Die vorliegende Erfindung bezieht sich auf die Herstellung und Verwendung von Mitteln zur Aromatisierung von Nahrungsmitteln.
Bei der Herstellung und dem Vertrieb von Nahrungsmitteln ist es oft erwünscht, den Geschmack und das Aroma mit Komponenten anzureichern, die im natürlichen Produkt fehlen oder die verändert werden, wenn man ein Naturprodukt zur Verteilung oder zwecks Lagerung verarbeitet. Beispielsweise ist es bekannt, dass den Fleischkonserven in der Regel die Geschmackseigenschaften des frischen Produktes fehlen.
Weiterhin wünscht man oft Nahrungsmittel herzustellen, die geschmackvoll und appetitlich sind, jedoch keine oder nur wenige der Naturprodukte enthalten, die sie ersetzen sollen.
Ein Beispiel dafür ist ein diätetisches Nahrungsmittel, welches kein Fleisch enthält. und trotzdem wie Fleisch schmecken soll. Weiterhin wird gegenwärtig in starkem Masse nach der Herstellung hochproteinhaltiger Nahrungsmittel geforscht, welche den Geschmack und manchmal sogar das Aussehen des natürlichen Produktes haben sollen, die jedoch aus einem anderen, billigeren Protein bestehen. Beispielsweise handelt es sich dabei um geruchfreies Fischmehl zur Herstellung von Fleischbrühen, Bratensaucen und anderen nahrhaften, stark proteinhaltigen Produkten.
Es werden bereits sehr viele Aromatisierungsmischungen und Würzmittel gehandelt, wobei aber immer noch der Bedarf nach zusätzlichen Geschmacksstoffen besteht, die zur Veränderung eines bestimmten Geschmacks oder Aromas verwendet werden können. Auch sind einige der zur Zeit verfügbaren Produkte entweder nicht in der Lage, einen bestimmten Fleischgeschmack oder ein anderes Aroma zu simulieren, oder es fehlt ihnen an bestimmten Geschmacks- und Geruchseigenschaften, so dass der Verbraucher bemerkt, dass das Produkt seinen Ansprüchen nicht genügt.
Die vorliegende Erfindung schafft nun ein Verfahren zur Herstellung eines kräftigen Aromatisierungsmittels; das Verfahren besteht erfindungsgemäss darin, dass man mindestens eine konjugierte cyclische Carbonylverbindung der Formel

R4 und R5 gleich oder verschieden sind und für Niederalkyl oder Wasserstoff stehen, mit Schwefelwasserstoff oder einer schwefelhaltigen Verbindung im Mol Verhältnis von Sulfidschwefel zu Carbonylverbindung von 0,05: bis 3:1 unter einem Druck von 1 bis 10 Atmosphären erhitzt und dann den so erhaltenen Aromastoff mit einem Träger oder einem Aromazusatz vermischt.
Wie noch im folgenden näher beschrieben wird, können die Parameter der oben angegebenen Reaktion verändert werden, wobei man eine ganze Reihe angenehmer, kräftiger Geschmacksstoffe und/oder Aromastoffe erhält.
Das erfindungsgemässe Verfahren kann dazu dienen, Aromatisierungsmittel mit folgenden Geschmacksrichtungen herzustellen: gebratenes Fleisch, fleischartiger Eigeschmack, geröstetes Fleisch, zartes, stark gekochtes Fleisch, verschiedene Rostbraten, Fleischsäfte, Saucen, Hühnchen, Truthahn oder anderes Geflügel, gedämpftes Fleisch, geräucherten Schinken, Pfannenbraten, in Zwiebeln gebratenes Fleisch, Käsegeschmack und -geruch, Meerrettich mit Zwiebeln und andere kräftige Aromas und Geschmacksstoffe. Dem Fachmann ist dabei bekannt, dass Geschmack und Geruch untrennbar miteinander verbunden sind, so dass diese beiden Eindrücke einen kombinierten organoleptischen Eindruck vermitteln. Demgemäss ist es klar, dass das erfindungsgemäss erhaltene Mittel sowohl den Geschmack als auch den Geruch von Nahrungsmitteln verändern kann.
