Installation servant à la distribution de produits laitiers. La présente invention a pour objet une installation servant à la distribution de pro duits laitiers. Cette installation est caracté risée en ce qu'elle comporte des réservoirs dis tributeurs contenant des produits laitiers à l'abri de l'air et de la chaleur et un disposi tif thermique permettant de porter à une tem pérature voulue, des quantités débitées par les réservoirs, ces derniers étant fermés par des pistons se déplaçant au fur et à mesure que les produits laitiers sortent, tout en main tenant le contenu des réservoirs à l'abri de l'air.
Le dessin ci-annexé représente, à titre d'exemple, une forme d'exécution de l'objet de la présente invention.

Les fig. 12 et 1.3 se rapportent au -disposi tif de chauffage, la première étant une vue schématique en perspective, la deuxième une coupe selon des axes de l'un -des tubes réchauffeur et de la nourrice; .
La fig. 4 montre un couvercle servant à fermer un récipient de laiterie destiné à for mer un réservoir supplémentaire; La fig. 15 -est une vue de derrière de l'installation, les tôles de recouvrement étant supposées enlevées; ' La fig. 16 est une vue analogue à la fig. 1, mais l'installation étant montée sur un châssis roulant.
Dans la fig. 1, 1 est un bâti recouvert de tôles émaillées de manière à former un buf fet, c'est-à-dire une armoire inférieure 2 ser vant de base à deux armoires supérieures 3 et 4. Le buffet ainsi formé est pourvu de réservoirs qui contiennent des produits lai tiers tout en les maintenant à l'abri de l'air et de la chaleur, et un dispositif de chauf fage permettant de chauffer de petites quan tités débitées par les réservoirs. Entre les deux armoires -supérieures 3 et 4 est porté, par deux tourillons 5, un réser voir à lait 6; celui-ci peut donc basculer; nor malement, il est maintenu debout par un crochet 8a qui l'attache à l'un des tubes ver ticaux 8 faisant partie du bâti.
Le réservoir (fig. 2 et 3) comporte un cylindre 7 dont le fond légèrement creux aboutit à un orifice qui peut être fermé par un robinet 9. Le cy lindre est entouré d'une chemise 10 de sec tion rectangulaire; l'espace entre la chemise et le cylindre est rempli d'une matière iso lante. Sur le lait contenu dans ce réservoir repose un piston 11 traversé au centre par un arbre vertical 12 muni d'une poulie 13 et portant à son extrémité inférieure un disposi tif de brassage 14 formé par quatre tiges ar ticulées portant un disque. Une corde 15 est enroulée de quelques spires autour de la pou lie 13 et passe à l'extérieur du réservoir sur les poulies 16 montées sur les bords du piston 11 et du cylindre 7.
Aux deux extrémités de la corde 15, deux manettes 17 sont suspendues. Celles-ci main tiennent la corde tendue et servent à action ner le dispositif de brassage par un mouve ment de va-et-vient. Le piston est traversé en outre par une soupape 18 soumise à l'action d'un ressort 19 et qui peut mettre en commu nication l'intérieur du piston avec l'atmo sphère à travers des trous 20. La tige de cette soupape est percée de part en part et pourvue d'ouvertures latérales 22; ce passage peut être fermé par une vis à bord molleté 23. En desserrant cette dernière, on peut mettre en communication l'intérieur du ré servoir avec l'atmosphère sans actionner la soupape 18.
La clé du robinet 9 de ce réser- voir est pourvue d'une tige 24 portant une masse 25 qui tend, par son poids, à mainte nir le robinet dans sa position de fermeture. L'extrémité découpée de la clé est engagée avec une extrémité analogue d'un arbre 26, une douille 27 produisant l'assemblage de ces deux pièces.
L'arbre 26, en traversant la paroi de la chemise 10, porte à son autre extrémité une aiguille 29 qui indique, en se mettant sur des inscriptions que porte cette paroi, la posi tion du robinet 9. Sur cet arbre est fixé un rochet 31 en prise avec un cliquet 32 (fig. 5) monté sur la paroi 28 et empêchant le robi net de reprendre sa position de fermeture après l'avoir ouvert en soulevant le poids 25. Le cliquet 32 est maintenu en prise avec le rochet 31 par son propre poids. Sur le même arbre est monté librement un disque 33, muni d'une rainure circulaire 34, dans la quelle s'enroule un cordon 35 qui, en passant sur des poulies 36 et 37 montées sur le bord de la chemise, est fixé à un crochet 38 monté sur le bord du piston.
