Die Erfindung beruht auf der Feststellung, dass bestimmte Verbindungen und deren Mischungen brauchbar sind als Mittel, die sowohl flüssigen als auch festen Nahrungsmitteln, Genussmitteln, Getränken usw., einen Geschmack und Geruch von gerösteter oder gebrannter Note zu erteilen vermögen. Bequemlichkeitshalber werden diese für den menschlichen Genuss bestimmten Substanzen im nachstehenden als Nahrungsmittel bezeichnet. Es wird jedoch bemerkt, dass diese Bezeichnung nicht nur flüssige oder feste Substanzen umfasst, die normalerweise als Nahrungsmittel betrachtet werden, sondern auch andere Substanzen für die innerliche Anwendung, wie pharmazeutische Präparate, z. B. Hustensirup.
Erfindungsgemäss werden insbesondere Aromabestandteile oder deren Mischungen verwendet, die dazu neigen, Nahrungsmitteln und Genussmitteln eine geröstete oder gebrannte Note zu erteilen oder ein durch die Browning-Reaktion zwischen Aminosäuren und Zuckern erzeugtes Aroma zu verstärken. Beispiele von Genussmitteln sind z. B. Getränke mit Kaffee- oder Kakao-Aroma oder deren Ersatzmittel. Beispiele von gerösteten Nahrungsmitteln sind z. B.
Getreidearten und Nahrungsmittel, bei denen gebrannte oder geröstete Samen verwendet werden, oder Bohnen, Fleisch, kochfertige Gerichte, bestimmte gebackene Gerichte und Zuckerwaren (Konfiserie). Beispiele von gerösteten Getreidearten sind z. B. popcorn und Cornflakes . Beispiele von gebackenen kochfertigen Gerichten sind z. B. gebackene Bohnen und Sojaproteingerichte. Beispiele von gebackenen Gerichten sind z. B. geröstete marsh mallows , Zuckerstangen, worin geröstete Nüsse verarbeitet sind, gefrorener Teig, Rindenbrot und Brot, in dem sich gebrannte Samen befinden. Es wurde nun gefunden, dass bestimmte chemische Verbindungen oder Mischungen davon als Geschmacks- und Geruchsbestandteile verwendbar sind für in der Natur vorkommende oder synthetische Genuss- und Nahrungsmittel.
Diese Verbindungen können allgemein klassifiziert werden als organische Schwefelverbindungen, die die Gruppierung CH3(S)n-, worin n eine ganze Zahl mit einem Wert von mindestens 1 ist, enthalten.
Die chemischen Verbindungen und deren Mischungen, die als Geschmacks- und Riechstoffe im Verfahren gemäss der Erfindung brauchbar sind, werden in Spalte 1 der nach stehenden Tabelle A wiedergegeben.
Es sei bemerkt, dass der Geruchs- und Geschmacksbei trag, erwähnt in Spalte 2, bei den in Spalte 3 erwähnten Konzentrationen wahrgenommen wird.

In den Beispielen 1 bis einschliesslich 10, wiedergegeben in den Tabellen B bis einschliesslich D, die sich auf Kaffee präparate beziehen, wird nachstehende Versuchsmethode an gewendet:
Zu 120 ml warmem Wasser, in dem 1 g löslicher Kaffee gelöst sind, wurden nachstehende Verbindungen oder Gruppen von Verbindungen zugegeben. Jeder Stoff wird in Form einer 0,01- bis 1 Wsigen Verdünnung, abhängig von seiner
Stärke, zugegeben. Wo ppm steht, ist die Konzentration des unverdünnten Materials gemeint.

Die in der Tabelle B aufgeführten Verbindungen gaben dem löslichen Kaffee, wenn sie gesondert (Beispiele 1 bis 7) oder in Kombination (Beispiel 8) als Zusätze zu in üblicher Weise hergestelltem löslichem Kaffee angewendet wurden, organoleptisch eine deutliche Kakaonote und eine Bereiche rung der gebrannten Note in dem löslichen Kaffee.