Bei der Ausführung der Erfindung wurde gefunden, dass man die Geruchskala verändern kann, indem man die Konzentration des Reaktionsproduktes im fertigen Aromamittel verändert, das Nahrungsmittel oder ein anderes Substrat, in welchem sie sich durch Geschmack und/oder Geruch bemerkbar machen, wechselt, und indem man.die Reaktionsbedingungen und Reaktionsteilnehmer variiert.
Beim erfindungsgemässen Verfahren wird eine iso- oder heterocyclische konjugierte Carbonylverbindung eingesetzt.
Insbesondere verwendet man ein Hydroxyfuranon, ein Maltol, ein Hydroxycyclopentenon (die Enolform eines Cyclopentadions) oder ein Hydroxylaceton, welches eine C-C Doppelbindung in Konjugation mit der Carbonylgruppe enthält. Demgemäss ist Hydrofuranon eine Substanz der Formel

Die Substituenten des Hydroxyfuranons können je nach gewünschtem Geschmack geändert werden. Dabei sind niedere Alkyl- oder Alkylengruppen bevorzugt, insbesondere diejenigen mit bis zu 3 C-Atomen, Beispielsweise können 4 Hydroxy-2,5-dimethyl-3-(2H)-furanon, 4-Hydroxy-2,5-di äthyl -3 -(2H) -furanon, 4 -Hydroxy-2, 5 -dipropyl -3 -(2H) -furanon, 2-Hydroxy-2-methyl-3-(2H)-furanon, 4-Hydroxy-5methyl-3-(2H)-furanon, 4-Hydroxy-2-äthyl-5-methyl-3 (2H)-furanon und 4-Hydroxy-2-methyl-5-äthyl-3-(2H)-furanon verwendet werden. Zu bestimmten Zwecken der Erfindung wird vorzugsweise das 2,5-Dimethylhydroxyfuranon verwendet.

Bei bevorzugten Ausführungsformen ist R1 ein Alkylrest mit bis zu 3 C-Atomen, vorzugsweise Methyl oder Äthyl, und R2 und R3 sind jeweils Wasserstoff. So gibt Maltol (3-Hydroxy-2methyl-4-pyron) und Äthylmaltol (2-Äthyl-3-hydroxy-4-pyron) ausgezeichnete Resultate.

entsprechen, worin R1, R2 und R5 Wasserstoff oder Alkyl mit bis zu 3-C-Atomen darstellen. Vorzugsweise ist R1 Methyl, R2 Äthyl und R5 Wasserstoff. Die entsprechende Verbindung ist unter dem Namen Abhexon bekannt.
Zur Erzielung brauchbarer Resultate regelt man die Reaktionsbedingungen und das Mengenverhältnis an schwefelhaltigem Material zur cyclischen Verbindung. Wenn das Mol-Verhältnis des schwefelhaltigen Stoffes zu gross ist, erhält man unangenehme Geschmacks- und Aromanoten. Anderseits ergeben ungenügende Mengen an Schwefelstoffen sehr schwache oder süssliche Fruchtaromen, und diese Produkte können im Rahmen der Erfindung zur Verwendung als kräftige Geschmacksstoffe nicht verwendet werden. Demgemäss liegt das Mol-Verhältnis von Schwefelwasserstoff zur konjugierten cyclischen Verbindung vorzugsweise zwischen 0,05:1 und 3:1. In vielen Fällen erhält man optimale Resultate mit einem Mol-Verhältnis H2S : cyclische Verbindung von 0,1:1 bis 1,2:1.
