Procédé et machine pour la fabrication de biscuits. Certains biscuits sont fabriqués manuelle ment en étendant de la pâte semi-liquide sur une plaque chauffante inclinée, puis en en roulant le film obtenu après cuisson autour d'une lame de couteau. La présente invention a pour objet un procédé et une machine pour la fabrication automatique de biscuits de ce genre.
Ce procédé est caractérisé en ce qu'on forme un film de pâte continu sur une sur face chauffante mobile sur laquelle la pâte est soumise à la cuisson, on enroule hélicoïda- lement la. pâte après cuisson, de façon à for mer un tube et on découpe ce tube en tron çons.
La machine pour la mise en ouvre dudit, procédé est caractérisée en ce qu'elle comporte une surface chauffante mobile, un distribu teur de pâte comportant plusieurs petites pompes refoulant la pâte par des tuyères donnant naissance, chacune, sur la surface chauffante, à un ruban de pâte, ces rubans formant par union entre eux un film de pâte continu, des moyens pour enrouler hélicoïda- lement ce film de pâte après cuisson de fa çon à former un tube et des moyens pour dé couper ce tube en tronçons.
Le dessin annexé représente, à titre d'exemple, une forme d'exécution de cette machine.
La fig. 1 est une vue en élévation, très schématique, cette vue étant destinée surtout à montrer l'inclinaison de la surface chauf fante; la fig. 2 est une vue en plan correspon dante, mais, dans cette figure comme dans les deux suivantes, on a supposé la surface chauffante ramenée à la. position horizontale; la fig. 3 est une vue en élévation partielle à plus grande échelle; la fig. 4 est une vue en plan correspon dante; la fig. 5 est une coupe verticale partielle suivant la ligne 5-5 de la fig. 4, par l'un des dispositifs distributeurs.
Dans l'exemple d'exécution représenté, la surface chauffante est constituée par la sur face supérieure parfaitement dressée d'un an neau plan 1 de section en U (fig. 3, 4), dont les ailes sont dirigées vers le bas. Entre ces ailes est disposée une rampe à gaz 2 de chauf fage (fig. 3, 4). L'anneau 1 est rotatif au tour d'un axe X-X (fig. 1) incliné. La ligne 7n--in (fig. 2-4) représente la ligne de plus grande pente de la surface chauffante.
L'anneau 1 repose sur trois galets 3, 4, 5 (fig. 1 à 4). Les galets 3, 4 sont fous sur leurs axes 6 (fig. 3, 4) fixés à des supports 7 reposant sur le socle incliné 8. Quant au galet 5 qui entraîne .par frottement l'anneau 1 dans un mouvement de rotation suivant le sens de la flèche fi, il est calé sur un arbre 9 (fig. 3, 4) tournant dans des supports 10 fixés sur le bâti 8.
L'arbre 9 est entraîné par l'intermédiaire d'un engrenage conique 11 par l'arbre 12. Cet arbre est commandé par la transmission à chaîne 13 et pignons 14, 15 (fig. 4) par un arbre principal 16 portant une poulie d'at taque 17.
Au-dessus de la surface chauffante 1, sensiblement au niveau de son diamètre ho rizontal, dans la zone ascendante est disposé un réservoir à pâte 18 (fig. 1, 3, 4). Ce ré servoir, vertical (fig. 1), est .en communica tion par un robinet 19 et un tuyau 20 avec le corps d'un distributeur 21. Ce réservoir de pâte 18 et ce distributeur 21 sont fixés à un support 22 (fig. 3) solidaire du bâti 8.
Le distributeur comporte (fig. 3, 4, 5) une batterie de petites pompes dont les pis tons 24 (fig. 3) sont actionnés par un excen trique 25 avec lequel ils sont maintenus en contact par des ressorts 26. Le distributeur comporte, en outre, un tiroir cylindrique 27 sur lequel est claveté un levier 28 muni d'un galet 29, maintenu en contact avec une came 30 par un ressort de traction 31. La came 30 et l'excentrique 25 sont calés sur un arbre 32 qui reçoit sa commande de l'arbre 16 par une transmission à chaîne 33 et pignons 34, 35.
Le tiroir 27 comporte: d'une part, une cannelure 36 mettant en communication la tubulure 20 avec les pom pes, lorsque le levier 28 est en haut de course; et, d'autre part, des trous diamétraux 37 mettant en communication les pompes avec des ajutages 38, 39 lorsque le levier 28 est en bas de course.
