Verpackt man z.

Produkte.

The present invention relates to a method for transferring odor and / or aroma substances, in which the odor and aroma substances to be transferred are transferred to the receiving medium by means of a carrier, preferably in the form of a film. The invention further relates to a carrier for the execution of the method and the application of the method for transferring odor and / or aroma substances to food and beverages.
It is common to apply odor and aroma substances to a wide variety of products in order to make them more organoleptically appealing or to mask undesirable aromas or smells. Products of this type, which are generally referred to below as the receiving medium, are, for example, foodstuffs and luxury foods, such as tea, coffee and tobacco products, which are flavored or dry milk preparations, such as pressed cubes made from skimmed milk, or other slimming agents containing fillers, which are enriched with flavorings , or packaging materials and other odorless and tasteless raw materials and finished products that are to be given a desired fragrance.
Odor and aroma substances normally consist of a mixture of individual fragrances or individual aroma components, which are usually dissolved in a volatile solvent or diluent. With simple application z. B.
Dripping or spraying the products with the odorants and / or flavorings will cause them if the absorbing medium has an absorbent surface, such as. B. powdered milk tablets, tea or tobacco, in a local over-concentration in the outer areas, and often there is also an undesirable discoloration of the products. In the case of a receiving medium with a smooth surface, the olfactory and / or aroma substances, depending on the temperature, are released uncontrollably quickly, since the odor substance evaporates very quickly without adhering to the surface. However, if, to avoid this phenomenon, a material that absorbs the odor, such as porous sintered metal blocks (e.g.
B. according to DE-PS 832 660) or perhaps filter paper or a tissue as a carrier for the transfer of the odor and / or flavoring substances, so - as has been found - the release of the odor or flavoring substances deteriorates quantitatively and qualitatively.
This is based on the fact that the structure of these intermediate carriers can strongly counteract the evaporation and the smell perception is consequently only very weak.
Furthermore, the completely irregular capillary structure of such carriers with very different pore sizes, pore depths and layers of the pores leads to an uneven evaporation of the odorant, since it evaporates much faster from large flat pores or from pores arranged perpendicular to the surface than from small and deep pores or from pores with a strong inclination to the surface.
Finally, because of the very uneven distribution of the sizes and layers of the pores, the odor and / or aroma substances are partially or completely separated into their individual components, so that the smell or aroma is no longer perceived in its original note.
The object of the invention is therefore to create a method for transferring odor and / or aroma substances, in which a uniform release of the entire odor and / or aroma composition is achieved without segregation of the components forming the composition occurring. The invention has also set itself the task to carry out this transfer of the entire smell and / or aroma composition to other materials, that is to say the receiving medium, in a simple manner, so that this transfer is almost automatic, e.g. B. can be done in a package.
The invention has also set itself the task of providing a carrier that enables a qualitatively and quantitatively uniform delivery of the smell and / or aroma composition and that is also handy and easy to use and does not have the disadvantages of the unwieldy heavy and large sintered blocks or which has the filter paper giving off the uneven aroma.
To achieve this object, a method for transferring odor and / or aroma substances is proposed according to the invention, which is characterized in that an electrolytically anodically produced fine-pored metal oxide layer as a carrier is brought into contact with or with the odor and / or aroma substances to be transferred impregnated and then this carrier for the transfer or even release of the odor and / or aroma substances in contact with the receiving medium or stored together with it.
An electrolyte is preferably used as the carrier
table-anodized aluminum foil, in particular an aluminum foil deeply etched before anodic oxidation. Anodically oxidized aluminum foils with pores with a diameter of 0.05-0.5, in particular 0.1 µm, and a pore depth of 1-60 µm are particularly useful.
In the method according to the invention, the odorants and / or flavorings are preferably transferred in a package in which the carrier and the receiving medium are packaged together. It is expedient if the receiving medium is covered with the anodically oxidized aluminum foil, which has absorbed the odor and / or aroma substances, and packaged or sealed in an outer packaging.
The invention further relates to a carrier for performing the method described, which is defined in claim 2.
It is surprising that such an electrolytically anodically oxidized metal oxide layer gives a quantitatively and qualitatively uniform release of odorous and / or aromatic substances, since hitherto only strongly porous sintered metal blocks or highly absorbent filter papers have been proposed for this purpose, which, as has been found, have been found for fine aroma mixtures lead to a change in the fragrance.
In and of itself, it would also have been expected that the extremely fine-pored capillaries of an electrolytically anodically produced metal oxide layer would retain all the odorous substances in these submicroscopic pores due to the capillary forces, i.e. could not release any odorous and / or aromatic substances, furthermore the average person skilled in the art should have expected that the odorants in aluminum foils are also bound due to Van der Wahl's forces, as is a well-known and desired effect when coloring anodized aluminum surfaces.
Another advantage according to the invention is that easy-to-use aluminum foils, which are already valued as packaging material, can be used without difficulty as a carrier for transferring odorous and / or aromatic substances after appropriate pretreatment.
The production of electrolytically anodically produced aluminum metal oxide layers is known from Jahrbuch der Oberflächentechnik (1957), pages 198-214. The supports used according to the invention are produced with modifications familiar to the person skilled in the art, for example using this method, this reference also being incorporated into the present disclosure. For example, aluminum foils in an electrolyte bath with 250 g of H2SO4 and 0.13 g of dissolved aluminum per liter of bath at an temperature of 17 ° C. with a current of 20 A min / dm2 in an air-moving bath are anodized at a current density in a range of 0.5-4 A / dm2 and corresponding bath voltage oxidized.
The duration of treatment can range from a few minutes to over 60 minutes, with the bath voltage generally being in the range of 10-20 volts. As a result of this treatment, aluminum oxide layers consisting of a basic oxide layer are formed on the aluminum foil, on which a pore layer consisting of six-sided cells is formed.
