PATENTANSPRÜCHE
1. Verfahren zum Aufbereiten von Nougatmassen, dadurch gekennzeichnet, dass die Nougatmasse kontinuierlich temperiert wird, indem die zunächst noch flüssige Nougatmasse vorkristallisiert, anschliessend kontinuierlich zum Erstarren gebracht und die erstarrte Masse kontinuierlich plastifiziert und zur Verarbeitungsstelle weiterbefördert wird.
2. Verfahren nach Anspruch 1, dadurch gekennzeichnet, dass die Vorkristallisation, die Abkühlung der Masse bis zur Erstarrung und deren anschliessende Plastifizierung in einem kontinuierlich bewegten Massestrom erfolgen.
3. Verfahren nach Anspruch 1 und 2, dadurch gekennzeichnet, dass die Masse bei der Vorkristallisation bis zu einem Punkt abgekühlt wird, an dem sie noch flüssig bleibt.
4. Verfahren nach Anspruch 1 bis 3, dadurch gekennzeichnet, dass die Masse nach der Vorkristallisation gleichmässig gemischt und verteilt wird.
5. Verfahren nach Anspruch 1 bis 4, dadurch gekennzeichnet, dass die Masse während der Vorkristallisation, der Plastifizierung und ihrer Förderung zur Verarbeitungsstelle thermisch überwacht und behandelt, d. h. dem jeweils gewünschten Zustand entsprechend erwärmt oder gekühlt wird.
6. Verfahren nach Anspruch 1 bis 5, dadurch gekennzeichnet, dass die Masse wegelos aus einer Bearbeitungszone in die folgende überführt wird.
7. Vorrichtung zur Durchführung des Verfahrens gemäss Anspruch 1 bis 6, gekennzeichnet durch eine Vorrichtung (5, 6) zur Vorkristallisation der aus einem Vorratsbehälter (1, 3) zugeführten Nougatmasse (2), einen an diese Vorrichtung (5, 6) angeschlossenen Erstarrungsbehälter (11, 12) für die vorkristallisierte Masse (13) und eine diesem nachgeschaltete Plastifizierungsvorrichtung (14, 15) für die erstarrte Nougatmasse mit einem zur Weiterverarbeitungsstelle (17) führenden Auslauf (16).
8. Vorrichtung nach Anspruch 7, dadurch gekennzeichnet, dass die Vorkristallisationsvorrichtung (5, 6), der Erstarrungsbehälter (11, 12) und die Plastifizierungsvorrichtung (14, 15) wegelos, d. h. unter Vermeidung von Förderleitungen ineinander übergehen.
9. Vorrichtung nach Anspruch 8, dadurch gekennzeichnet, dass zwischen Vorkristallisationsvorrichtung (5, 6) und Erstarrungsbehälter (11, 12) eine Misch- und Verteilungsvorrichtung (8, 9) für die aus der Vorkristallisationsvorrichtung (5, 6) in den Erstarrungsbehälter (11, 12) übertretende vorkristallisierte, noch flüssige Nougatmasse eingeschaltet ist.
10. Vorrichtung nach Anspruch 9, dadurch gekennzeichnet, dass der Erstarrungsbehälter (11, 12) unmittelbar auf die obere offene Seite des aufrechtstehenden Gehäusemantels (5) der Vorkristallisationsvorrichtung (5, 6) aufgesetzt ist.
11. Vorrichtung nach Anspruch 10, dadurch gekennzeichnet, dass der Erstarrungsbehälter (11, 12) im wesentlichen aus einem aufrechtstehenden, auf den Gehäusemantel (5) der Vorkristallisationsvorrichtung (5, 6) aufgesetzten Zylindermantel (12) gebildet ist.
12. Vorrichtung nach Anspruch 11, dadurch gekennzeichnet, dass unmittelbar auf den Erstarrungsbehälter (11, 12) ein horizontal arbeitender, die Plastifiziervorrichtung (14, 15) bildender Doppelschneckenförderer (14) aufgesetzt ist.
13. Vorrichtung nach Anspruch 11, dadurch gekennzeichnet, dass der Zylindermantel (12) des Erstarrungsbehälters (11, 12) zwecks Bildung eines Gleitfilmes für den erstarrten Masseblock (13) beheizbar ist.
14. Vorrichtung nach Anspruch 12 und 13, dadurch gekennzeichnet, dass sämtliche die Vorrichtung bildenden Aggregate mit einem Kühl- bzw. Wärmemantel (3, 5, 12, 15) versehen und an ein Kühl- oder Heizsystem und eine Temperaturregelanlage (10) angeschlossen sind.
15. Vorrichtung nach Anspruch 14, dadurch gekennzeichnet, dass zwischen Vorkristallisationsvorrichtung (5, 6) und Erstarrungsbehälter (11, 12) eine Zwischenkammer (8) eingeschaltet ist, in der ein Rührwerk (9) untergebracht ist.