Les ajutages 38 sont dirigés sur un côté du distributeur, par exemple vers l'arrière et les ajutages 39, placés dans les intervalles des ajutages 38, sont dirigés de l'autre côté. Les rubans de pâte distribués par les aju- tages 38 sont représentés hachurés en 38a (fig. 4), ceux distribués par les ajutages 39 sont représentés hachurés en sens contraire en 39a.
En amont du distributeur par rapport au sens de rotation de l'anneau 1, est disposée une brosse 40 (fig. 3, 4), figée à un arbre 41 perpendiculaire à l'anneau 1. Cet arbre 41 et commandé par l'arbre principal 16 à. l'aide d'une transmission à chaîne 42 et pi gnons 43, 44 d'un arbre intermédiaire 45 et d'un engrenage conique 46. Les arbres 41 et 45 tournent dans un support 47 qui soutient un réservoir 48 vertical. Ce réservoir 48 porte au-dessus de l'anneau 1, un robinet 49. Il contient la matière grasse habituellement employée pour empêcher l'adhérence de la pâte avec les plaques de cuisson.
Sur l'arbre 16 est articulée l'extrémité d'une pièce 50 (fig. 4). Dans l'autre extrémité de cette pièce 50 tourne un arbre 51 (fig. 4) parallèle à l'arbre 16 par lequel il est entraîné par une transmission à chaîne 52 et pignons 53, 54. Au-dessus de l'anneau 1, l'arbre 51 se prolonge en forme de lame 55 à section en feuilles de sauge; il porte, en outre, une came 56 dont la section est une courbe paral lèle à la section droite de la lame 55. Cette came 56 s'appuie sur un galet 57 dont l'axe est solidaire du bâti.
Devant l'extrémité de la lame 55 sont placés des ciseaux 58 actionnés par des biel- lettes 59, 60, des leviers 61, 62 et une bielle 63 à boutonnière 64, dans laquelle est en gagé le maneton 65 d'un levier 66 oscillant autour d'un axe 67 solidaire du bâti 8. Ce levier 66 porte un galet 68 maintenu en con tact avec une came 69 par un fort ressort de traction 70. La came 69 est calée sur l'arbre 12 et tourne dans le sens de la flèche (fig. 3).
Un ressort de faible puissance 71, agit sur la bielle 63, de manière à assurer l'ouver ture des ciseaux 58.
Un radiateur électrique, à gaz, etc., est placé sous un couvercle 72 formant tunnel et couvrant une partie de l'anneau 1.
Un racloir 73 (fig. 3, 4) articulé sur le support 47 s'applique sur l'anneau 1 entre la lame 55 et la brosse 40.
Le fonctionnement est le suivant: La pâte semi-liquide ayant été placée dans le réservoir 18, la matière grasse dans le réservoir 48, et le chauffage de l'anneau 1 étant devenu suffi sant, on ouvre d'abord le robinet 49 du réser voir 48, puis le robinet 19 du réservoir 18 de façon que la pâte ne s'écoule sur l'anneau 1 qu'après que celui-ci a été enduit régulière ment de matière grasse par la brosse 40.
Le distributeur 21 agit alors de la façon suivante: la course ascendante des pistons 24 sous l'effet de l'excentrique 25 et des res sorts 26 se produit lorsque le tiroir 27 est dans la position de la fig. 5; la pâte est as pirée par les pistons. Pendant la course des cendante, le tiroir est dans la position de la fig. 3; la pâte est refoulée dans les ajutages 38, 39.
La pâte employée est une pâte semi- liquide (le fluidité suffisante pour que, après s'être écoulée des ajutages 38 et par suite du mouvement de l'anneau 1, elle s'étale en ru bans continus 38a laissant entre eux des es paces libres qui sont ensuite couverts par la pâte s'écoulant des ajutages 39 qui forment des rubans 39a. L'anneau se trouve ainsi re couvert finalement d'un film F (fig. 4) con tinu tant dans le sens de la longueur que de la largeur en raison de la fluidité de la pâte. Cette pâte commence par se dessécher à dé couvert, puis termine sa cuisson en passant dans le tunnel ,72.
Après avoir dépassé la lame 55, l'extrémité du film est détachée de l'anneau 1 par le racloir 73, puis elle est en gagée rapidement à l'aide d'une spatule au tour de la lame 55, afin d'y amorcer son en- roulement. La machine prend alors sa marche continue. Le rapport des vitesses de l'an neau 1 et de la lame 55 est établi pour pro duire une légère traction sur le film. Ce der nier s'enroule tout en glissant longitudinale ment sur la lame 55 par suite de l'inclinai son de cette dernière.
