Abstract

On présente des produits de gomme à mâcher contenant du polydextrose, ainsi que des méthodes pour leur fabrication. Dans un premier exemple, on utilise du polydextrose dans un composé de roulage appliqué au produit de gomme à mâcher. Dans un deuxième exemple, on utilise du polydextrose dans un revêtement dur pour la formation de pastilles de gomme. Dans un troisième exemple, on utilise du polydextrose dans la portion centrale d'une gomme à mâcher. Dans un quatrième exemple, on utilise de l'aspartame pour sucrer le produit de gomme et on utilise une quantité suffisante de polydextrose pour stabiliser l'aspartame de façon que, après huit semaines d'entreposage à 85 degrés F, le taux de décomposition de l'aspartame soit inférieur d'au moins 5 % à celui qu'on aurait obtenu en l'absence de polydextrose. De plus, le polydextrose est séché en même temps que d'autres édulcorants, ou évaporé en même temps que ces derniers pour la préparation de sirops, et il est utilisé comme agent d'encapsulation avec les édulcorants ou les arômes à forte activité entrant dans des compositions de gommes.
