstens angenähert parallel zur Rotationsachse angeordnete Schneidmesser (28) vorhanden sind.  PATENT CLAIMS 1. cutting harp for comminuting gelatinous mass, in particular thickened milk during cheese-making, which cutting harp is driven in a rotating and rotating manner in a cylindrical vessel by means of an agitator, characterized in that in a frame (20) at least one coulter is parallel to one another and at least approximately parallel to the axis of rotation arranged cutting knives (28) are present. 2. Schneidharfe nach Patentanspruch 1, dadurch gekennzeichnet, dass drei Scharen (25, 26, 27) Schneidmesser (28) in Richtung der Rotationsachse betrachtet untereinander angeordnet sind und jeweils mittels je einer an den Rahmenteilen befestigten Querstrebe (21, 22) voneinander getrennt sind.  2. Cutting harp according to claim 1, characterized in that three coulters (25, 26, 27) of cutting blades (28), viewed in the direction of the axis of rotation, are arranged one below the other and are each separated from one another by means of a cross strut (21, 22) attached to the frame parts .   3. Schneidharfe nach Patentanspruch 2, dadurch gekennzeichnet, dass die Abstände zwischen den Messern (28) der verschiedenen Scharen (25, 26, 27) unterschiedlich sind.  3. Schneidharfe nach Patentanspruch 3, dadurch gekennzeichnet, dass die Abstände zwischen den Messern (28) in den Scharen (25, 26, 27) von oben nach unten grösser sind.  4. Schneidharfe nach einem der Patentansprüche 1 bis 4, dadurch gekennzeichnet, dass die Messer (28) geschärft sind.  5.