On comprend que les mouvements de celui-ci peuvent être indiqués sur un cadran 39, porté par le disque 33, et qui est visible à travers une fenêtre 40, pra tiquée dans la paroi 28, et présentant un point de repère 41. Pour maintenir le cordon 35 tendu, un ressort est prévu logé dans un barillet 42 solidaire du disque et reliant ce barillet à l'arbre 26.
Sur le disque .33 sont prévus des trous- 43 dans lesquels peut entrer une cheville 4-4 munie d'un bouton 45 et ni ônté sur une aiguille 46; celle-ci peut tour ner librement autour de l'arbre-26 en se<B>dé-</B> plaçant devant une graduation 47 de sens in verse par rapport à celle du -disque 3$. -Un ressort 48 maintient la cheville en, position lorsqu'elle est entrée dans l'un des trous 43 qui correspondent chacun à -un trait de la graduation 39.
Le ressort est logé dans un ca non 49 que porte l'aiguille et qui peut venir en contact avec la partie 50 -du cliquet pour mettre ce 'dernier hors prise -du rochet.8-1.- On peut sortir le piston dt@. cylindre au moyen d'une petite grue. Chacun des tubes 8 porte à son extrémité supérieure une- pou lie 52 et un bras 53 pivoté sur l'axe de la poulie. Les deux bras 53 sont reliés à leur ex trémité par une traverse portant un crochet 54 et sont munis chacun d'un anneau auquel est attachée une corde 55. Les deux cordes passent sur les poulies 52 et sont réunies par un étrier 53a.
Une troisième corde 56 s'at tache à l'extrémité inférieure de celui-ci et s'enroule sur le tambour 5 7 d'un treuil. Pour sortir le piston, on l'accroche au crochet et on le fait monter en actionnant le treuil après avoir décroché les crochets 8a; alors le réser voir est libre de tourner autour des pivots 5 et de suivre les mouvements basculants du piston. Le réservoir se trouve constamment en équilibre indifférent, grâce à deux ten deurs 58 logés dans les tubes 8 et qui sont re liés au réservoir par des cordes 59 passant sur des poulies 60. Si l'on n'ouvre pas le robinet 9, c'est la soupape 18 qui entre en action au tomatiquement, laissant pénétrer la quantité d'air qui est nécessaire pour remplir le vo lume s'agrandissant du réservoir.
Un réservoir sensiblement analogue à ce lui qui vient d'être décrit est prévu pour dis tribuer de la crème; mais ce réservoir est plus haut et n'est pourvu que d'un robinet ordi naire. Le piston (fig. 6) comprend deux pièces dont l'une, 61, est le piston propre ment dit, tandis que l'autre, 62, sert de poids mettant la crème sous pression. Le piston est traversé au milieu par une tige 63 dont l'extrémité supérieure est molletée. Cette tige est vissée dans la partie inférieure 61 du piston et présente un trou axial qui d6bou- che, par une ouverture latérale, dans la par tie filetée.
Pour mettre en communication l'intérieur du réservoir avec l'atmosphère, on dévisse cette tige jusqu'à ce que le trou la téral soit libre. Ce réservoir est monté contre la porte de l'armoire 3, de façon qu'il soit caché, à l'exception de son robinet de distri bution 64 (fig. 1) qui traverse la porte. Le buffet présente, en outre, un distributeur de beurre. Celui-ci, comme les distributeurs qui viennent d'être décrits, comporte un cylindre servant de réservoir et dans lequel peut se déplacer un piston 65. Ce cylindre est un tube 66 ouvert des deux bouts et reposant dans un carter 67, où il est maintenu en place par un crochet 67a faisant ressort. Pour tenir le beurre au frais, le carter 67 est entouré d'une chemise<B>67b</B> remplie d'une ma tière isolante.
Le carter est disposé au- dessous de 1a table 68 et entre celle-ci et le tube 66 est disposé un guide dans lequel peut se déplacer un coulisseau 69 muni d'une tige de commande 70. Ce coulisseau a la forme d'un cadre dont l'ouverture est fermée par tiellement par une lame 71. Celle-ci sert à couper le beurre et à obturer l'ouverture su périeure du tube 66 après avoir expulsé du tube une quantité de beurre, en faisant mon ter le piston. Celui-ci peut être poussé par une tige verticale 72 munie d'une crémaillère qui est en prise avec un pignon 73 d'axe ho rizontal. L'arbre de ce pignon traverse la pa roi de l'armoire inférieure et porte à l'exté rieur un levier à rochet 74.
