Appareil congélateur La présente invention a pour objet un ap pareil congélateur, caractérisé par une enve loppe allongée à chaque extrémité de laquelle un compartiment est formé au moyen d'une plaque étanche transversale, ces deux compar timents étant reliés entre eux, d'une part, par un tube central, et, d'autre part, par une série de tubes congélateurs, de diamètre plus petit que celui du tube central et disposés autour de ce dernier, une hélice montée dans l'axe du tube central sur un arbre accouplé à un mo teur d'entrainernent permettant de mettre en circulation de l'eau à congeler remplissant les tubes congélateurs,
le tube central et les deux compartiments extrêmes.
Le dessin représente, à titre d'exemple, deux formes de réalisation de l'appareil selon l'invention, utilisant comme fluide refroidis seur de la saumure froide.
La fig. 1 est une coupe verticale par l'axe de la première forme de réalisation.
La fig. 2 est une coupe verticale par l'axe de la seconde forme de réalisation.
Les fig. 3 et 4 représentent, schématique ment, les circuits de deux installations com prenant, respectivement, la première, la forme de réalisation de la fig. 1 et la deuxième, la forme de réalisation de la fig. 2. La première forme de réalisation (fig. 1) comporte une enveloppe cylindrique allongée verticale 1 à chaque extrémité de laquelle un compartiment est formé au moyen d'une pla que étanche transversale 3, respectivement 4.
Ces compartiments sont reliés entre eux par un tube central vertical 2 et par une série de tubes congélateurs verticaux 7 de plus petit diamètre que le tube 2 et disposés autour de ce dernier. A chacun de ces compartiments est adjacente une chambre de section annulaire formée par la plaque étanche correspondante 3, respectivement 4, et une cloison étanche 3', respectivement 4', traversée par les tubes 2 et 7.
Les cloisons 3' et 4' délimitent un espace central de section annulaire compris entre l'en veloppe 1 et le tube 2 traversé par les tubes congélateurs 7. Cet espace central est muni d'une tubulure d'entrée inférieure -5 et d'une tubulure de sortie supérieure 6 et des chicanes 8 disposées dans cet espace ménagent à un fluide s'écoulant dans cet espace de la tubulure 5 vers la tubulure 6, un trajet hélicoïdal au tour du tube central 2. La chambre de section annulaire supérieure communique par une tu bulure 6" avec la tubulure 6 et est pourvue d'une seconde tubulure 6'. La chambre de sec tion annulaire inférieure communique par une tubulure 5" avec la tubulure 5 et est pour vue d'une seconde tubulure 5'.
Un clapet 17 est disposé à la base du tube cen tral 2.
L'enveloppe 1 est munie d'un couvercle comportant une tubulure d'amenée d'eau 13 dans le compartiment supérieur et une tubu lure 14 pour l'expansion de l'eau au moment de la congélation. Le compartiment inférieur est fermé par un fond amovible 15 de l'en veloppe 1, muni d'une vidange 16. Une hélice 18, montée dans l'axe du tube central 2, sur un arbre 19, est entrainée par un moteur 20 fixé au-dessus du couvercle 12 muni d'un presse-étoupe 21 ; cette hélice 18 tourne dans un sens tel qu'elle crée une circulation forcée ascendante dans le tube central 2 et descen dante dans les tubes congélateurs 7, à contre- courant de la circulation de la saumure.
Le fonctionnement est le suivant : les tu bes 7 sont remplis d'eau. Grâce aux chicanes 8, la saumure circule de bas en haut, à grande vitesse et à faible débit, selon des directions sensiblement normales aux petits tubes congé lateurs 7. On réunit ainsi les meilleures con ditions pour une congélation rapide de l'eau avec un très faible écart de température entre la saumure et l'eau, et ceci sans danger d'écla tement des tubes. Il est donc possible de con geler l'eau à coeur, pour former des cylindres de glace pleins. On peut naturellement arrê ter la congélation un peu plus tôt de manière à obtenir des cylindres de glace creux.
La sau mure froide n'étant pas admise dans les cham bres de section annulaire supérieure et infé rieure, la congélation de l'eau aux extrémités des tubes 7 n'est pas totale ; la formation de glace sur les plaques 3 et 4 est ainsi évitée et le démoulage facilité.
