<tb> das <SEP> Pektin <SEP> in <SEP> Arabinose <SEP> und <SEP> Galactose <SEP> hydro lysiert.
<tb> Wenn <SEP> dieses <SEP> Enzym <SEP> das <SEP> Pektin <SEP> einmal <SEP> in
<tb> Zucker <SEP> umgewandelt <SEP> hat, <SEP> wird <SEP> es <SEP> wieder <SEP> frei
<tb> und <SEP> kann <SEP> weitere <SEP> Mengen <SEP> umwandeln,
<SEP> so <SEP> dass
<tb> das <SEP> Pektin <SEP> von <SEP> später <SEP> zugegebenem <SEP> frischem

<tb> Nachdem <SEP> ein <SEP> Teil <SEP> eines <SEP> bestimmten <SEP> Saftes

<tb> wenigstens <SEP> 50 <SEP> % <SEP> gelöste <SEP> Feststoffe <SEP> enthält.
<tb> Der <SEP> Zusatz <SEP> genügender <SEP> Mengen <SEP> von <SEP> lös lichen <SEP> Stoffen, <SEP> um <SEP> die <SEP> Dichte <SEP> des <SEP> Saftes <SEP> min destens <SEP> auf <SEP> 50 <SEP> <SEP> Brix <SEP> zu <SEP> bringen, <SEP> ist <SEP> wichtig,
<tb> weil <SEP> dadurch <SEP> Gärung <SEP> und <SEP> Schäumen <SEP> der <SEP> Lö sung <SEP> während <SEP> der <SEP> folgenden <SEP> Hitzebehandlung

<SEP> Wenn <SEP> verminderter <SEP> Druck <SEP> an gewandt <SEP> wird, <SEP> ist <SEP> es <SEP> wichtig, <SEP> dass <SEP> Blasenbil dung <SEP> oder <SEP> Kochen <SEP> der <SEP> Lösung <SEP> verhindert

In manchen Fällen je doch, wie beispielsweise bei der Behandlung von Ananas- oder Orangensaft in. tropischen oder halbtropischen Ländern kann es vorteil haft sein, die Pfanne durch einen Wasser mantel zu kühlen.