Au-dessus du tube 66, la table 68 du buffet est percée et cette ouverture est couverte d'un couvercle 74. Celui-ci est muni d'un tube 75 de même diamètre que celui qui contient 1e beurre, et dans ce tube peut se déplacer un piston 76 dont la tige traverse le couvercle 74 et est muni d'un bouton 77. Entre le piston et le fond du couvercle est placée une rondelle qui peut être échangée dans le but de varier la course libre du piston dont la face inférieure présente un moule. Le couvercle est attaché à la table au moyen d'une fermeture à baïon nette (fig. 10 et 11) et peut être libéré par un mouvement de .rotation. 78 est un organe ,de commande servant à retirer le crochet 67a.
Le dispositif -de chauffage est logé dans la partie de droite -du meuble. Le comparti ment 79 de l'armoire inférieurie contient un. réservoir à essence 80 et des brûleurs 81. Au- dessus clé ces derniers, se trouve -une clïali- dière 82 qui est munie des accessoires habi- tuëls non représentés, à savoir d'une soupape de sûreté, d'un manomètre et -d'un' indicateur de niveau d'eau.
Par la conduite 83, la va peur arrive à un -distributeur' d'où partent trois tuyaux 84 entourant chacun, en hélice, un récipient à ohauffër, constitué par un tube horizontal 85. Les autres extrémités des tuyaux 84 sont réunies à une seule conduite 86 qui amène la vapeur dans un bassin 87 situé à peu près au milieu de la table 68. Ce bassin peut servir à laver la vaisselle et l'eau y contenue est constamment chauffée par la vapeur sortant de la conduite 86. Les tubes 85 peuvent être alimentés par des nourrices 88.
Chacune de ces dernières est reliée à son tube 85 au moyen d'un corps de robinet 89 dont la clé peut mettre en communication ou la nourrice avec le tube (fig. 13a), ou le tube avec l'extérieur (fig. 13b). La position mon trée, dans la fig. 13c, est la position de fer meture. Chacune des nourrices 88 est pourvue d'une fenêtre 90 qui rend visible le niveau du liquide que l'on a versé dans l'ouverture; en outre, on peut observer la température in diquée par un thermomètre 91 que l'on peut introduire à travers l'ouverture du couvercle qui ferme la nourrice.
Lorsque le robinet prend sa position représentée dans la fig. 13, le thermomètre peut pénétrer même dans la clé du robinet 89 et indique alors la tempéra ture du liquide que l'on chauffe dans le tube horizontal; car, à cause de la dilatation qui se produit lors de ce chauffage, une partie du liquide contenu dans ce tube retourne dans la nourrice et amène le mercure du thermomètre à 7a température du liquide chauffé.
L'un des tubes 85 est en communication avec la chaudière et présente un raccord qui fait communiquer ce tube avec un tuyau 92 (fig. 15), qui surmonte l'armoire 4 et est re courbé de façon à pouvoir alimenter un fil tre à café 93 qui repose dans une ouverture prévue dans la tôle qui recouvre l'armoire 4 contenant un récipient à café 94. Un raccord 94a relie ce récipient avec un autre des tu bes horizontaux 85.
Le buffet comporte un réservoir à eau 95 dont le contenu peut être pompé par une pompe à main 96, soit dans l'un des tubes 85, soit dans la chaudière, 82, soit dans le bas sin 87. La distribution de cette eau peut être réglée par trois robinets 97, 98, 99. On com prendra que pour alimenter la chaudière, il faudra fermer les robinets 97 et 98 et ou- vrir le robinet 99. Pour vider le bassin 87, un tuyau de vidange 100 est prévu.
Une seconde pompe 101 est prévue der rière le buffet. - Celle-ci sert à transvaser, dans le réservoir 7, le lait contenu dans des récipients ordinaires 102 provenant de la laiterie. A cet effet, un tuyau flexible 103, en traversant la table 68, relie la pompe 101 avec le réservoir 7 dont le robinet est muni d'un raccord correspondant 104. Un autre tuyau flexible 105 peut être connecté avec le récipient 102 à vider que l'on a pourvu d'un couvercle spécial représenté par la fig. 14. Ce couvercle se distingue des couvercles or dinaires par le fait que son creux est dirigé vers le haut; au milieu, il est traversé d'un dispositif de brassage se composant d'une tige verticale 106 munie, d'une part, d'une poignée 107 et, d'autre part, d'un disque 108 fixé à l'extrémité inférieure de la tige 106. 109 est le raccord pour le tuyau flexible 105.
Un tuyau 110 va jusqu'au fond du ré cipient 102 où il est muni d'une crépine 111. Le bord 112 du couvercle est recourbé, afin qu'on puisse mettre un anneau de caoutchouc entre le bord 112 et celui du récipient 102 et obténir ainsi un joint étanche. Pour lais ser passer l'air qui doit- entrer dans le réci pient pendant sa vidange, la tige est percée de part en part et fermée par une vis 113 analogue à la vis 23 de la soupape- 18.