La circulation forcée de l'eau en refroidis sement améliore considérablement le coeffi cient de transmission de la chaleur, précisé ment du côté où il est normalement le moins bon, c'est-à-dire sur la face interne des tubes congélateurs 7, pendant le refroidissement de l'eau, ou au contact de la couche de glace en formation, quand la congélation a commencé.
Au moment où tous les tubes se trouvent obstrués par des bouchons de glace, l'hélice continue à brasser l'eau du tube central 2, ou bien, dans une variante, le moteur est arrêté automatiquement, par l'intermédiaire d'un relais.
Le démoulage s'obtient en ouvrant la vi dange 16, en démontant le fond amovible 15 de l'enveloppe 1 et en envoyant de la sau mure tiède au contact des tubes 7, dans les trois espaces de section annulaire compris en tre les plaques 3 et 4, grâce aux tubulures 5', 6' 5" 6".
Le clapet 17 retient dans le tube central 2 l'eau froide qu'il contient. L'eau du comparti ment supérieur et l'eau de fusion de la glace peut être recueillie et utilisée pour le remplis sage des tubes congélateurs 7.
Dans l'installation représentée à la fig. 3 qui comprend l'appareil de la fig. 1, les tubu lures 5 et 6 communiquent pendant la congé lation avec le circuit de saumure froide de l'évaporateur-refroidisseur 22, les vannes 23 et 24 étant ouvertes et les vannes 25 et 26 fer mées. Pour le démoulage, on ferme les vannes 23 et 24 et on ouvre les vannes 25 et 26, ce qui permet la libre communication des tubu lures 5' et 6' avec le réservoir de saumure tiède 27 muni d'un vase d'expansion 28.
Ce réservoir 27 comporte deux serpentins 29 et 30 ; l'un, 29, est parcouru par l'eau pure ser vant à remplir l'appareil congélateur, l'autre, 30, est placé sur le circuit de liquéfaction de la machine frigorifique à la sortie du conden- seur. Le serpentin 29 peut éventuellement suf fire au réchauffage de la saumure tiède. Celle- ci, en effet, circule dans l'appareil congélateur pendant le démoulage dans les mêmes condi tions favorables d'échange de chaleur que la saumure froide pendant la congélation.
Une saumure ayant une température de quelques degrés seulement au-dessus de zéro (-f- 5o par exemple) permet ainsi d'obtenir un décollage rapide des bâtons de glace formés dans les tubes congélateurs 7.
La pompe de circulation 31 de la saumure froide sert à la circulation de la saumure tiède, alternativement.
L'appareil représenté à la fig. 2 est agencé de la même façon que celui de la fig. 1, les mêmes signes de référence indiquant des élé- ments identiques, à part les différences sui vantes Le couvercle supérieur de l'enveloppe ne comporte pas de presse-étoupe pour l'arbre 19 de l'hélice 18, lequel est simplement entouré d'un tube plongeur 32, muni d'ailettes 33 et solidaire de ce couvercle. Cette disposition est rendue possible par le fait que l'hélice 18 tourne dans un sens tel qu'elle crée une circu lation descendante dans le tube central 2 et ascendante dans les tubes congélateurs 7.
En effet, la pression de l'eau en circulation est no tablement plus élevée à l'entrée qu'à la sor tie des tubes congélateurs 7, tandis que la perte de charge dans le tube central 2 est re lativement négligeable. La pression à l'entrée des tubes peut même atteindre 2 mètres d'eau quand les tubes sont fermés par la glace. Dans l'appareil de la fig. 1 cette pression s'exerce au sommet de l'appareil ; un presse-étoupe est alors nécessaire. Dans l'appareil de la fig. 2, la même pression s'exerce à la base de l'ap pareil ; la pression au sommet est très faible et le presse-étoupe n'est pas indispensable.
L'inversion du sens de circulation de l'eau à congeler dans cet appareil de la fig. 2, en traîne la suppression du clapet 17. Lorsqu'on décharge l'appareil, l'eau contenue dans le tube central 2 est simplement recueillie dans un bac et renvoyée par un éjecteur ou une pompe dans un réservoir supérieur pour le remplissage ultérieur de l'appareil. Le com partiment inférieur présente une large ouver ture de déchargement ménagée dans le cou vercle inférieur 34 de l'enveloppe 1 et fer mée par une plaque amovible 35.
