BISCOITO TIPO COOKIES UTILIZANDO ÓLEO DE CHIA MICROENCAPSULADO A presente invenção refere-se a uma composição de biscoito tipo cookie desconhecida no estado da técnica, caracterizada pela substituição parcial da gordura hidrogenada comumente usada na formulação por micropartículas sólidas lipídicas contendo óleo de chia, que apresenta elevado teor de ômega-3 e ômega-6. A referida composição alimentícia possui substituição da gordura vegetal hidrogenada pelas micropartículas variando de 0,1 a 45%. O produto tem características sensoriais de sabor, textura, cor e aparência atrativas, além de apresentar a vantagem de conter elevado teor de ácidos graxos poli-insaturados.COOKIES-TYPE BISCUITS USING MICROENCAPSULATED CHIA OIL The present invention refers to a cookie-type biscuit composition unknown in the state of the art, characterized by the partial replacement of the hydrogenated fat commonly used in the formulation by solid lipid microparticles containing chia oil, which high in omega-3 and omega-6. Said food composition has replacement of hydrogenated vegetable fat by microparticles ranging from 0.1 to 45%. The product has sensory characteristics of attractive flavor, texture, color and appearance, in addition to having the advantage of containing a high content of polyunsaturated fatty acids.