Das Erhitzen führt man vorzugsweise in Wasser oder einem anderen wässrigen Medium durch, wobei jedoch auch andere Reaktionsmittel wie Propylenglykol, Äthanol, ölige Glyceride und ähnliche verwendet werden können. Die Konzentration an konjugierter cyclischer Verbindung im Reak tionsmedium kann über weite Bereiche geändert werden, wobei jedoch bei aussergewöhnlich niedrigen Konzentrationen an cyclischer Verbindung das Aroma kaum erkennbar wird und als solches zur Zugabe zu einem Nahrungsmittel nicht geeignet ist. In solchen Fällen muss das Reaktionsprodukt vor der Verwendung beträchtlich konzentriert werden. Wenn die Konzentration an cyclischer Verbindung zu gross ist, treten Schwierigkeiten bezüglich einer guten Berührung mit dem Schwefelwasserstoff wegen Löslichkeits-, Dispersions- oder Emulgierungsproblemen auf.
Demgemäss sollte die Konzentration an cyclischer Verbindung im Reaktionsmedium im Bereich von 0,01 bis 0,5 Mol pro Liter liegen.
Es wird angenommen, dass der Schwefelwasserstoff bei der Bildung der Aromastoffe aktiv teilnimmt, wobei jedoch kein freier Schwefelwasserstoff verwendet werden muss. Bei bevorzugten Ausführungsformen des erfindungsgemässen Verfahrens ist es leichter, die Menge an Schwefelwasserstoff in kleinen Ansätzen zu regeln, indem man den Schwefelwasserstoff in situ aus organischen schwefelhaltigen Materialien oder anorganischen Materialien freisetzt, die Schwefelwasserstoff unter den Reaktionsbedingungen bilden können. Geeignete anorganische Substanzen sind Ammonium- oder Alkalisulfide. Vorzugsweise verwendet man Natrium- oder Kaliumsulfid.
Das pH der Reaktion wird, wie weiter unten beschrieben ist, geeignet gewählt.
Es wurde überraschenderweise gefunden, dass der für die Reaktion notwendige Schwefel durch eine ganze Anzahl schwefelhaltiger organischer Stoffe geliefert werden kann.
Der genaue Mechanismus, wie diese Stoffe Schwefelwasserstoff liefern, falls dies der Fall ist, ist nicht genau bekannt, es wurde aber gefunden, dass die richtige Stoffmenge zur Verwendung in der Reaktion berechnet werden kann, wenn man annimmt, dass der gesamte im organischen Material enthaltene Schwefel in Schwefelwasserstoff übergeht. Wenn man demgemäss einen solchen organischen schwefelhaltigen Stoff verwendet, so wird dessen Menge auf der Grundlage berechnet, dass er unter den Reaktionsbedingungen Schwefelwasserstoff bildet.
Die verwendbaren organischen Schwefelverbindungen sind Sulfide, Disulfide, Thiole, Aminothiole, Carboxythiole und heterocyclische Thiaverbindungen. Insbesondere sind zur Ausführung des Verfahrens solche Stoffe brauchbar, die ein relativ hohes Verhältnis an Schwefel, Sauerstoff und/oder Stickstoff zu Kohlenstoff aufweisen. Es wurde gefunden, dass bei Verwendung schwefelhaltiger organischer Stoffe mit langen Kohlenstoffketten die Produkte einen unerwünschten chemischen Geschmack und Geruch aufweisen.

Diese Stoffe gestatten eine leichte Regelung einer breiten Skala von Geschmacksnoten, wie nachstehend beschrieben wird.
Anderseits erzeugen Heptylmercaptan, Thiophenol, o-Thiocresol, Methylheptylsulfid, Butyldisulfid, Thioharnstoff und Cysteinhydrochlorid unerwünschte wachsartige, chemische, süssliche oder verbrannte Geschmacksnoten, wenn man sie mit Hydroxyfuranon unter den beschriebenen Bedingungen umsetzt.