Die Geschmacks- und Riechstoffe können in verschiedenen Formen verwendet werden. Sie werden vorzugsweise in Form einer Lösung verwendet, wodurch die Anwendung in bequemer und genauer Weise möglich ist.
Die verwendete Menge der Geschmacks- und Riechstoffe variiert stark, abhängig von der Intensität des gewünschten Aromas und des Aromas, das der verwendete Geschmacksund Geruchsbestandteil verleiht. So verleiht z. B. eine Menge im Bereich von 0,005 bis 100 ppm, bezogen auf das Gewicht des zu geniessenden Nahrungsmittels, ein sehr fades Aroma bis zu einem sehr starken Aroma. Wie dem Fachmann klar sein dürfte, wird mit dem hier verwendeten Ausdruck Geschmack und Geruch oder Aroma verleihend , die Verstärkung, Veränderung oder Modifikation von Geschmacks- und Geruchseigenschaften in der Weise, wie Geschmacks- und Riechstoffe normalerweise verwendet werden, bezeichnet.
Manche der erfindungsgemäss verwendeten Verbindungen sind neue Verbindungen. Diese sind in der Tabelle A mit den folgenden Nummern bezeichnet:
Verbindungen Nr. 6, 7, 8, 9, 10, 11, 12, 16, 17, 18, 19.
Es folgt eine Beschreibung der Herstellung der oben er wähnten Verbindungen.
Herstellung der Verbindung Nr. 6 (Methanthiolisovalerat)
Diese Verbindung wurde hergestellt aus Isovalerylchlorid oder Isovaleriansäureanhydrid und Methylmercaptan nach dem allgemeinen Verfahren, beschrieben in Houben-Weyl, 4. Auflage, Bd. 9, S. 753 (1955).
Der Siedepunkt betrug 45 bis 47" C/12 mm; nD20 = 1,4597. Die übrigen Thiolester wurden gleichfalls aus dem entsprechenden Säurechlorid oder Säureanhydrid hergestellt.
In dem man nach dem oben beschriebenen allgemeinen Verfahren arbeitete, wurde nachstehende Verbindung hergestellt:
Verbindung Nr. 7 (Methanthiolanteisovalerat)
Siedepunkt 45 bis 47" C/12 mm
Herstellung der Verbindung Nr. 9 (a-Methyldithioisobutyraldehyd)
Diese Verbindung wurde dadurch hergestellt, dass man a-Mercaptoisobutyraldehyd bei -10" C in Äther als Lösungsmittel mit CH3SCI versetzt [siehe Chem. Berichte 86, 561 (1953)]. Die Herstellung von a-Mercaptoisobutyraldehyd wurde in Ann. 611, 129 (1958) beschrieben. Siedepunkt 120" C/12 mm.
Herstellung der Verbindung Nr. 10 (a -Methyldithioisovaleraldehyd)
Diese Verbindung wurde aus a-Mercaptoisovaleraldehyd in analoger Weise, wie für die Verbindung Nr. 9 beschrieben, hergestellt; Siedepunkt 850 C/2 mm.
Herstellung der Verbindung Nr. 11 (Äthyl-a-methyldithiopropionat)
Diese Verbindung wurde aus Äthyl-a-mercaptopropionat hergestellt durch Anwendung desselben Verfahrens, das beschrieben wurde für die Verbindung Nr. 9. Die intermediäre a-Mercaptoverbindung wurde durch Umsetzung von Äthyla-brompropionat und Thioformamid [vgl. Ber. 90, 1837 (1957)] erhalten. Siedepunkt 105-107" C/12 mm; nDZO =
1,4994.
Herstellung der Verbindung Nr. 17 (Äthyl-a -methyldithi oisobutyrat)
Diese Verbindung wurde aus Äthyl-a-mercaptoisobutyrat hergestellt durch Anwendung desselben Verfahrens, das beschrieben wurde für die Verbindung Nr. 9. In diesem Fall wurde die a-Mercaptoverbindung durch Umsetzung von Äthyl-a-bromisobutyrat mit Kaliumthioacetat und anschliessende Hydrolyse der Thioacetatgruppe erhalten. Als Lösungs mittel wurde Äthanol verwendet. Siedepunkt 58-65 C/
1 mm.
Herstellung der Verbindung Nr. 12 (a-Methyldithioisobutyronitril)
Diese Verbindung wurde aus a-Mercaptoisobutyronitril hergestellt durch Anwendung desselben Verfahrens, das be schrieben wurde für die Verbindung Nr. 9. Siedepunkt 50 bis 52"C/1 mm.
Herstellung der Verbindung Nr. 18 (8-Methyldithiopropionaldehyd)
Diese Verbindung wurde durch Zusatz von Thioessigsäure zu Acroleindiäthylacetal hergestellt [vgl. J. Chem. Soc.
2123 (1951)]. Das erhalteness-Acetylthiopropionaldehyd- diäthylacetat wurde unter Bildung des Mercaptoacetals verseift, das sodann mit CH3SCI behandelt wurde, wie beschrie ben für die Verbindung Nr. 9. Schliesslich wurde die Acetalgruppe mit verdünnter Säure hydrolysiert. Siedepunkt 65 bis 67 C/1 mm.
Herstellung der Verbindung Nr. 19 (a -Methylmercapto-n-valeraldehyd)
Diese Verbindung wurde aus a-Brom-n-valeraldehyd und Natriummercaptid nach dem in Compt. Rend. 252, 728 (1962) beschriebenen Verfahren hergestellt. Siedepunkt 76-78 C/16 mm.
Herstellung der Verbindung Nr. 8 (a -Methylmercaptoisovaleraldehyd)
Diese Verbindung wurde aus a-Bromisovaleraldehyd hergestellt durch Anwendung desselben Verfahrens wie beschrieben für die Verbindung Nr. 19. Siedepunkt 55-58" C/11 mm.
Herstellung der Verbindung Nr. 16 (Äthyl-a-methylmercapto-n-valerat)
Diese Verbindung wurde aus a-Brom-n-valerat und Natriummethylmercaptid hergestellt unter Anwendung von Äthanol als Lösungsmittel. Siedepunkt 92-93" C/12 mm.
The invention is based on the finding that certain compounds and mixtures thereof are useful as agents capable of imparting both liquid and solid foods, luxury foods, beverages, etc., a taste and smell of roasted or burnt note. For the sake of convenience, these substances intended for human consumption are hereinafter referred to as food. It is noted, however, that this term includes not only liquid or solid substances normally regarded as food, but also other substances for internal use, such as pharmaceutical preparations, e.g. B. cough syrup.
According to the invention, in particular aroma constituents or mixtures thereof are used which tend to give foods and luxury foods a roasted or burnt note or to intensify an aroma produced by the Browning reaction between amino acids and sugars. Examples of luxury foods are z. B. Coffee or cocoa-flavored drinks or their substitutes. Examples of roasted foods are e.g. B.
Grains and foods that use roasted or roasted seeds, or beans, meat, ready-to-cook dishes, certain baked dishes and confectionery. Examples of roasted cereals are e.g. B. popcorn and corn flakes. Examples of baked ready-to-cook dishes are e.g. B. Baked beans and soy protein dishes. Examples of baked dishes are e.g. B. roasted marsh mallows, candy canes in which roasted nuts are processed, frozen dough, bark bread and bread with burnt seeds. It has now been found that certain chemical compounds or mixtures thereof can be used as flavor and smell components for naturally occurring or synthetic luxury foods and foods.
These compounds can generally be classified as organic sulfur compounds containing the grouping CH3 (S) n-, where n is an integer with a value of at least 1.
The chemical compounds and their mixtures which can be used as flavorings and fragrances in the process according to the invention are shown in column 1 of Table A below.
It should be noted that the odor and taste contribution mentioned in column 2 is perceived at the concentrations mentioned in column 3.