Le buffet peut être monté sur un châssis roulant, comme le montre la fig. 16, afin <B>de</B> pouvoir le transporter sur des places publi ques pour y vendre des produits laitiers à l'état parfaitement frais: Dans-les trous 114, on peut mettre les supports d'une tenture.
L'emploi du buffet- est le suivant: Le- lait est transporté -dans -des récipients ordinaires de la laiterie 102 -dans des com partiments correspondants -du buffet. Les couvercles de ces récipients sont échangés contre des couvercles selon la fig. 14; on en fonce ceux-ci, après avoir ouvert la vis 113, pour permettre à l'air de sortir, -de façon que le fond du couvercle puisse venir en - con tact avec le niveau,du lait; puis: on referme la vis 113; de cette façon; le -_ récipient est hermétiquement clos et ne contient plus d'air.
Pour remplir le réservoir à lait, on connecte le tuyau flexible 105 de la pompe avec l'un des récipients et l'autre tuyau 103 avec le robinet du réservoir que l'on ouvre. En pom pant, on fait couler le lait dans le réservoir, ce qui fait monter le piston Il dont la posi tion est indiquée par la graduation 39 du dis que 33. Lorsque la quantité maximum que le réservoir peut contenir est atteinte, on arrête la pompe 101 et ferme le robinet 9 en dépla çant l'aiguille 46 sur sa position de zéro, le cliquet est mis hors prise avec la roue à ro chet, ce qui permet à la clé du robinet 9 de retourner dans sa position de fermeture sous l'action du poids que l'on a soulevé pour ou vrir. En dévissant la vis, on fait sortir l'air qui pourrait être contenu encore au-dessus du niveau du lait.
Lorsque le lait commence à sortir, on s'est assuré que le réservoir ne contient plus d'air.
Pour débiter une quantité de lait voulue, on retire le bouton 45 de la cheville 44, dé place l'aiguille 46 devant le trait de la gra duation 47 qui indique la quantité désirée. Après avoir brassé le lait, en tirant la corde 15 par les poignées 17, on ouvre le robinet 9 en soulevant le poids 25. Le piston 11, par son poids, fait sortir le lait par le robinet 9 et au fur et à mesure que le piston descend, le disque 33 tourne et entraîne avec lui l'ai guille 46 dont le canon bute contre le cliquet 32 lorsque la position de zéro est atteinte, en libérant la clé du robinet 9 qui alors reprend sa position de fermeture. Lorsque le réservoir est vide, on le remplit en pompant le contenu d'un deuxième récipient de réserve 102.
Avant de pomper, on prendra toujours soin de brasser au moyen du brassoir 108.
Pour le nettoyage du réservoir à lait, on enlève le couvercle, puis on accroche le pis ton 11 au crochet 54 et le fait monter au moyen du treuil. Lorsqu'il a quitté le cylin dre 7 (les chapes des poulies intérieures 16 et 36 peuvent tourner autour des pivots des poulies 16 et 37 extérieures et, par consé quent, laisser passage au piston), on peut renverser le réservoir qui, grâce aux tendeurs 58, se tient dans n'importe quelle position in clinée.
Le beurre est livré au buffet dans les tubes 66 que l'on garde en réserve dans l'un des compartiments; l'un des tubés est placé dans le carter, de façon que le piston 65 re pose sur le poussoir 72 qui prendra sa posi tion inférieure. En agissant sur lé levier à ro chet 74, on fait monter le piston 65 jus qu'à ce que le bouchon- supérieur 65a sort du tube. Après avoir enlevé ce bouchon, on met le couvercle 74 sur l'ouverture et le fige par un mouvement circulaire; l'appareil est alors prêt à distribuer des quantités déter- minées par la course libre du piston 76.
Pour débiter -du beurre, on fait monter le pous soir 72 au moyen du levier à rochet 74, ce qui fait entrer du beurre dans le récipient formé par le tube 75. Lorsque le piston 76, en montant, bute contre le fond -de ce récipient, la résistance du levier augmente sensible ment. On lâche le levier 74 et en poussant l'organe -de commande du coulisseau 69, on coupe le morceau de beurre ;se trouvant dans le récipient 75.
La lame il, après avoir coupé le beurre, sert d'obturateur au tube. On libère le couvercle 74 et en pressant sur le bouton 77, on fait tomber -sur une as- siette le beurre qui, par adhésion, est resté dans le récipient. Lorsque le contenu -du tube 66 est épuisé, on remplace ce & rnier par un tube plein.