Die Reaktion wird bei höheren Temperaturen ausgeführt, um die gesuchten Aromastoffe zu erzeugen. Im allgemeinen führt man die Reaktion mindestens bei der Siedetemperatur von Wasser aus, und die Temperatur sollte 200 C nicht übersteigen. Bei niedrigeren Temperaturen als angegeben findet entweder nur eine geringe Produktion nützlicher Aromastoffe statt oder man muss viel zu lange erhitzen. Bei bedeutend höheren Temperaturen nimmt das Produkt einen verbrannten oder unangenehmen schwefligen Geschmack und Geruch an.
Vorzugsweise führt man demgemäss die Reaktion zwischen 100 und 200 C aus, vorzugsweise zwischen 120 und 190 C.
Je nach dem Reaktionsmedium sollte der Druck etwa über Atmosphärendruck liegen. Niedrige Drücke gestatten es oft nicht, die nötigen Temperaturen zu erreichen, während die Anwendung sehr hoher Drücke unnötig ist und die Kontrolle der Reaktion erschwert. Demgemäss führt man die vorliegende Reaktion bei Überdrücken in der Grössenordnung von etwa 2 bis etwa 10 Atmosphären aus.
Bei der Vereinigung der bevorzugten Ausgangsstoffe stellt sich meist ein geeignetes pH von selbst ein. Dieses kann von mittelmässig oder schwach sauer bis neutral und schwach basisch reichen. Ein geeigneter pH-Bereich liegt im Gebiet von 4 bis etwa 9. Aus der nachfolgenden Beschreibung und den Beispielen geht hervor, dass die Reaktionsmischung ausserdem Puffersysteme enthalten kann, die das pH im gewünschten Bereich halten. Sie sind im allgemeinen die Salze von starken oder schwachen Säuren mit Basen.
Die Reaktionszeit hängt im allgemeinen von der Temperatur, dem Druck, der jeweilig verwendeten cyclischen konjugierten Carbonylverbindung, dem organischen der anorganischen schwefelhaltigen Material oder der anderen Schwefelwasserstoffquelle, dem pH und dem verwendeten Puffer und den anderen, nachstehend erwähnten Parametern ab. In manchen Fällen sind zur Erzeugung guter Aromastoffe 30 Minuten ausreichend, während man in anderen Fällen 8 Stunden und länger reagieren lassen muss. Der allgemeine Zeitbereich beträgt demgemäss 30 Minuten bis 8 Stunden. Es wurde gefunden, dass mit den beschriebenen Kombinationen von cyclischer konjugierter Carbonylverbindung und H2S Zeiten von 1 bis 3 Stunden ausgezeichnete Resultate erbringen, so dass diese Zeitspanne bevorzugt ist.
Das Reaktionsprodukt wird zur Erzeugung eines kräftigen Geschmacks verwendet. Das Produkt kann, wenn gewünscht, durch Entfernung des Wassers oder eines anderen verwendeten Reaktionsmediums konzentriert werden. Solche Konzentrierung kann durch Verdampfung, Destillation, Chromatographie und andere bekannte Verfahren erreicht werden.
Die erfindungsgemäss hergestellten Produkte können als Vollaromastoffe, als Komponenten von Aromatisierungsmitteln und zur Verstärkung, Variierung, Modifizierung oder Verbesserung des Geschmacks von Nahrungsmitteln, und zwar in Verbindung mit anderen Zutaten, verwendet werden.
In manchen Fällen, wenn nur ein einziger Geschmackeindruck erwünscht ist, oder wenn eine oder mehrere cyclische konjugierte Carbonylverbindungen mit einer oder mehreren schwefelhaltigen Verbindungen unter den oben angegebenen Bedingungen erhitzt worden sind, können die Reaktionsprodukte zusammen mit einem inerten Träger wie Wasser als solche verwendet werden und verleihen einem Nahrungsmittel praktisch das volle Aroma und den vollen Geschmack.
