Abstract
ENCAPSULAMENTO DE PROTEÍNAS DE COMPOSIÇÕES NUTRICIONAIS E FARMACÊUTICAS. A presente divulgação se refere a composições microencapsuladas compreendendo um ou mais materiais hidrofóbicos encapsulados por um encapsulante, em que o encapsulante compreende uma ou mais proteínas e/ou peptídeos modificados; e em que uma ou mais proteínas e/ou peptídeos modificados são obtidos a partir de uma proteína de partida submetendo a proteína de partida a um processo de alto cisalhamento, de modo que o tamanho médio de partícula de uma ou mais proteínas e/ou peptídeos modificados seja reduzido em relação à proteína de partida. A presente divulgação se refere ainda a métodos para proteger um material hidrofóbico da degradação oxidativa, para melhorar a estabilidade oxidativa de um material hidrofóbico, para reduzir a gordura livre de superfície de uma composição microencapsulada e para emulsões estáveis e composição compreendendo um material hidrofóbico.