Le sens de circulation de la saumure est le même que dans l'appareil de la fig. 1. En effet, cet appareil permet une vitesse de cir culation de l'eau dans les tubes 7 qui rend négligeable la différence des températures de l'eau d'une extrémité à l'autre des tubes, donc rend négligeable l'avantage du contre-courant.
Dans l'installation représentée à la fig. 4, comprenant l'appareil de la fig. 2, le circuit de saumure froide comporte un réservoir 36 et une pompe 37 ; de même, le circuit de sau- mure tiède, un réservoir 38 et une pompe 39 ; les serpentins de réchauffage sont supprimés.
Pendant la congélation, les tubulures 5 et 6 communiquent avec le circuit de saumure froide de l'évaporateur-refroidisseur 22, la pompe 37 étant en marche et la pompe 39 à l'arrêt ; la saumure circule dans l'espace de section annulaire central de l'appareil. Pour le démoulage, on arrête la pompe 37 et on met en marche la pompe 39 ; la saumure tiède circule dans les trois espaces de section annu laire de l'appareil et cède des calories à la glace. Après le démoulage, on remplit à nou veau le congélateur et on maintient la pompe 39 en marche et la pompe 37 à l'arrêt.
Au bout d'un temps très court, l'eau de remplis sage a réchauffé la saumure tiède à une tem pérature suffisante pour le démoulage suivant ; on arrête alors la pompe 39 et on remet en marche la pompe 37. Il est clair que dans chaque cas les vannes de commande de la circulation seront manoeuvrées de façon ap propriée.

Figs. 3 and 4 represent, schematically, the circuits of two installations comprising, respectively, the first, the embodiment of FIG. 1 and the second, the embodiment of FIG. 2. The first embodiment (Fig. 1) comprises an elongated vertical cylindrical envelope 1 at each end of which a compartment is formed by means of a transverse waterproof plate 3, respectively 4.
These compartments are interconnected by a vertical central tube 2 and by a series of vertical freezer tubes 7 of smaller diameter than the tube 2 and arranged around the latter. Adjacent to each of these compartments is a chamber of annular section formed by the corresponding sealed plate 3, respectively 4, and a sealed partition 3 ', respectively 4', through which the tubes 2 and 7 pass.
The partitions 3 'and 4' delimit a central space of annular section between the casing 1 and the tube 2 crossed by the freezer tubes 7. This central space is provided with a lower inlet pipe -5 and an upper outlet pipe 6 and baffles 8 arranged in this space provide a fluid flowing in this space from the pipe 5 to the pipe 6, a helical path around the central tube 2. The chamber of upper annular section communicates by a tube 6 "with the tube 6 and is provided with a second tube 6 '. The lower annular section chamber communicates by a tube 5" with the tube 5 and is for view of a second tube 5'.
A valve 17 is arranged at the base of the central tube 2.
The casing 1 is provided with a cover comprising a pipe for supplying water 13 in the upper compartment and a pipe 14 for the expansion of the water at the time of freezing. The lower compartment is closed by a removable bottom 15 of the casing 1, provided with a drain 16. A propeller 18, mounted in the axis of the central tube 2, on a shaft 19, is driven by a motor 20 fixed. above the cover 12 provided with a stuffing box 21; this propeller 18 rotates in a direction such that it creates a forced circulation upward in the central tube 2 and downward in the freezer tubes 7, against the flow of the brine.
The operation is as follows: the tu bes 7 are filled with water. Thanks to the baffles 8, the brine circulates from bottom to top, at high speed and at low flow, in directions substantially normal to small freezing tubes 7. The best conditions for rapid freezing of the water with a very low temperature difference between the brine and the water, without danger of shattering the tubes. It is therefore possible to freeze the water through to the core, to form full ice cylinders. We can of course stop freezing a little earlier so as to obtain hollow ice cylinders.
The cold sausage is not allowed in the upper and lower annular section chambers, the freezing of the water at the ends of the tubes 7 is not complete; the formation of ice on the plates 3 and 4 is thus avoided and demolding facilitated.
The forced circulation of the cooling water considerably improves the heat transmission coefficient, precisely on the side where it is normally the least good, that is to say on the internal face of the freezer tubes 7, during cooling of the water, or in contact with the layer of ice being formed, when freezing has started.