Le réservoir à crème est rempli, après que le piston 61 a été sorti complètement ,du cylindre. Si l'on n'arrive pas à le sortir en le prenant par l'extrémité mollebée de la tige 63, on peut visser une poignée dans le trou 6.3a. Après. avoir rempli le réservoir, on remet le piston dont on a -dévissé la tige 63 jusqu'à ce que l'ouverture latérale donne li bre passage à l'air qui doit sortir. Lorsque la crème commence :à sortir par.cette ouver ture, on serre la tige.
Le dispositif de chauffage peut servir à la stérilisation ou à la pasteurisation du lait. C'est le tube horizontal 85 situé au milieu qui est destiné à ce but. Le -volume des, tubes 85 étant assez petit, on ne peut chauffer que des quantités qui seront consommées tout de suite. On remplit la nourrice et en mettant le robinet 89 dans la position montrée en fig. 13, on donne passage au liquide qui coule dans le tube horizontal 85. La chau dière 82 chauffée par les brûleurs à 120 , par exemple, alimente - constamment les serpen tins 84 dont la chaleur passe aux tubes 85 et réchauffe le contenu de ces derniers.
Par la conduite 86, la vapeur qui a traversé les serpentins, atteint le bassin 87 où elle est condensée et donne à l'eau la chaleur qui lui est restée. La quantité de vapeur est réglée par le robinet 120. Lorsque la température dans le tube 85 a atteint là, valeur désirée,-on tourne la clé du robinet 89 dans la position montrée dans la fig. 13b, ce qui permet au liquide de couler à travers l'ouverture 121 dans une tasse. En mettant le robinet dans sa position montrée en fig. 13c, on ferme le tube et la nourrice. Pour empêcher la pous sière d'entrer dans l'ouverture 121, on ob- tore celle-ci au moyen d'un petit verrou 122.
Le tube horizontal 85 situé à gauche sert à réchauffer de l'eau. Il est relié, à cet effet, à la pompe 96 et peut être rempli en pompant de l'eau du réservoir 95. Cette eau peut être utilisée à préparer du café de la manière suivante: Lorsque l'eau est suffisamment chauffée, on ouvre le robinet 116, de sorte que la pres sion de la chaudière peut atteindre le tube 85. Ceci fait sortir l'eau par la conduite et couler dans le filtre 93. Dans l'armoire 4 est enfermé un récipient 94 qui reçoit le café. Par le raccord 94a il entre dans le tube 85 situé à droite, de sorte que l'on- dispose tou jours d'une petite quantité de café chaud sans être obligé de réchauffer toute la quantité que l'on a préparée.
La nourrice 89 de ce tube, lorsquelle est mise en communication avec ce dernier, indique le niveau du café contenu dans le récipient.
Au lieu de comporter un dispositif de chauffage, l'installation pourrait être munie d'un appareil frigorifique permettant de re froidir les produits laitiers et de préparer de la glace. Les compartiments de l'installation sont séparés les uns des autres par des cloisons, ce qui permet de garder séparément chaque sorte de produits laitiers et de mettre les réserves de produits alimentaires à l'abri de la cha leur produite par le dispositif de chauffage.

Fig. 4 shows a cover for closing a dairy container for forming an additional reservoir; Fig. 15 -is a rear view of the installation, the cover sheets being supposed to be removed; 'Fig. 16 is a view similar to FIG. 1, but the installation being mounted on a rolling frame.
In fig. 1, 1 is a frame covered with enamelled sheets so as to form a sideboard, that is to say a lower cabinet 2 serving as a base for two upper cabinets 3 and 4. The buffet thus formed is provided with reservoirs which contain milk products while keeping them protected from air and heat, and a heating device for heating small quantities delivered by the reservoirs. Between the two -supérieures cabinets 3 and 4 is carried, by two pins 5, a see milk tank 6; it can therefore switch; Nor malement, it is held upright by a hook 8a which attaches it to one of the vertical tubes 8 forming part of the frame.
The reservoir (fig. 2 and 3) comprises a cylinder 7, the slightly hollow bottom of which ends in an orifice which can be closed by a valve 9. The cylinder is surrounded by a jacket 10 of rectangular section; the space between the liner and the cylinder is filled with an insulating material. On the milk contained in this reservoir rests a piston 11 crossed in the center by a vertical shaft 12 provided with a pulley 13 and carrying at its lower end a stirring device 14 formed by four ar ticulated rods carrying a disc. A rope 15 is wound a few turns around the louse 13 and passes outside the reservoir on the pulleys 16 mounted on the edges of the piston 11 and the cylinder 7.
