Abstract

"MODULAçãO DOS NìVEIS DE PRECURSORES DO SABOR DE CAFé EM GRãOS DE CAFé VERDES". A presente invenção refere-se a polinucleotídeos isolados que codificam cisteína proteinases; inibidores de cisteína proteinases; e aspártico endoproteinases. A invenção refere-se também a uma célula hospedeira transformada, de preferência uma célula vegetal, na qual a superexpressão ou a subexpressão destes polinucleotídeos resulta em níveis alterados dos níveis de precursores de sabor do café, especificamente moléculas que contêm grupos amina, tais como aminoácidos, peptídeos e proteínas, em grãos verdes de café.
