Abstract

"APARELHO E MéTODO PARA PROVA à FRIO DE MúLTIPLOS PEDAçOS DE MASSA". Aparelho e método que permite que múltiplos pedaços de massa congelada (16) sejam provados sem calor ou adição de umidade. O aparelho compreende uma câmara de fechamento metálica (1) , dispositivos para apoiar bandejas (14) de massa (16), e portas (9, 10, 11, 12) que dão acesso à massa (16) e para abrir ou fechar, seletivamente, a câmara de fechamento (1), de modo que, na posição fechada, estas portas (9, 10, 11, 12) vedam, substancialmente, o aparelho. Dentro da câmara de fechamento (1), a massa (16) é descongelada, provada e retida por períodos de tempo controlados sob temperaturas igualmente controladas, enquanto é colocada numa câmara refrigerada. Uma etapa em particular poderá ser acelerada sob calor.