When all the tubes are blocked by ice plugs, the propeller continues to stir the water from the central tube 2, or else, in a variant, the engine is stopped automatically, via a relay .
Demoulding is obtained by opening the drain 16, by removing the removable bottom 15 from the casing 1 and by sending lukewarm brine in contact with the tubes 7, in the three spaces of annular section included between the plates 3 and 4, thanks to the pipes 5 ', 6' 5 "6".
The valve 17 retains the cold water it contains in the central tube 2. The water from the upper compartment and the water of ice melt can be collected and used for the wise filling of the freezer tubes 7.
In the installation shown in fig. 3 which comprises the apparatus of FIG. 1, the pipes 5 and 6 communicate during freezing with the cold brine circuit of the evaporator-cooler 22, the valves 23 and 24 being open and the valves 25 and 26 closed. For demoulding, the valves 23 and 24 are closed and the valves 25 and 26 are opened, which allows free communication of the pipes 5 'and 6' with the lukewarm brine tank 27 fitted with an expansion vessel 28 .
This reservoir 27 has two coils 29 and 30; one, 29, is traversed by pure water serving to fill the freezer, the other, 30, is placed on the liquefaction circuit of the refrigerating machine at the outlet of the condenser. The coil 29 may possibly suffice for reheating the lukewarm brine. This, in fact, circulates in the freezer during demolding under the same favorable heat exchange conditions as the cold brine during freezing.
A brine having a temperature of only a few degrees above zero (-f- 5o for example) thus makes it possible to obtain rapid detachment of the ice cream sticks formed in the freezer tubes 7.
The cold brine circulation pump 31 serves to circulate the lukewarm brine, alternately.
The apparatus shown in FIG. 2 is arranged in the same way as that of FIG. 1, the same reference signs indicating identical elements, except for the following differences The upper cover of the casing does not have a gland for the shaft 19 of the propeller 18, which is simply surrounded by a dip tube 32, provided with fins 33 and integral with this cover. This arrangement is made possible by the fact that the propeller 18 rotates in a direction such that it creates a downward circulation in the central tube 2 and upward in the freezer tubes 7.
In fact, the pressure of the circulating water is significantly higher at the inlet than at the outlet of the freezer tubes 7, while the pressure drop in the central tube 2 is relatively negligible. The pressure at the inlet of the tubes can even reach 2 meters of water when the tubes are closed by ice. In the apparatus of FIG. 1 this pressure is exerted at the top of the device; a cable gland is then necessary. In the apparatus of FIG. 2, the same pressure is exerted at the base of the apparatus; the pressure at the top is very low and the cable gland is not essential.
Reversing the direction of circulation of the water to be frozen in this appliance in fig. 2, results in the removal of the valve 17. When the device is unloaded, the water contained in the central tube 2 is simply collected in a tank and returned by an ejector or a pump to an upper tank for the subsequent filling of the device. The lower compartment has a wide unloading opening made in the lower cover 34 of the casing 1 and closed by a removable plate 35.
The direction of circulation of the brine is the same as in the apparatus of fig. 1. Indeed, this device allows a water circulation speed in the tubes 7 which makes the difference in water temperatures from one end of the tubes to the other negligible, thus rendering the advantage of the tube negligible. against the current.
In the installation shown in fig. 4, comprising the apparatus of FIG. 2, the cold brine circuit comprises a reservoir 36 and a pump 37; likewise, the lukewarm brine circuit, a reservoir 38 and a pump 39; the heating coils are omitted.
During freezing, the pipes 5 and 6 communicate with the cold brine circuit of the evaporator-cooler 22, the pump 37 being on and the pump 39 off; the brine circulates in the central annular section space of the apparatus. For demolding, the pump 37 is stopped and the pump 39 is started; the lukewarm brine circulates in the three spaces of the annular section of the apparatus and transfers calories to the ice. After demoulding, the freezer is refilled and the pump 39 is kept on and the pump 37 off.
After a very short time, the filling water has reheated the lukewarm brine to a temperature sufficient for the next demolding; the pump 39 is then stopped and the pump 37 is restarted. It is clear that in each case the circulation control valves will be operated in an appropriate manner.