Die Erfindung betrifft ein Verfahren zum Aufbereiten von Nougatmassen und zeigt gleichzeitig eine das Verfahren durchführende Vorrichtung. Bisher wurde die zur Verarbeitung gelangende abgekühlte, noch flüssige Nougatmasse chargenweise in Metallmulden abgefüllt und bis zur Erstarrung dort gelassen. Diese Art der Aufbereitung erfordert sehr viel Handarbeit und benötigt zudem noch sehr viel Raum, da eine so aufbereitete Charge in einer entsprechenden Anzahl von Mulden aufbewahrt werden muss. Abgesehen davon lässt sich die Qualität der Kristallstruktur nur schwer kontrollieren, da die weitere Abkühlung und Verfestigung von der jeweiligen Umgebungstemperatur beeinflusst wird. Diese unterschiedliche Kristallstruktur wird auch durch das nachfolgende Plastifizieren im Kneter nicht verändert.
Die Folge davon sind veränderliche Chargen, die schliesslich zu einem veränderlichen Gewicht der aus der jeweiligen Nougatmasse gefertigten Produkte und zu einer mangelhaften Qualität führen, weil bei einer unzulänglichen Kristallbildung ein Durchschlagen des in der Masse enthaltenen Nussfettes Aussehen und Haltbarkeit der Produkte beeinträchtigt.
Aufgabe der Erfindung ist es, diese Mängel zu beheben und eine Nougatmasse zu erzeugen von kontinuierlich gleichbleibender Viskosität und einer optimalen Kristallform, um auf diese Weise konstante Gewichte der aus der Masse gefertigten Süsswarenstücke und infolge der optimalen Kristallform glänzende Produkte von grosser Haltbarkeit zu erzielen.
Dies wird erfindungsgemäss dadurch erreicht, dass die Nougatmasse kontinuierlich temperiert wird, indem die zunächst noch flüssige Nougatmasse vorkristallisiert, anschliessend kontinuierlich zum Erstarren gebracht und schliesslich die erstarrte Masse kontinuierlich plastifiziert und zur Verarbeitungsstelle weiterbefördert wird.
Erfindungsgemäss erfolgen die Vorkristallisation, die Abkühlung der Masse bis zur Erstarrung und deren anschliessende Plastifizierung in einem kontinuierlich bewegten Massestrom. Dabei wird die Masse bei der Vorkristallisation bis zu einem Punkt abgekühlt, an dem sie noch flüssig bleibt.
Sie wird nach der Vorkristallisation gleichmässig gemischt und verteilt und während der Vorkristallisation, der Plastifizierung und ihrer Förderung zur Verarbeitungsstelle thermisch überwacht und behandelt, d. h. dem jeweils gewünschten Zustand entsprechend erwärmt oder gekühlt.
Von besonderer Bedeutung ist weiter, dass die Masse wegelos aus einer Bearbeitungszone in die folgende überführt wird.
Die Vorrichtung zur Durchführung dieses Verfahrens ist erfindungsgemäss gekennzeichnet, durch eine Vorrichtung
zur Vorkristallisation der aus einem Vorratsbehälter zugeführten Nougatmasse, einen an die Vorrichtung angeschlossenen Erstarrungsbehälter für die vorkristallisierte Masse und eine diesem nachgeschaltete Plastifizierungsvorrichtung für die erstarrte Nougatmasse mit einem zur Weiterverarbeitungsstelle führenden Auslauf. Die Vorkristallisationsvorrichtung, der Erstarrungsbehälter und die Plastifizierungsvorrichtung gehen wegelos, d. h. unter Vermeidung von Förderleitungen, ineinander über, wobei zwischen Vorkristallisationsvorrichtung und Erstarrungsbehälter eine Misch- und Verteilungsvorrichtung für die aus der Vorrichtung zur Vorkristallisation in den Erstarrungsbehälter übertretende vorkristallisierte, noch flüssige Nougatmasse eingeschaltet ist.
Vorzugsweise ist der Erstarrungsbehälter unmittelbar auf die obere offene Seite des aufrechtstehenden Gehäusemantels der Vorkristallisationsvorrichtung aufgesetzt und im wesentlichen aus einem Zylindermantel gebildet, auf welchem ein horizontal arbeitender, die Plastifiziervorrichtung bildender Doppelschneckenförderer sitzt. Der Zylindermantel ist zwecks Bildung eines Gleitfilmes für den erstarrten Masseblock beheizbar.
Sämtliche die Vorrichtung bildenden Aggregate sind mit einem Kühl- bzw. Wärmemantel versehen und an ein Kühloder Heizsystem und eine Temperaturregelanlage angeschlossen. Weitere bedeutsame Einzelheiten der erfindungsgemässen Vorrichtung sind beispielsweise in der folgenden Beschreibung anhand von Zeichnungen beschrieben. Dabei zeigen:
Fig. 1 eine schematische Darstellung der gesamten Anlage und Fig. 2 einen Schnitt nach den Linien II-II durch den Doppelschneckenförderer gemäss Fig. 1
Die in Fig. 1 schematisch dargestellte Anlage umfasst im wesentlichen einen Vorratstank für die flüssige zur Verarbeitung gelangende Nougatmasse, eine Temperiermaschine, eine Erstarrungsvorrichtung und eine zur Weiterverarbeitungsstelle führende Plastifiziervorrichtung.
