On connaît déjà de tels appareils, dans lesquels les couteaux sont des lames planes, disposées parallèlement ou obliquement les unes par rapport. aux autres. On a constaté cependant qu'il est difficile de trouver l'épaisseur convenable pour ces couteaux. En effet, si elle est forte (0,4 à 0,5 mm), l'oignon se coupe mal et s'écrase; si elle est plus faible (0,2 mm par exemple), il y a. danger de cassure, et l'on risque de trouver (les morceaux d'acier dans les aliments.
La présente invention a. pour but de remédier à cet inconvénient et fournit une machine à couper les oignons caractérisée en ce (lue les couteaux ont. la forme de surfaces cylindriques partielles dont les axes sont pa rallèles à l'axe du cylindre, la distance entre couteaux adjacents variant d'un point à un < autre.

Un cylindre creux 1, en forme de cloche, se prolonge au-delà de sa. base supérieure par une tige creuse 2 dans laquelle s'engage im piston 3 terminé par un bouton 4. Un res sort 5 s'appuyant sur la base supérieure du cylindre 1 et sur le bouton 4 maintient le piston 3 éloigné du cylindre 1. Le piston 3 est solidaire d'une masse 6 .dans laquelle sont fixés les couteaux 7. Ces derniers sont encore guidés par une plaque 8, munie de fentes et pouvant coulisser par rapport aux couteaux. Les couteaux 7 ont la forme de surfaces ey- lindriques partielles dont les axes sont paral lèles à l'axe du cylindre 1.
La fig. 2 montre clairement une disposition possible des couteaux, vue de dessous. On remarque qu'ils ne sont pas placés parallèlement les uns aux autres, de sorte que la distance entre cou teaux voisins varie d'un point à un autre.
Le fonctionnement de la. machine est le suivant: On introduit un oignon 9 dans le cylindre 1, puis on appuie sur le bouton 4. Les couteaux 7 coupent, l'oignon une pre- znière fois en morceaux grossiers. On lâche le bouton 4 qui remonte sous l'action du res sort 5. On fait tourner d'un certain angle le piston 3 afin de modifier l'orientation des couteaux par rapport à l'oignon et l'on presse à nouveau sur le bouton 4. L'opération se répète jusqu'à. ce que l'oignon soit haché à. la finesse désirée. Les couteaux de forme cylindrique offrent l'avantage sur les lames planes ordinaires de mieux résister aux efforts auxquels ils sont soumis.
On peut. ainsi les fabriquer en acier assez mince, sans risque de rupture.