The flavors and fragrances can be used in various forms. They are preferably used in the form of a solution, which enables them to be used in a convenient and accurate manner.
The amount of flavor and fragrance used will vary widely depending on the intensity of the aroma desired and the aroma imparted by the flavor and smell ingredient used. So gives z. B. an amount in the range from 0.005 to 100 ppm, based on the weight of the food to be enjoyed, a very bland aroma to a very strong aroma. As should be clear to the person skilled in the art, the term “taste and smell” or “imparting aroma” used here denotes the enhancement, alteration or modification of taste and smell properties in the manner in which taste and odorous substances are normally used.
Some of the compounds used according to the invention are new compounds. These are identified in Table A with the following numbers:
Compounds No. 6, 7, 8, 9, 10, 11, 12, 16, 17, 18, 19.
The following is a description of the preparation of the above-mentioned compounds.
Preparation of compound no.6 (methanethiol isovalerate)
This compound was prepared from isovaleryl chloride or isovaleric anhydride and methyl mercaptan by the general procedure described in Houben-Weyl, 4th edition, Vol. 9, p. 753 (1955).
The boiling point was 45 to 47 "C / 12 mm; nD20 = 1.4597. The other thiolesters were also prepared from the corresponding acid chloride or acid anhydride.
Using the general procedure outlined above, the following compound was prepared:

Preparation of compound no.9 (a-methyldithioisobutyraldehyde)
This compound was prepared by adding CH3SCI to α-mercaptoisobutyraldehyde at -10 "C in ether as a solvent [see Chem. Reports 86, 561 (1953)]. The preparation of α-mercaptoisobutyraldehyde was described in Ann. 611, 129 ( 1958). Boiling point 120 "C / 12 mm.

Preparation of compound no.17 (ethyl-a -methyldithioisobutyrate)
This compound was prepared from ethyl α-mercaptoisobutyrate by using the same procedure as described for Compound No. 9. In this case, the α-mercapto compound was obtained by reacting ethyl α-bromoisobutyrate with potassium thioacetate and then hydrolyzing the thioacetate group. Ethanol was used as the solvent. Boiling point 58-65 C /
1 mm.
Preparation of compound no.12 (a-methyldithioisobutyronitrile)
This compound was prepared from α-mercaptoisobutyronitrile by using the same procedure that was described for compound no. 9. Boiling point 50 to 52 "C / 1 mm.
Preparation of compound no.18 (8-methyldithiopropionaldehyde)
This compound was prepared by adding thioacetic acid to acroleindiethylacetal [cf. J. Chem. Soc.
2123 (1951)]. The ß-acetylthiopropionaldehyde diethyl acetate obtained was saponified to form the mercaptoacetal, which was then treated with CH3SCI, as described for compound no. 9. Finally, the acetal group was hydrolyzed with dilute acid. Boiling point 65 to 67 C / 1 mm.
Preparation of compound no. 19 (a -methyl mercapto-n-valeraldehyde)
This compound was prepared from a-bromo-n-valeraldehyde and sodium mercaptide according to the method described in Compt. Rend. 252, 728 (1962). Boiling point 76-78 C / 16 mm.
Preparation of compound no. 8 (a -methyl mercaptoisovaleraldehyde)
This compound was prepared from α-bromoisovaleraldehyde using the same procedure as described for Compound No. 19. Boiling point 55-58 "C / 11 mm.