Der Vorratsbehälter 1 beinhaltet flüssige Nougatmasse 2, deren Temperatur etwa 40 "C beträgt. Der Behälter 1 ist mit einem Heizmantel 3 versehen, um die Masse 2 im aufgeschmolzenen Zustand zu halten. Über eine Pumpe 4 wird die aufgeschmolzene Nougatmasse einer Vorkristallisationsvorrichtung 5, d. h. einer Temperiermaschine, zugeführt. Diese besteht im wesentlichen aus einem aufrechtstehenden Zylinder 5, der von einem Kühlmantel eingeschlossen ist. In diesem Zylinder 5 arbeitet ein von einem Motor 7 angetriebener Rotor 6, auf dessen äusseren Umfang beispielsweise schraubenförmig verlaufende Abstreifer vorgesehen sind. Der Rotor und die Abstreifer haben die Aufgabe, die im unteren Teil des Zylinders 5 zugeführte Nougatmasse nach aufwärts zu befördern und dabei zu kühlen, so dass sie bis zu einem gewissen Grade vorkristallisiert.
Die unterkühlte vorkristallisierte, aber in diesem Zustand immer noch flüssige Nougatmasse gelangt über eine Zwischenkammer 8 in den Zylinder 11, 12 der Erstarrungsvorrichtung. In der Zwischenkammer 8 ist zweckmässig ein Rührwerk 9 vorgesehen, um eine Gleichmässigkeit für Mischung und Verteilung der Masse zu gewährleisten.
In der Zwischenkammer ist weiterhin ein Thermometer 10 vorgesehen, welches die Massetemperatur an dem Ubertritt in die Erstarrungseinrichtung kontrolliert und dementsprechend den Kühlmantel 5 der Vorkristallisationseinrichtung 6 beeinflusst und steuert.
Der Erstarrungszylinder 11 hat keine mechanisch angetriebenen Förderglieder für die Masse. Diese wird vielmehr von unten her aus der Temperiermaschine nachgedrückt.
Dabei erfolgt eine erhebliche Abkühlung, so dass am oberen Ende des Zylinders 11 schliesslich ein starrer Masseblock ankommt. Nach genügend langer Zeit und genügend langer Wegstrecke tritt die Masse 13 am oberen Ende des Zylinders 11 in Form einer vollständig erstarrten Säule aus. Anderseits wird aber über einen Wärmemantel 12, der den Zylinder 11 umgibt, so viel Wärme zugeführt wie notwendig ist, um die erstarrte Masse auf ihrem Weg nach oben nicht zu hemmen.
Es wird praktisch ein sehr dünner Gleitfilm aufgeschmolzen, der den weiteren Vorschub des Masseblocks ermöglicht.
An den Erstarrungszylinder 11 schliesst sich unmittelbar und weglos eine Plastifizierungsvorrichtung 14, 15 an. Diese hat die Aufgabe, die völlig erstarrte Masse 13, da sie jetzt plastisch und somit verformbar ist, über den Austritt 16 in eine weitere Bearbeitungsvorrichtung 17 zu befördern.
Zweckmässig besteht die Plastifizierungseinrichtung aus einem Doppelschneckenförderer 14, der von einem Motor angetrieben wird, wobei die Schnecken in einer Ummantelung 15 angeordnet sind, die ihrerseits wieder an einen Wärme- oder Kühlmittelkreislauf angeschlossen ist, damit die Temperatur der zu plastifizierenden Masse entsprechend gesteuert werden kann.
Wie bereits aus der Zeichnung ersichtlich, sind alle zur Anlage gehörigen Teilaggregate mit einem kontinuierlich arbeitenden Antrieb versehen, so dass eine laufende, d. h. ununterbrochene Erzeugung von verarbeitbarer Nougatmasse erfolgt. Selbstverständlich können für die Gesamtanlage die verschiedensten Ausführungsformen von Teilaggregaten verwendet werden, was insbesondere für den Vorratstank und die Temperiermaschine sowie für die Plastifizierungsvorrichtung gilt.

The consequence of this are changeable batches, which ultimately lead to a changeable weight of the products made from the respective nougat mass and to a poor quality, because in the case of inadequate crystal formation, penetration of the nut fat contained in the mass affects the appearance and shelf life of the products.
The object of the invention is to remedy these deficiencies and to produce a nougat mass of continuously constant viscosity and an optimal crystal shape, in order in this way to achieve constant weights of the confectionery pieces made from the mass and, due to the optimal crystal shape, shiny products of great durability.
This is achieved according to the invention in that the nougat mass is continuously tempered by pre-crystallizing the initially still liquid nougat mass, then solidifying it continuously and finally plasticizing the solidified mass and conveying it further to the processing point.
