Ziehform für die Herstellung von Teigwaren. Gegenstand vorliegender Erfindung be trifft eine Ziehform für die Herstellung pro filierter Teigwarenstücke mit Ausschnitten.
Dieselbe weist die Eigenart auf, dass die Formteile zur Erzeugung der Ausschnitte als getrennte Bestandteile in den Formkörper eingesetzt sind.
Ausführungsbeispiele des Erfindungsgegen standes sind in der Zeichnung dargestellt, und zwar zeigt: Fig. 1 eine erste Ausführungsform in senkrechtem Axialschnitt; Fig. l zeigt einen senkrechten Schnitt nach Linie II-II in Fig. 1 mit eingesetztem Ausschnittformteil und Fig.3 einen senkrechten Schnitt durch den Formkörper; Fig. 4 zeigt eine Ansicht der Ziehform von oben und Fig. 5 eine Ansicht des Formkörpers von unten;
Fig. 6 zeigt eine zweite Ausführungsform in Ansicht, Fig. 7 einen senkrechten Axialschnitt durch dieselbe, Fig. 8 eine Ansicht derselben von unten und Fig. 9 eine Ansicht von oben; Fig. 10 zeigt einen senkrechten Axial- sehnitt durch den Formkörper allein und Fig. 11 eine Ansicht desselben von oben; Fig. 12 zeigt eine Ansicht des Ausschnitt formteils und Fig. 13 eine Ansicht desselben von oben;
Fig. 14 zeigt ein in dieser Form erzeug tes Teigwarenstück.
Die in Fig.1-5 dargestellte Ziehform dient zur Erzeugung von Teigwarenstücken in Armbrustform, wie aus Fig. 4 ersichtlich.
Der Formkörper 1 hat einen aussen zy lindrischen Basisteil 1p, mit aufgesetztem Kegelstumpf 1b und im Innern eine konische Bohrung, welche sich von der Basis aus gegen das Austrittsende hin düsenförmig ver jüngt. Das Austrittsende ist abgeschlossen und hat eine Öffnung, welche die Umrissform einer Armbrust besitzt. Zur Bildung der beiden Ausschnitte A, im Armbrustteil ragt in diese Öffnung ein Ausschnittformteil 2 hinein, welcher am Austrittsende diesen Aus schnitten entsprechend gestaltet ist.
Der selbe ist mittelst eines Querstückes 2" in Randschlitzen 1, am untern Ende des Form körpers eingesetzt und festgeschraubt. Durch die im verjüngten Ende des Formkörpers 1 eintretende Kompression wird der Teig ge zwungen, über den gesamten Querschnitt der Austrittsöffnung gleichmässig auszutreten und die gewünschte Form anzunehmen.
Das Ausführungsbeispiel nach Fig. 6-13 dient zur Herstellung eines Teiggebildes mit sternförmigem Querschnittsmuster. Hier hat ein Formteil einen zylindrischen, dosenförmi- gen Basisteil 3" mit einer mittleren Öffnung 3a, um deren Umfang einwärtsgeneigte Arme 3b angeordnet sind, welche an ihren obern Enden Köpfe 3d von der den Ausschnitten A s entsprechenden Form tragen.
Die innern Flanken dieser Köpfe bilden einen fünf zackigen Stern, in dessen Zacken fünf klei nere Köpfe 4" von den Ausschnitten A4 ein sprechender Form hineinragen; dieselben sitzen am Ende von Vorsprüngen 4b, die an den Armen 4p, eines in den Formkörper 3 eingesetzten Sternes 4 sitzen. Am Umfang gesehen liegen die Arme 4" in der Mitte zwischen den Armen 3b, so dass der erforder liche freie Raum für den Durchtritt des Teiges verbleibt. In der Mitte des Sternes 4 ist ein Bolzen 5 eingeschraubt, welcher sich in einem runden Stift 5, fortsetzt, der in der Mittelaxe der Form liegt und den Ausschnitt As bildet.
Der beschriebene Formteil liegt in einer in Fig. 7 dargestellten düsenförmigen Hülse 6, welche die Köpfe 3d konzentrisch umgibt, derart, dass ein ringförmiger Zwischen raum verbleibt, durch welchen der Teig aus treten kann, so dass man das in Fig. 14 dar gestellte Querschnittsbild erhält. Die Innen wandung der Hülse ist an der Austritts- öffnung gerillt, wodurch die Wellungen am äussern Umfang des Teigstückes entstehen. Der Teig gelangt in diesen Ringraum, in dem er zwischen den Armen 3b hindurch berausgepresst wird.
Ausser dem in Fig. 14 dargestellten Teig stück können auch ähnliche Gebilde von regulärer Kreisornamentform auf diese Weise erzeugt werden.

The drawing form shown in Fig. 1-5 is used to produce pasta pieces in the shape of a crossbow, as can be seen from Fig. 4.
The molded body 1 has an outer zy-cylindrical base part 1p, with attached truncated cone 1b and inside a conical bore which tapers nozzle-shaped ver from the base towards the outlet end. The exit end is closed and has an opening that has the shape of a crossbow. To form the two cutouts A, in the crossbow part protrudes into this opening a cutout molded part 2, which is cut from this cut off at the outlet end is designed accordingly.
The same is inserted and screwed tight by means of a cross piece 2 "in edge slots 1 at the lower end of the mold body. Due to the compression occurring in the tapered end of the mold body 1, the dough is forced to emerge evenly over the entire cross-section of the outlet opening and the desired shape to accept.
The embodiment according to Fig. 6-13 is used to produce a dough structure with a star-shaped cross-sectional pattern. Here a molded part has a cylindrical, box-shaped base part 3 ″ with a central opening 3a, around the circumference of which inwardly inclined arms 3b are arranged, which at their upper ends carry heads 3d of the shape corresponding to the cutouts As.
The inner flanks of these heads form a five-pointed star, in the teeth of which five smaller heads 4 "protrude from the cutouts A4 in a speaking shape; they sit at the end of projections 4b on the arms 4p, of a star inserted into the molded body 3 4. Seen on the circumference, the arms 4 ″ lie in the middle between the arms 3b, so that the required free space remains for the dough to pass through. In the middle of the star 4 a bolt 5 is screwed, which is continued in a round pin 5, which lies in the center axis of the form and forms the cutout As.
The molded part described lies in a nozzle-shaped sleeve 6 shown in FIG. 7, which concentrically surrounds the heads 3d, in such a way that an annular gap remains through which the dough can emerge, so that the cross-sectional image shown in FIG receives. The inner wall of the sleeve is grooved at the outlet opening, which creates the corrugations on the outer circumference of the dough piece. The dough arrives in this annular space in which it is squeezed out between the arms 3b.
In addition to the piece of dough shown in FIG. 14, similar structures of regular circular ornament shape can also be produced in this way.