Im allgemeinen vermischt man jedoch die erfindungsgemäss hergestellten Produkte mit anderen Stoffen, um eine Geschmacksmischung oder ein geschmacksverbesserndes Mittel herzustellen. Dabei versteht man unter einer Geschmacksmischung eine solche, welche einem Nahrungsmittel praktisch den vollständigen Geschmack und Geruch verleiht, und ein geschmacksverbesserndes Mittel ist ein solches, welches zur Zugabe zu einem natürlichen oder anderen Produkt vorgesehen ist, um diesem nur fehlende Geschmacks- und Geruchsnoten zu verleihen. Ein Beispiel für die zuletzt erwähnte Verwendung ist die Zugabe eines geschmacksverbessernden Mittels zu einer Rindfleischgemüsesuppe, um ihr den Geschmackseindruck einer frisch hergestellten Suppe zu ver leihen,;ndem man Nuancen zufügt, die bei der Herstellung verloren gegangen sind.
Die hergestellten Reaktionsprodukte werden demnach mit anderen Zutaten vereinigt, die zur Erzielung besonderer Eigenschaften notwendig sind. Solche weiteren Zutaten sind beispielsweise flüssige Trägerstoffe wie Wasser, Äthanol, Propylenglykol, Glycerin, ölige Glyceride und andere, sowie feste Trägerstoffe wie Gummiarabicum, Traganth und andere, welche ein Sprühtrocknen der Geschmacksmischung ermöglichen.
Ebenso verwendbar sind Verdickungsmittel wie Alginate, Carrageen und andere, mit denen man Saucen und ähnliche Produkte sämig macht, Kondimente und Gewürze wie Salz, Pfeffer, Allgewürz, Basilikum, Paprikaextrakt, Nelken, Eugenol, Knoblauchöl, Zwiebelöl, Oreganoextrakt, Pyroligniinsäure, Salbeiöl, Natriumcitrat, Thymian, hydrolysiertes Pflanzenprotein und andere; Verkapselungsmittel zum Koazervieren der Geschmacksmischung unter Herstellung mikroverkapselter Produkte; Farbstoffe wie die zugelassenen Farbstoffe für Nahrungsmittel, Drogen und Cosmetica, Pflanzenfarben, Caramel und andere; andere Geschmacksstoffe zur Erzeugung der gewünschten Geschmacksimpression, Geschmacksverstärker wie Tetramethylpyrazin und Mononatriumglutamat und die verschiedenen Nucleotide;
Konservierungsmittel und Antioxydanzien wie Ascorbinsäure, Propylgallat, butyliertes Hydroxyanisol und butyliertes Hydroxytoluol und so weiter. Es ist klar, dass im allgemeinen nur einige dieser Stoffe zur Erzeugung eines Würzmittels oder eines Geschmacksverbesserungsmittels notwendig sind.
Bei der Verwendung der Reaktionsprodukte als Komponenten von Würzmitteln und geschmacksverbessernden Mitteln ist es allgemein erwünscht, dass die Reaktionsprodukte 0,5 bis etwa 50% der Gesamtmischung ausmachen, wobei man in Sonderfällen auch grössere oder kleinere Mengen verwenden kann. Die jeweiligen Mengen ändern sich je nach dem erwünschten Ergebnis. Alle Teile, Anteile, Prozentgehalte und Verhältnisse, die im nachfolgenden beschrieben sind, beziehen sich auf das Gewicht, wenn nichts anderes angegeben ist.
Das erhaltene Gemisch kann folgenden Nahrungsmitteln zugegeben werden, wobei als Beispiele angeführt sind: Suppen und Suppengemische, Pfannengerichte, konservierte und eingefrorene Gemüse, tierische Nahrungsmittel, Saucen, Fleischbrühen, Schmorgerichte, Fleischersatzprodukte, diäthetische Produkte, fleischhaltige Brotaufstriche, Bäckereiwaren, und als Ersatzstoffe und Verstärkungsmittel für Fleischextrakte usw. Im allgemeinen enthalten die aromatisierten Nahrungsmittel 0,001 bis etwa 1,0% an erfindungsgemäss hergestelltem Produkt. Je nach Produkt, Nahrungsmittel, persönlichem oder oft üblichem Geschmack können diese Mengen auch ausserhalb der angegebenen Grenzen liegen.
