Les aliments de secours sont généralement conçus pour permettre à un individu de survivre dans des conditions d'isolement ou d'environnement hostile par absorption de ces seuls aliments. Ceux-ci doivent donc présenter, sous forme concentrée,
des caractéristiques équivalentes à celles d'un ensemble d'aliments naturels qu'ils sont parfois amenés à remplacer durant de longues périodes.
Ces types d'aliments étaient jusqu'à présent utilisés uniquement dans des cas exceptionnels, par exeple par des membres d'une expédition explorant des contrées inconnues sans aucune liaison matérielle avec leurs bases des pays civilisés.
La possibilité d'éventuelles guerres atomiques a cependant provoqué depuis peu un regain d'intérêt pour ces aliments de secours.
En effet, au cours d'une guerre atomique, des tin & vidus résidant dans une zone contaminée n'auront à leur disposition aucune nourriture assimilable sans danger autre que les réserves alimentaires préalablement constituées. Ces aliments devront donc pouvoir suppor ter de longues
durées de stockage et présenter des carac- téristiques telles qu'ils puissent subvenir aux besoins des personnes qui les utilisent à l'exclusion de tout aliment naturel, sans que ces personnes risquent de s'en lasser, même si.
elles en consomment à tous les repas pendant de longues périodes.
L'aliment de secours fabriqué par le procédé selon la présente < invention répond à ces impératifs et consti tue, sous un faible volume, une nourriture équilibrée, à haute valeur énergétique et à longue durée de conser vation.
ils se compose essentiellement d'un mélange solide, partiellement insoluble, d'aliments naturels déshydratés et de quantités minimes, de produits chroniques permet tant de remédier à certaines carences;
ce mélange étant tel qu'il présente .une valeur énergétique égale au moins à 4,5 calories par gramme, et.
qu'il comporte au plus 10 % d'humidité et environ 25% de protides, 30,1% de glucides et 35 % de lipides.
Les études effectuées par le titulaire ont en effet montré que ces quantités relatives de composants per mettent seules à un homme de subsister sans utiliser d'aliments autres que l'aliment de secours pendant une longue période.
Les quantités des produits naturels utilisés et leurs qualités respectives -sont telles que l'aliment de secours ainsi obtenu puisse se conserver pendant plusieurs années et que son goût permette de ne pas s'en lasser même si on le consomme pendant
plusieurs jours, en l'absence de toute autre nourriture.
L'aliment :solide et partiellement insoluble fabriqué par le procédé selon l'invention présente l'avantage de pouvoir être utilisé soit à sec, soit à l'état de purée, soit à l'état de :
soupe par dilution partielle dans un liquide, ce qui contribue à donner l'iâusmom d'une -variété d'aili- menu. En outre; son insolubilité relative apporte au consommateur la possibilité d'une mastication.
A titre d'exemple, un tel aliment de secours peut être réalisé avec les éléments énumérés dans le Tableau I, dont les quantités relatives peuvent, bien, entendu, varier légèrement,
à condition de ne pas détruire un équilibre assurant noie bonne conservation du produit résultant.

La -viande de b#uf maigre est -cuite en contrôlant la température, qui ne doit pas être inférieure à 1100 C ni supérieure à 1250 C ;
le bouffon est récupéré, pour subir ensuite une concentration et être réincorporé à la viande afin que cette dernière conserve les éléments essentiels de sa valeur nutritive. La déshydratation est faite enfin sous vide,
à une température inférieure à 75o C.
La viande d e b#uf grasse doit être d'abord frite dans la graisse, à température inférieure au point de modi- fication de cette dernière.
Les farines de légumineuses sont préalablement cuites sous vapeur afin d'assurer un coefficient de digestion des amidons convenable, connue indiqué Ci-après.
Ira pomme de terre est bien cuite et déshydratée, selon un procédé de décollement ou de protection des cellules d'amidon, de façon à éviter la libération de l'ami don de structure, et doit être constituée, au moins pour 70 0/0, de poudre monocellulaire.
Le poulet est cuit en autoclave, sous double enve loppe, à une température inférieure à 1150 C, avec légère production de vapeur interne pour assurer d'entraînement des bouillons et graisses et éviter le rôtissage. Le bouillon est ensuite concentré à basse température,
1000 C au maximun, et est réÉncorporé à la viande avant déshydra tation. Le mélange ainsi préparé doit :
subir une stérilisa- tion rapide de 15 minutes à 1251) C, afin d'assurer une destruction bactériologique aussi parfaite que possible. La déshydratation est ensuite effectuée à basse tettnpé- rature, soit 750 C au maximum.
La. graisse de poulet est chauffée à une température n'excédant pas 1000 C, pour subir ensuite un traitement de filtrage sur couche- de sel afin de saumurer les quel ques particules d'eau restante et éviter par la suite un développement bactériologique.
La viande de poulet ainsi déshydratée, ne devant pas contenir plus de 5 % d'humidité, est ensuite mélangée intimement à la graisse préparée comme ci-dessus, avec à nouveau 20 % de sel,
afin de .saumurer la partie d'eau restante.
L'ensemble des mélanges successifs des différents éléments doit être fait à une température environnant 400 C, afin que Ses amidons et autres éléments .soient intbmement mélangés et que les graisses végétales à bas point de fusion (moins de 40 C) soient incorporées à l'ensemble.
Lorsque le mélange obtenu est suffisamment homo gène, on le soumet à une compression pour en réduire le volume.
Les caractéristiques analytiques de l'aliment de se cours ainsi préparé .sont résumées dans le Tableau II, les valeurs relatives indiquées se rapportant à 100 gram mes de produit.
