polpa mista de jambolão e acerola em pó. a presente invenção trata da elaboração da polpa mista de jambolão e acerola em pó. compreende o processo de produção da polpa mista através da mistura da polpa de jambolão e da polpa de acerola na proporção de 1:1, seguido da elaboração de formulações com a adição de aditivos (albumina, goma xantana, carboximetilcelulose, goma guar), para a secagem em camada de espuma e da elaboração de formulações com a polpa mista e maltodextrina para a liofilização, apresentando as etapas de processamento e obtenção dos produtos em pó. a invenção aqui descrita tem potencial para ser aplicada na indústria de alimentos, com os produtos em pó obtidos considerados como fonte compostos bioativos, especialmente de compostos fenólicos e vitamina c, e com atividade antioxidante, com possibilidade de aplicação na elaboração de novos produtos, agregando valor econômico e enriquecimento nutricional e contribuição de forma significativa para o aproveitamento tecnológico de frutas tropicais.mixed jambolão pulp and acerola powder.
