Abstract

" PRETZEL MOLE COM ESTABILIDADE PARA VENDA EM PRATELEIRA". Um método para a fabricação de um pretzel mole com estabilidade para venda em prateleira sem o uso de um banho cáustico. O método substitui diversas etapas de processamento para o banho cáustico, em combinação com outras estratégias para impedir a deterioração por micróbios, resultando em um pretzel mole uniformemente corado e com sua superfície salgada apresentando der maneira exclusiva um pH de superfície relativamente baixo e um longo prazo de validade.