At both ends of the rope 15, two levers 17 are suspended. These hands keep the rope taut and serve to actuate the stirring device by a back and forth movement. The piston is further crossed by a valve 18 subjected to the action of a spring 19 and which can put the interior of the piston into communication with the atomosphere through holes 20. The stem of this valve is pierced. right through and provided with side openings 22; this passage can be closed by a screw with a soft edge 23. By loosening the latter, the interior of the tank can be placed in communication with the atmosphere without actuating the valve 18.
The key to the valve 9 of this reservoir is provided with a rod 24 carrying a mass 25 which tends, by its weight, to keep the valve in its closed position. The cut end of the key is engaged with a similar end of a shaft 26, a socket 27 producing the assembly of these two parts.
The shaft 26, passing through the wall of the sleeve 10, carries at its other end a needle 29 which indicates, by placing itself on the inscriptions on this wall, the position of the valve 9. On this shaft is fixed a ratchet 31 engaged with a pawl 32 (fig. 5) mounted on the wall 28 and preventing the stopcock from returning to its closed position after having opened it by lifting the weight 25. The pawl 32 is kept in engagement with the ratchet 31 by its own weight. On the same shaft is freely mounted a disc 33, provided with a circular groove 34, in which is wound a cord 35 which, passing over pulleys 36 and 37 mounted on the edge of the sleeve, is fixed to a hook 38 mounted on the edge of the piston.
It is understood that the movements of the latter can be indicated on a dial 39, carried by the disc 33, and which is visible through a window 40, made in the wall 28, and having a reference point 41. To maintain the cord 35 taut, a spring is provided housed in a barrel 42 integral with the disc and connecting this barrel to the shaft 26.
On the disc 33 are provided holes 43 in which can enter a pin 4-4 provided with a button 45 and not removed on a needle 46; this one can turn freely around the shaft-26 while moving <B>- </B> in front of a graduation 47 in the opposite direction to that of the -disk 3 $. -A spring 48 maintains the ankle in position when it has entered one of the holes 43 which each correspond to a line of the graduation 39.
The spring is housed in a ca non 49 which the needle carries and which can come into contact with the part 50 of the pawl to put the latter out of the grip -of the ratchet. 8-1.- The piston dt @ can be removed. . cylinder by means of a small crane. Each of the tubes 8 carries at its upper end a pulley 52 and an arm 53 pivoted on the axis of the pulley. The two arms 53 are connected at their end by a crosspiece carrying a hook 54 and are each provided with a ring to which a rope 55 is attached. The two ropes pass over the pulleys 52 and are joined by a stirrup 53a.
A third rope 56 attaches to the lower end thereof and winds around the drum 57 of a winch. To remove the piston, it is hooked to the hook and it is raised by operating the winch after having released the hooks 8a; then the reservoir is free to rotate around the pivots 5 and to follow the tilting movements of the piston. The reservoir is constantly in indifferent equilibrium, thanks to two contents 58 housed in the tubes 8 and which are connected to the reservoir by ropes 59 passing over pulleys 60. If the valve 9 is not opened, c It is valve 18 which automatically kicks in, letting in the amount of air that is needed to fill the expanding volume of the reservoir.
A reservoir substantially similar to that which has just been described is provided for dispensing cream; but this reservoir is higher and is provided only with an ordinary tap. The piston (fig. 6) comprises two parts, one of which, 61, is the piston itself, while the other, 62, serves as a weight putting the cream under pressure. The piston is crossed in the middle by a rod 63, the upper end of which is knurled. This rod is screwed into the lower part 61 of the piston and has an axial hole which opens out, through a lateral opening, into the threaded part.
To put the interior of the tank in communication with the atmosphere, this rod is unscrewed until the hole is free. This tank is mounted against the door of the cabinet 3, so that it is hidden, with the exception of its distribution valve 64 (fig. 1) which passes through the door. The buffet also has a butter dispenser. The latter, like the distributors which have just been described, comprises a cylinder serving as a reservoir and in which a piston 65 can move. This cylinder is a tube 66 open at both ends and resting in a housing 67, where it is held in place by a hook 67a making it spring. To keep the butter cool, the casing 67 is surrounded by a jacket <B> 67b </B> filled with an insulating material.
The casing is disposed below the table 68 and between the latter and the tube 66 is disposed a guide in which can move a slider 69 provided with a control rod 70. This slider has the form of a frame. the opening of which is closed by tiellement by a blade 71. This is used to cut the butter and to close the upper opening of the tube 66 after having expelled from the tube a quantity of butter, by making the piston rise. This can be pushed by a vertical rod 72 provided with a rack which engages with a pinion 73 of horizontal axis. The shaft of this pinion crosses the pa king of the lower cabinet and carries a ratchet lever 74 on the outside.