L'enroulement est donc hélicoïdal, ce qui forme un tube continu dont la section inté rieure est celle de la lame 55.
Ce tube passe à l'extrémité de cette lame 55 entre les ciseaux 58 qui le découpent en tronçons par un mouvement très rapide ob tenu comme suit: A partir -du moment où les différents organes occupent la position indi quée par la fig. 3, la came 69 tournant dans le sens de la flèche agit sur le galet 68 et le levier 66 en tendant le ressort 70. Le ressort 71 entraîne la bielle 63 dans le même mouve ment; l'ouverture des ciseaux 58 augmente jusqu'à ce que le galet 68 ait parcouru toute la rampe de la came 69.
Le levier 66 revient alors brusquement à la position représentée. à la fig. 3 entraînant les ciseaux 58 vers leur position de fermeture qu'ils atteignent grâce à la force vive acquise et grâce à la bouton nière de la bielle 63. Le ressort 71 ramène aussitôt la bielle 63 et les ciseaux à la posi tion de la fig. 3. Le tube de pâte cuite se trouve ainsi coupé pendant sa rotation sans que les parties voisines de la coupe soient dé formées.
Chaque tronçon constitue un biscuit. Naturellement, l'invention n'est nulle ment limitée au mode d'exécution représenté -et décrit, qui n'a été choisi qu'à titre d'exem ple.
Method and machine for the production of cookies. Some cookies are made by hand by spreading semi-liquid dough on an inclined hot plate, then rolling the film obtained after baking around a knife blade. The machine for implementing said method is characterized in that it comprises a movable heating surface, a dough distributor comprising several small pumps forcing the dough through nozzles each giving rise to a heating surface on the heating surface. ribbon of dough, these ribbons forming by union with one another a continuous film of dough, means for helically winding this film of dough after baking so as to form a tube and means for cutting this tube into sections.
The appended drawing represents, by way of example, an embodiment of this machine.
Fig. 1 is an elevational view, very schematic, this view being intended above all to show the inclination of the heating surface; fig. 2 is a corresponding plan view, but, in this figure as in the following two, it is assumed that the heating surface is reduced to the. horizontal position; fig. 3 is a partial elevational view on a larger scale; fig. 4 is a corresponding plan view; fig. 5 is a partial vertical section taken along line 5-5 of FIG. 4, by one of the dispensing devices.
In the exemplary embodiment shown, the heating surface is formed by the perfectly upright upper surface of a plane neau 1 of U-shaped section (Fig. 3, 4), the wings of which are directed downwards. Between these wings is arranged a gas ramp 2 for heating (fig. 3, 4). Ring 1 is rotatable around an inclined X-X axis (fig. 1). Line 7n - in (fig. 2-4) represents the line of greatest slope of the heating surface.
Ring 1 rests on three rollers 3, 4, 5 (fig. 1 to 4). The rollers 3, 4 are idle on their axes 6 (fig. 3, 4) fixed to supports 7 resting on the inclined base 8. As for the roller 5 which drives the ring 1 by friction in a rotational movement following the direction of arrow fi, it is wedged on a shaft 9 (fig. 3, 4) rotating in supports 10 fixed to the frame 8.
The shaft 9 is driven by means of a bevel gear 11 by the shaft 12. This shaft is controlled by the chain transmission 13 and pinions 14, 15 (FIG. 4) by a main shaft 16 carrying a pulley. attack 17.
Above the heating surface 1, substantially at the level of its horizontal diameter ho, in the ascending zone is arranged a dough tank 18 (Fig. 1, 3, 4). This tank, vertical (fig. 1), is in communication by a tap 19 and a pipe 20 with the body of a distributor 21. This dough reservoir 18 and this distributor 21 are fixed to a support 22 (fig. . 3) integral with the frame 8.
The distributor comprises (fig. 3, 4, 5) a battery of small pumps, the pis tons 24 (fig. 3) of which are actuated by an eccentric 25 with which they are kept in contact by springs 26. The distributor comprises, in addition, a cylindrical slide 27 on which is keyed a lever 28 provided with a roller 29, maintained in contact with a cam 30 by a tension spring 31. The cam 30 and the eccentric 25 are wedged on a shaft 32 which receives its command from the shaft 16 by a chain transmission 33 and pinions 34, 35.
The drawer 27 comprises: on the one hand, a groove 36 putting the pipe 20 in communication with the pumps, when the lever 28 is at the top of its travel; and, on the other hand, diametrical holes 37 putting the pumps in communication with nozzles 38, 39 when the lever 28 is at the bottom of the stroke.
