Verfahren zum Ausziehen von Kaffee, und Vorrichtung zur Durchführung dieses Verfahrens. Bei einem bekannten Verfahren zur Her- stellung von Kaffee, nach welchem heisses Wasser unter Druck von einem Kessel durch in einem Behälter befindlichen, gemahlenen Kaffee geleitet wird, wird der Kaffee im Aufgussbehälter, bevor Idas heisse Wasser durch ihn geleitet wird, mit kaltem Wasser durchsetzt, dessen Zufluss abgestellt wird,
so bald Flüssigkeit vom Boden .des Aufguss- behälters abzufliessen beginnt.
Gemäss der vorliegenden Erfindung wird, anstatt den Kaffee bloss mit kaltem Wasser zu durchsetzen, ,ein Strom von Wasser von ungefähr 43-60' C während des anfäng lichen Teils der Aufgiess- oder Extraktions- periode durch den Kaffee geleitet und der Aufguss oder die Extraktion alsdann mit einem Strom von heisserem Wasser während der erforderlichen Zeitdauer vollendet.
Dieses Verfahren .gestattet eine sehr voll ständige Extraktion der gewünschten Be- standteile des gemahlenen Kaffees, ohne dass der Auszug entfärbt oder trübe wird. Ausser dem kann das heisseste Wasser .des Druck- kessels während des, letzten Teils der Auf giessperiode benützt werden, ohne dass dieses für den Auszug schädlich wirkt.
Die Ausziehvorrichtung gemäss der Er findung kann so .ausgebildet sein, dass der Zufluss von kaltem, Wasser zum Aufguss- behälter durch eine thermostatische Vorrich- tung gesteuert wird, welche von der Tempe- raturdes heissen Wassers derart abhängig isst, dass, wenn,
das Absperrorgan des K@ailtwasser- zuflusses geöffnet wird, dass kalte Wasser nicht zum Aufgussbehälter fliessen kann, bevor das Heisswasserabsperrargan geöffnet wurde, so dass vom heissen Wasser, während es zum. Einlass des Aufgussbehälters fliesst,
die thermostatische Vorrichtung expandiert wird und dadurch den Zufluss des kalten Wassers gestattet, um die Temperatuz des durch den Aufgussbehälter fliessenden Wassers auf die erforderliche, verhältnis mässig niedere Temperatur zu regulieren. Das Kaltwasserabsperrorgau wird dann geschlos sen und der Zufluss von heissem Wasser wird aufrechterhalten bis die Extraktion vollendet ist.
Gewöhnlich wird kaltes Wasser während ungefähr eines Viertels oder eines Drittels der gesamten Infusions- oder Extraktions- periode zugeführt.
Zur Regulierung der Temperatur kann auch eine willkürlich verstellbare mecha nische Vorrichtung vorgesehen werden, z. B. eine Regulierschraube, welche an Stelle der thermostatischen Vorrichtung den Zufluss von kaltem Wasser steuert.
Die Verhältnisse können ferner so sein, dass die Temperatur des durch den Aufguss- behälter während des ersten Teils der Auf giessperiode fliessenden Wassers, verändert werden kann, um sie den verschiedenen Kaffeesorten anzupassen.
Die Heiss- und Kaltwasserabsperrorgane können miteinander verbunden sein, so dass sie miteinander öffnen, wobei das Kalt- wasserabsperrorga.n zur erforderlichen Zeit vor dem Heisswasserabsperrorgan geschlossen werden kann, und zwar von Hand oder auto- mansch durch Feder- oder Wasserdruck, welcher in Abhängigkeit von einer Dämp- fungseinriehtung oder einer entsprechenden Vorrichtung wirksam ist.
Die beiliegende Zeichnung zeigt schema- tiseh verschiedene beispielsweise Ausfüh- rungsfornr.en von Extraktionsvorrichtungen für Kaffee gemäss der vorliegenden Erfin dung.