Die folgenden Beispiele sollen die Erfindung näher erläutern.
Beispiel 1
Herstellung eines Fleischgeschmacks
Man vermischt 100 mg 4-Hydroxy-2,5 -dimethyl-3 (2H) - furanon, 0,5 ml einer 30 %igen wässrigen Lösung von Natriumsulfidnonahydrat und 9,5 ml einer Pufferlösung (pH 6,2), die Kaliumnatriumhydrogenphosphat enthält. Das Verhältnis von H2S zu Furanon beträgt 0,81:1. Man bringt das Gemisch in einen Parr-Autoklav und kocht 4 Stunden lang bei 2 atü und 120 bis 122" C. Der Druck wird in dieser Zeit auf 2 atü gehalten.
Beim Herausnehmen der Mischung aus dem Autoklav zeigt sich, dass diese etwas trübe ist. Sie hat einen guten Geschmack nach gebratenem Fleisch.
Ähnliche Resultate erhält man mit 2-Methyl-, 5-Methyl-, 2-Äthyl-5-methyl-, 2-Methyl-5-äthyl-, Diäthyl- und Dipropylhydroxyfuranonen.
Beispiel 2
Man vermischt 100 mg Dimethylhydroxyfuranon mit 0,1 ml einer 30%gen wässrigen Lösung von Natriumsulfidnonahydrat und 9,9 ml einer wässrigen Lösung, gepuffert auf pH 6,2 mit Natriumkaliumhydrogenphosphat. Das Verhältnis H2S/Furanon beträgt 0,17:1. Man bringt das Gemisch in einen Druckbehälter und erhitzt 4 Stunden lang unter 2 atü auf etwa 120 C.
Sodann kühlt man das Gefäss ab und findet, dass der Inhalt nach gebratenem Fleisch riecht.
Beispiel 3
Man stellt zwei Proben dar, indem man 100 mg Dimethylhydroxyfuranon in 9,5 ml eines Phosphatpuffers mit pH 6,2 löst und 0,5 ml einer 30%igen wässrigen Natriumsulfidnonahydratlösung zugibt. Man bringt die beiden Proben in Druckbehälter und erhitzt auf etwa 1200 C unter 2 atü. Die erste Probe kühlt man auf Zimmertemperatur nach 2 Stunden Erhitzungszeit ab, die zweite Probe nach 4 Stunden.
Die erste Probe riecht nach geröstetem, hühnerartigem Fleisch, während die zweite Probe nach schwach gebratenem Fleisch schmeckt.
Beispiel 4
Man stellt Mischungen her, indem man 100 mg 2,5-Dimethylhydroxyfuranon mit einer solchen Menge des in Tabelle I angegebenen Materials kombiniert, dass durch den freigesetzten Schwefelwasserstoff ein Molverhältnis von H2S zu cyclischer Verbindung von 0,81:1 erreicht wird, wobei man annimmt, dass der gesamte Schwefel als H2S freigesetzt wird, und füllt mit einem wässrigen Natriumkaliummonohydrogenphosphatpuffer (pH 6,2) auf 10 ml auf. Alle Proben erhitzt man 4 Stunden lang auf 1200 C untere 2 atü.
Die Beurteilung der Reaktionsprodukte findet sich in Tabelle I.

The heating is preferably carried out in water or another aqueous medium, although other reactants such as propylene glycol, ethanol, oily glycerides and the like can also be used. It is assumed that the hydrogen sulphide takes an active part in the formation of the flavoring substances, but no free hydrogen sulphide has to be used.