Above the tube 66, the buffet table 68 is pierced and this opening is covered with a cover 74. This is provided with a tube 75 of the same diameter as that which contains the butter, and in this tube can move a piston 76 whose rod passes through the cover 74 and is provided with a button 77. Between the piston and the bottom of the cover is placed a washer which can be exchanged in order to vary the free stroke of the piston whose face lower has a mold. The cover is attached to the table by means of a neat bayon lock (Figs. 10 and 11) and can be released by a rotating motion. 78 is a control member for removing the hook 67a.
The -heating device is housed in the right-hand part of the cabinet. Compartment 79 of the lower cabinet contains a. fuel tank 80 and burners 81. Above the key, there is a heater 82 which is fitted with the usual accessories not shown, namely a safety valve, a pressure gauge and - a 'water level indicator.
Through line 83, the vapor arrives at a -distributor 'from which three pipes 84 each surround, in a helix, a container to be heated, consisting of a horizontal tube 85. The other ends of the pipes 84 are joined to a single pipe 86 which brings the steam into a basin 87 located approximately in the middle of the table 68. This basin can be used to wash dishes and the water contained therein is constantly heated by the steam leaving the pipe 86. The tubes 85 can be fed by nurses 88.
Each of the latter is connected to its tube 85 by means of a valve body 89, the key of which can put in communication or the nurse with the tube (fig. 13a), or the tube with the outside (fig. 13b). . The fixed position, in fig. 13c, is the closing position. Each of the feeders 88 is provided with a window 90 which makes visible the level of the liquid which has been poured into the opening; in addition, one can observe the temperature indicated by a thermometer 91 which can be introduced through the opening of the cover which closes the nurse.
When the valve assumes its position shown in fig. 13, the thermometer can even penetrate the key of the tap 89 and then indicates the temperature of the liquid which is heated in the horizontal tube; because, because of the expansion which occurs during this heating, a part of the liquid contained in this tube returns to the nurse and brings the mercury of the thermometer to the temperature of the heated liquid.
One of the tubes 85 is in communication with the boiler and has a connector which makes this tube communicate with a pipe 92 (fig. 15), which surmounts the cabinet 4 and is bent so as to be able to feed a filter. coffee 93 which rests in an opening provided in the sheet which covers the cabinet 4 containing a coffee container 94. A connector 94a connects this container with another of the horizontal tubes 85.
The buffet comprises a water tank 95, the contents of which can be pumped by a hand pump 96, either in one of the tubes 85, or in the boiler, 82, or in the bottom sin 87. The distribution of this water can be regulated by three taps 97, 98, 99. It will be understood that to supply the boiler, it will be necessary to close the taps 97 and 98 and open the tap 99. To empty the basin 87, a drain pipe 100 is provided.
A second pump 101 is provided behind the buffet. - This is used to transfer, into the tank 7, the milk contained in ordinary containers 102 from the dairy. For this purpose, a flexible pipe 103, passing through the table 68, connects the pump 101 with the reservoir 7, the valve of which is provided with a corresponding connector 104. Another flexible pipe 105 can be connected with the receptacle 102 to be emptied. a special cover is provided, shown in FIG. 14. This cover differs from ordinary covers by the fact that its hollow is directed upwards; in the middle, it is crossed by a stirring device consisting of a vertical rod 106 provided, on the one hand, with a handle 107 and, on the other hand, with a disc 108 fixed to the lower end of rod 106. 109 is the fitting for flexible hose 105.
A pipe 110 goes to the bottom of the container 102 where it is provided with a strainer 111. The edge 112 of the cover is curved, so that a rubber ring can be put between the edge 112 and that of the container 102 and thus obtain a tight seal. In order to allow the air which must enter the container during its emptying to pass through, the rod is pierced right through and closed by a screw 113 similar to the screw 23 of the valve 18.
The buffet can be mounted on a rolling frame, as shown in fig. 16, in order to <B> </B> be able to transport it to public places to sell perfectly fresh dairy products: In the holes 114, you can put the supports of a hanging.
The use of the buffet- is as follows: The- milk is transported -in -the ordinary dairy containers 102 -in corresponding compartments -of the buffet. The lids of these receptacles are exchanged for lids according to fig. 14; these are darkened, after opening the screw 113, to allow the air to come out, -so that the bottom of the cover can come into contact with the level of the milk; then: the screw 113 is closed; in this way; the container is hermetically sealed and no longer contains air.
To fill the milk tank, the flexible pipe 105 of the pump is connected with one of the containers and the other pipe 103 with the tank valve which is opened. By pumping, the milk is made to flow into the reservoir, which causes the piston II, the position of which is indicated by the graduation 39 on said 33. When the maximum quantity that the reservoir can contain is reached, to move up, the pump is stopped. pump 101 and close valve 9 by moving needle 46 to its zero position, the pawl is disengaged with the ratchet wheel, which allows the valve key 9 to return to its closed position under the action of the weight that one has lifted to or to turn. By unscrewing the screw, the air which could be contained still above the level of the milk is released.