Fig. 1 ist ein Aufriss, teilweise im Schnitt gezeichnet, einer ersten Ausführungsform mit einem Thermostaten; Fig. 2 ist ein Aufriss einer zweiten Aus führungsform, bei welcher der Zufluss von kaltem Wasser durch eine Regulierschraube gesteuert wird, und Fig. 3 zeigt eine dritte Ausführungsform, bei welcher die Heiss- und Kaltwasser- absperrorgane miteinander verbunden sind;
Fig. 4 ist eine Detailansicht, welche Teile der Fig. 3 in einer andern Arbeitsstellung zeigt.
In Fig. 1 bezeichnet a einen gemahlenen Kaffee enthaltenden Aufgussbehälter, wel- cheT von bekannter Bauart sein kann;
b ist ein Heisswasserzuflussrohr, welches von einem Druckkessel kommt und an den untern Teil des Behälters a angeschlossen ist; c ist ein Kalt-%vasserzuflussrohr. b1 bezeichnet einen Hahn im Rohr b, und cl bezeichnet ein Ventil im Rohr c, letzteres kann schnell geöffnet werden und ist selbstschliessend, wobei die Zeitdauer, während iveleher es offen bleibt, vorzugsweise regulierbar ist.
Ein Rohr 2i2 führt vom Heisswasserdurchfluss im Boden des Behälters a zum untern Teil eines. verti kalen Rohres u, welches mit dem Deckel cq des Behälters a verbunden ist.
Im Rohr 2u ist eine thermostatische Vorrichtung d angeordnet, deren eines Ende gegen eine Regulierschraube dx stösst und welche an ihrem andern Ende eine Stange trägt, die durch eine Öffnung in einer Querwand eines Ventilgehäuses e1 dringt und einen Kegel eines Ventils e trägt; das Kaltwasserzuflussrohr c steht mit dem Ventilgehäuse e1 in Verbindung.
Wie aus Fig. 1 gesehen werden kann, nimmt die thermostatisehe Vorrichtung eine beträ.eht.liche Länge des Rohres iu in An spruch, durch welehes das heisse Wasser zum Aufgiessbehälter fliesst.
Wird angenommen, da.ss die Absperr organe cl und b1 schnell aufeinanderfolgend oder bleichzeitig geöffnet werden, so wird durch das in,dass vertikale Rohr 2c dringende beisse Wasser die thermostatische Vorrich tung d expandiert;
dadurch wird das Ventil e geöffnet und der Zufluss von kaltem Wasser ermöglicht, welches dann mit dem heissen Wasser zusammen durch das Rohr 2u zum ,obern Teil des Aufgiessbebälters fliesst, bis das .Ventil cl automatisch schliesst,
wobei während -dieser Periode das kalte Wasser die Temperatur des durch den Kaffee in dem Aufgiessbehälter fliessenden @Vassers relativ niedrig hält. Nach der Schliessung des Ven tils cl fliesst das heisse )Vasser weiter, bis der Hahn b1 geschlossen wird.
Die Temperatur des Wassers, welches während des ersten Viertels oder Drittels der Aufgiessperiode durch den Aufgiessbehälter fliesst, kann, auf ungefähr 43-50' C (oder für gewisse Kaffeesorten bis<B>60'</B> C) reguliert werden, wobei die Schraube dx so- eingestellt wird, dass das Ventil e vom Thermostaten um den Betrag geöffnet wird,
der zur Reduzierung der Temperatur -des zum,. Aufgiessbehälter fliessenden Wassers auf den gewünschten Grad erforderlich ist.
Das vertikale Rohr u mit der thermo- statischen Vorrichtung und dem Ventil e kann umgekehrt als. wie dargestellt - also mit dem Ventil e am obern Ende - angeord net werden, wobei der Heisswaasseranschluss unten am Rohr u und der Kaltwasseranschluss über dem Ventil e oben in dieses Rohr ein münden können,
so dass das, kalte Wasser nicht .durch :das Rohr zu nach aufwärts fliesst und sich. unmittelbar nachdem Ventil e mit dem heissen Wasser vermischt und mit diesem zusammen zum Aufgiessbehälter fliesst.