All pores have the same size and the same distance from one another within narrow limits and are perpendicular to the metal surface. The size and spacing of the pores can be varied within certain ranges by suitable choice of the electrolysis conditions and the electrolyte. Surprisingly, the porosity of these metal oxide layers is of an order of magnitude that is extremely well suited for the absorption and uniform evaporation of odorous substances.
In particular, the controllably producible pore diameters of about 0.1 μm and pore depths of 1420 gtm are suitable, since they allow the odorant to evaporate evenly without being separated into individual components, the capillary forces counteracting the vapor pressure of the individual fragrances being so small that there is no separation.
According to a preferred embodiment of the invention, the metal surface can be enlarged considerably by deep etching with relief formation before the anodic oxidation. This deep etching should not be confused with a pickling process for surface cleaning or with the etching of a metal surface for metallographic purposes. Deep etching in the present case means structureless etching, as is the case for B. with an aqueous solution from SGew. % Sodium hydroxide and 4% by weight. % Sodium fluoride can reach at about 80 "C within 3 minutes. Such deep etching gives the surface a relatively fine sinus-shaped etching relief of the order of magnitude of 5 m. As a result, the surface is significantly enlarged and the light is reflected not diffusely, but diffusely.
As a result of this increase in surface area, the number of the anodically produced pores which absorb the odorant is substantially increased and thus the amount of odorant substance absorbed per unit area is increased accordingly. It was found that a 9.1 x 12.5 cm aluminum strip, anodized on both sides, holds 40.9 mg of fragrance, while a previously deep-etched aluminum strip of the same size can hold 44.6 mg of fragrance. This does not change the uniform evaporation of the odorants from the pore system, but a larger amount of odorant is absorbed or evaporated.
The use of anodically produced metal oxide layers as a carrier for odor and / or aroma substances enables a novel and simple transfer of these substances to other materials, the odor and / or aroma substance being transferred with an unchanged fragrance note. This type of odor transfer is particularly useful if the material that is to be given a certain fragrance is stored for a long time until it is used.
If you pack z. B. a to be provided with an odorant bundle of stationery with an aluminum strip, the anodic oxide layer was impregnated with an odorant, in sealable cellulose acetate film, this assumes the odorant with unchanged fragrance until it is used. It is not necessary to spray the letter paper with an odorant solution and then to dry it. It is also possible to completely pack the material, which is to be given a specific fragrance note, in an aluminum foil, the anodic oxide layer of which has been impregnated with the selected odorant.
The following examples illustrate the invention. The percentage concentration data are% by weight.
example 1
A sheet of blotting paper with a size of 10 cm2 was soaked in ethanol with a fragrance solution consisting of 20% anethole (d = 0.99) and 20% menthol (d = 0.88).
For the manufacture of the odorant solution, these materials were deliberately used that differed significantly from each other in terms of their smell and vapor pressure. In the same way, an aluminum strip with a size of 10 cm 2 was treated, which had been anodized in 25% sulfuric acid at a current density of 2 A / dm2 at 20 C for 30 minutes. The release of the odor substances from the soaked blotting paper or the aluminum strip determined over the course of 10 days based on the smell perception is recorded in the table below. The rating 10 indicates the perception of the odorant in full intensity, while in the rating 1 only traces of the odorant could be perceived.
Days of paper anodized (comparison) aluminum (according to the invention)
Anethole menthol Anethole menthol
1 8 2 10 10
2 6 2 9 8
3 5 1 8 6
4 5 0 8 5
5 4 0 7 3
6 3 0 6 1
7 2 0 5 1
8 2 0 4 0
9 1 0 3 0
10 1 0 2 0
The values obtained indicate that the two odorants, menthol and anethole, are released from the aluminum strip in a relatively uniform manner, while the menthol from the soaked blotting paper sheet evaporates very quickly, only in traces on the 3rd day and no longer at all on the 4th day is noticeable.
Comparable results were obtained with other odorant solutions and aluminum strips, which in a manner known per se, e.g. B. had been anodically oxidized using sulfuric acid, chromic acid, oxalic acid or phosphoric acid.
Example 2
100 g of odorless skimmed milk tablets were packed in an anodized aluminum foil with a pore diameter of 0.12 μm and a pore depth of about 50 μm, which had previously been sprayed with a strawberry aroma, and wrapped with an outer packaging made of a plastic film. After only 14 days, the skimmed milk tablets had absorbed the full original strawberry aroma and retained this aroma even after long storage in the open air. A pack treated in the same way showed no change in aroma after six months of storage.
Similar experiments were carried out with pineapple, raspberry, lemon and vanilla aromas, both using aluminum foils with a pore diameter of 0.08, 0.1, 0.12, 0.16 ftm and pore depths of 1-60 µm .
The results were all comparably good. Further tests with a previously deep-etched foil showed that aluminum foils that are about 10% smaller can be used to release the same amount of aroma or odor.
Example 3
Several 100 g packets of weakly flavored tea and a further 100 g packets of weakly flavored tobacco were wrapped in a double layer of deep-etched and anodized aluminum foil with a pore diameter of approximately 0.11 μm and a pore depth of approximately 40 μm. after impregnating the aluminum foil with a strong Lapson-Suchong aroma in one case and with a strong virginia tobacco aroma in the other case. In both cases, 38-46 mg of fragrance would be absorbed from 100 cm2 of aluminum foil. The individual packages were wrapped or sealed in thin PVC films, cellulose acetate films and polyethylene films. A check of the parcels after 20, 40 and 80 days always showed a constant, unchanged good aroma of the receiving media or
Products.