When the milk begins to flow out, we have made sure that the reservoir is free of air.
To deliver a desired quantity of milk, the button 45 is removed from the pin 44, the needle 46 is moved in front of the line of the gra duation 47 which indicates the desired quantity. After having stirred the milk, by pulling the cord 15 by the handles 17, the tap 9 is opened by lifting the weight 25. The piston 11, by its weight, makes the milk come out through the tap 9 and as and when the piston descends, the disc 33 rotates and carries with it the needle 46, the barrel of which abuts against the pawl 32 when the zero position is reached, releasing the key from the valve 9 which then returns to its closed position. When the reservoir is empty, it is filled by pumping the contents of a second reserve container 102.
Before pumping, always take care to stir using the stirrer 108.
For cleaning the milk tank, the cover is removed, then the udder 11 is hooked to the hook 54 and raised by means of the winch. When it has left the cylinder 7 (the yokes of the inner pulleys 16 and 36 can turn around the pivots of the outer pulleys 16 and 37 and, consequently, allow passage for the piston), the tank can be overturned which, thanks to the turnbuckles 58, stands in any tilted position.
The butter is delivered to the buffet in tubes 66 which are kept in reserve in one of the compartments; one of the tubes is placed in the casing, so that the piston 65 rests on the pusher 72 which will take its lower position. By acting on the rocker lever 74, the piston 65 is raised until the upper stopper 65a comes out of the tube. After removing this plug, the cover 74 is placed on the opening and freezes it by a circular movement; the apparatus is then ready to dispense quantities determined by the free stroke of piston 76.
In order to deliver the butter, the pus evening 72 is raised by means of the ratchet lever 74, which causes the butter to enter the receptacle formed by the tube 75. When the piston 76, while rising, abuts against the bottom -of this receptacle, the resistance of the lever increases significantly. The lever 74 is released and by pushing the control member of the slide 69, the piece of butter is cut; located in the receptacle 75.
The blade it, after cutting the butter, serves as a shutter to the tube. The cover 74 is released and, by pressing the button 77, the butter which, by adhesion, has remained in the container is dropped onto a plate. When the contents of tube 66 are used up, this is replaced by a full tube.
The cream reservoir is filled, after the piston 61 has been completely withdrawn, from the cylinder. If you cannot get it out by taking it by the soft end of the rod 63, you can screw a handle into the hole 6.3a. After. having filled the reservoir, the piston is replaced, the rod 63 of which has been unscrewed until the lateral opening gives free passage to the air which must come out. When the cream begins: to come out through this opening, tighten the stem.
The heater can be used for sterilizing or pasteurizing milk. It is the horizontal tube 85 located in the middle which is intended for this purpose. The -volume of the tubes 85 being quite small, it is only possible to heat quantities which will be consumed immediately. The nurse is filled and by putting the tap 89 in the position shown in fig. 13, the liquid flowing in the horizontal tube 85 is given passage. The boiler 82 heated by the burners to 120, for example, constantly supplies the coils 84, the heat of which passes to the tubes 85 and heats the contents of the latter. .
Through line 86, the steam which has passed through the coils reaches basin 87 where it is condensed and gives the water the heat which has remained in it. The quantity of steam is regulated by the tap 120. When the temperature in the tube 85 has reached there, the desired value, the key of the tap 89 is turned to the position shown in fig. 13b, allowing liquid to flow through opening 121 into a cup. By putting the valve in the position shown in fig. 13c, the tube and the nurse are closed. To prevent dust from entering the opening 121, the latter is closed by means of a small latch 122.
The horizontal tube 85 on the left is used to heat water. It is connected, for this purpose, to the pump 96 and can be filled by pumping water from the reservoir 95. This water can be used to prepare coffee in the following way: When the water is sufficiently heated, we open the tap 116, so that the pressure of the boiler can reach the tube 85. This causes the water to exit through the pipe and flow into the filter 93. In the cabinet 4 is enclosed a container 94 which receives the coffee. Through the connector 94a it enters the tube 85 on the right, so that a small quantity of hot coffee is always available without having to reheat the whole quantity which has been prepared.
The nurse 89 of this tube, when placed in communication with the latter, indicates the level of the coffee contained in the receptacle.
Instead of having a heating device, the installation could be equipped with a refrigerating device for cooling dairy products and preparing ice. The compartments of the installation are separated from each other by partitions, which makes it possible to keep each type of dairy product separately and to protect the food product reserves from the heat produced by the heating device.