In @deT Anordnung nach Fig. 2 ist das Rohr u nicht mit einem Thermostaten und einem Ventil e ausgestattet, und der Zufluss voni kaltem Wasser durch das Rohr u wäh rend des ersten Teils der Aufgiessperiode wird durch '[Verstellung einer Schraube reguliert.
Fig. 3 zeigt eine Ausführung nach Art der in F'ig. 1 gezeigten, wobei aber die Ab- sperrorgane b' und c' so miteinander verbun den sind, dass die Öffnung,des Absperrorga- nes b' die Öffnung .des Ventils c' veranlasst, welches dann automatisch schliesst.
Auf der Spindel des Abssperrorganes b', welches öffnet, wenn es aus einer Mittel stellung im einen oder andern Sinn .gedreht wird, ist eine Nocke g befestigt, welche gegen einen Hebel<I>h</I> stösst, der bei <I>h'</I> drehbar gelagert ist und durch eine Feder h2 nach oben gepresst wird. An dem Hebel h ist eine Stange i angelenkt,
welche durch eine Füh rung 7c .dringt und in der Lage nach Fig. 3 gegen einen Hebel e2 des Ventils c' stösst; die Stange<I>i</I> trägt eine seitliche Nocke <I>i',</I> welche bei der Abwärtsbewegung der Stange i mit der einen Seite der Führung in Berührung gelangt und dadurch,die Stange nach rechts entgegen der Wirkung einer Feder veoschwenkt,
so dsass -das. Stangenende den Hebel c2 freigibt, wie Fig. 4 zeigt, wodurch ermöglicht wird, dass letzterer angehoben wenden kann, wenn,das Ventil c' .automatisch schliesst. Wenn das Absperrorgan b' geschlos- sen wird,
so werden der Hebel h und die Stange i .durch die Feder h2 angehoben, so dass die Stange von neuem bereit ist, den Ventilhebel c2 hinunterzudrüseken. Der Hebel c2 ist mit einem Kolben 7n gekuppelt, welcher eine Lederdichtung trägt, und in einem Dämpfungszylinder n arbeitet,
welcher eine durch eine Schraube n2 regulierbare Luftein- trittsöffnung n' aufweist;
sdie Anordnung ist so"dass,der Hebel c2 ,ohne grossen Widerstand hinuntergedrückt werden kann, aber seine Rückbewegung wird durch die Einlass- gesschwindigkeit der unterhalb des Kolbens durchs die Öffnung n' einströmenden Luft gesteuert. Es wird verstanden,
dass sdie Dämpfungseinrichtung mit dem Ventil c' zu einem. kompakten Ganzen zusammengebaut werden könnte.
Method for brewing coffee, and apparatus for carrying out this method. b is a hot water supply pipe which comes from a pressure vessel and is connected to the lower part of the container a; c is a cold% water supply pipe. b1 denotes a tap in the pipe b, and cl denotes a valve in the pipe c, the latter can be opened quickly and is self-closing, whereby the period of time while it remains open is preferably adjustable.
A pipe 2i2 leads from the hot water flow in the bottom of the container a to the lower part of a. vertical tube u, which is connected to the lid cq of the container a.
In the tube 2u a thermostatic device d is arranged, one end of which abuts against a regulating screw dx and which at its other end carries a rod which penetrates through an opening in a transverse wall of a valve housing e1 and carries a cone of a valve e; the cold water supply pipe c is connected to the valve housing e1.
As can be seen from FIG. 1, the thermostatic device takes up a considerable length of the pipe through which the hot water flows to the infusion container.
If it is assumed that the shut-off organs cl and b1 are opened rapidly one after the other or at the same time, then the thermostatic device d is expanded by the water urging in that vertical pipe 2c;
