Abstract

L'invention concerne un système de traitement de morceaux de protéine qui comprend un applicateur de farine facultatif qui applique un revêtement de farine, et éventuellement un assaisonnement, sur des morceaux de protéine non cuits ; un applicateur d'assaisonnement facultatif qui applique un revêtement d'assaisonnement sur les morceaux de protéine non cuits ; une machine d'emballage qui reçoit des morceaux de protéine non cuits, éventuellement revêtus de farine et/ou d'assaisonnement, et retient les morceaux de protéine non cuits éventuellement enrobés dans des poches ; un applicateur de pâte à frire qui dépose une pâte à frire constituée de farine contenant du gluten directement dans les poches de cuisson ; la machine d'emballage étant programmée pour sceller sous vide les poches de cuisson, ce qui permet de recouvrir les morceaux de protéine non cuits avec la pâte à frire dans les poches de cuisson pour réaliser des morceaux de protéine non cuits enrobés de pâte à frire ; et une unité de chauffage programmée pour cuire entièrement les morceaux de protéine enrobés de pâte à frire dans les poches pendant une durée et une température sélectionnées pour cuire entièrement les morceaux de protéine et laisser la pâte à frire suffisamment collante pour adhérer à la panure.