The nozzles 38 are directed on one side of the dispenser, for example rearwardly and the nozzles 39, placed in the gaps of the nozzles 38, are directed on the other side. The ribbons of dough dispensed by the nozzles 38 are shown hatched at 38a (FIG. 4), those dispensed by the nozzles 39 are shown hatched in opposite directions at 39a.
Upstream of the distributor with respect to the direction of rotation of the ring 1, is disposed a brush 40 (fig. 3, 4), fixed to a shaft 41 perpendicular to the ring 1. This shaft 41 and controlled by the shaft main 16 to. using a chain transmission 42 and pins 43, 44 of an intermediate shaft 45 and a bevel gear 46. The shafts 41 and 45 rotate in a support 47 which supports a vertical reservoir 48. This reservoir 48 carries above the ring 1, a valve 49. It contains the fat usually used to prevent the adhesion of the dough with the baking plates.
On the shaft 16 is articulated the end of a part 50 (FIG. 4). In the other end of this part 50 rotates a shaft 51 (fig. 4) parallel to the shaft 16 by which it is driven by a chain transmission 52 and pinions 53, 54. Above the ring 1, the shaft 51 is extended in the form of a blade 55 with a section of sage leaves; it also carries a cam 56, the section of which is a curve parallel to the cross section of the blade 55. This cam 56 rests on a roller 57 whose axis is integral with the frame.
In front of the end of the blade 55 are placed scissors 58 actuated by links 59, 60, levers 61, 62 and a connecting rod 63 with buttonhole 64, in which the crank pin 65 of an oscillating lever 66 is engaged. around an axis 67 integral with the frame 8. This lever 66 carries a roller 68 held in contact with a cam 69 by a strong tension spring 70. The cam 69 is wedged on the shaft 12 and rotates in the direction of the arrow (fig. 3).
A low power spring 71 acts on the connecting rod 63 so as to ensure the opening of the scissors 58.
An electric heater, gas, etc., is placed under a cover 72 forming a tunnel and covering part of the ring 1.
A scraper 73 (fig. 3, 4) articulated on the support 47 is applied on the ring 1 between the blade 55 and the brush 40.
The operation is as follows: The semi-liquid paste having been placed in the tank 18, the fat in the tank 48, and the heating of the ring 1 having become sufficient, we first open the tap 49 of the tank see 48, then the tap 19 of the reservoir 18 so that the paste does not flow onto the ring 1 until the latter has been regularly coated with fat by the brush 40.
The distributor 21 then acts as follows: the upward stroke of the pistons 24 under the effect of the eccentric 25 and the springs 26 occurs when the spool 27 is in the position of FIG. 5; the dough is hacked by the pistons. During the stroke of the ashes, the drawer is in the position of fig. 3; the dough is forced into the nozzles 38, 39.
The paste used is a semi-liquid paste (the fluidity sufficient so that, after having flowed from the nozzles 38 and as a result of the movement of the ring 1, it spreads out in continuous strips 38a leaving between them spaces which are then covered by the paste flowing from the nozzles 39 which form ribbons 39a. The ring is thus finally covered with a film F (fig. 4) which is continuous both lengthwise and width due to the fluidity of the dough.This dough begins by drying out uncovered, then finishes its cooking by passing through the tunnel, 72.
After having passed the blade 55, the end of the film is detached from the ring 1 by the scraper 73, then it is quickly secured using a spatula around the blade 55, in order to start there. its winding. The machine then takes its continuous course. The speed ratio of ring 1 and blade 55 is set to produce a slight pull on the film. The latter is wound while sliding longitudinally on the blade 55 as a result of the inclination of the latter.
The winding is therefore helical, which forms a continuous tube whose internal section is that of the blade 55.
This tube passes at the end of this blade 55 between the scissors 58 which cut it into sections by a very rapid movement obtained as follows: From the moment when the various members occupy the position indicated by FIG. 3, the cam 69 rotating in the direction of the arrow acts on the roller 68 and the lever 66 by tensioning the spring 70. The spring 71 drives the connecting rod 63 in the same movement; the opening of the scissors 58 increases until the roller 68 has traversed the entire ramp of the cam 69.
The lever 66 then suddenly returns to the position shown. in fig. 3 driving the scissors 58 towards their closed position which they reach thanks to the active force acquired and thanks to the negative button of the connecting rod 63. The spring 71 immediately returns the connecting rod 63 and the scissors to the position of FIG. 3. The tube of cooked dough is thus cut during its rotation without the neighboring parts of the cut being deformed.
Each section constitutes a cookie. Of course, the invention is in no way limited to the embodiment shown and described, which was chosen only as an example.
